    As an engineer who works with RF (Radio Frequency) - of which microwaves are a part of, I can assure you microwaves are perfectly safe to cook in. I could write a long detailed explanation explaining the science but a quick explanation is that microwaves use non-ionizing radiation (like radio waves), which are safe. Ionizing radiation is the bad stuff - x-rays, ultraviolet rays from the sun, nuclear bombs... Any info you see on the internet that claims otherwise is simply not backed by science or was an "experiment" not done to the standards of science.

    I just flipping love you! Because of you and Chef AJ I finally understand weight loss and have easily reached my ideal weight and have no problem maintaining it.     My favorite quick and easy foods are canned beans (esp pinto and chick peas) with frozen rice….and frozen veggies…Also potatoes + instant pot or air fryer. And my new staple is always have a few jars of overnight oats (thaw out fruit the day of eating). I’ve lost 55 pounds since last March going WFPB! I also do a bit of intermittent fasting from time to time, usually have at least 14-16 hours between last meal before bed to first meal of the day.😍

    Recently I’ve noticed some of my old negative thinking patterns regarding food and feeling like I need to restrict myself in order to lose weight. After discovering your videos you really helped me push those negative thoughts aside and made me want to focus on what I can eat to make me FEEL my best. I love your recipes, all the great advice and information, but especially I love you! ❤ As someone said previously, all recipes are good for us in the northern hemisphere too. I eat all those foods in the winter. 🤗 Love and hugs from a very cold, wet and windy England. 🤣😘😘

    Fantastic meals Chelsea. I will adopt them all. My favourite meal is large diced potatoes (pre-cooked in the Instant Pot so there's always some ready) sprinkled with a "Spanish" mix of spices (pre-mixed cumin, coriander, chili, oregano, paprika, rosemary, basil, thyme), a half teaspoon turmeric, ground black pepper, ground black cumin (recommended by Michael Greger), small grind salt, mixed with lemon juice all mixed and cooked in the air fryer with cherry tomatoes (230°C 12-15 min). Place on a bed of shredded Tuscan kale, lots of parsley, finely sliced spring onion. Finish with lemon juice and a grind of salt. Sometimes I make steamed broccoli the green instead of kale. It's super yum and two medium potatoes keep you going for hours.

    I love how you dont sweat the small stuff with a little oil Chelsea! I was so scared of oil when i came to this high carb low fat lifestyle and its just not helpful to be so stressed about it!!

    Yes, Chelsea! I love the prepped rice in zip bags. I used to shy away from plastic too but if I am eating whole plant foods I know that it will balance out. They sell bags of precooked frozen rice at trader Joe's here in the states and its almost 4 dollars for a box with 3 bags. Excellent hack.. Pick your battles. I also took your advice and purchased a few of the large sistema containers for veggies and especially 🥦 broccoli!! You were so right. The broccoli stays fresh for about a week. Game changer!!

    These videos are soo helpful. Ive been counting my calories for almost a month and ive only lost 5 pounds. Im sticking to it though which i am super proud of, I just need to focus more on big portions of healthy food rather than small portions of unhealthy food 🙃

      @@ChelseaMae I would love to! But I need more knowledge on low calorie foods and high calorie foods to do that, sometimes I'm absolutely baffled by the caloric density of things that I used to eat heaps of! But not counting them is my ultimate goal

    Thanks so much for putting this awesome video together! I'm on a journey to change my understanding of nutrition, weight loss and my relationship with food. Your videos have been so helpful! One thing that did catch my attention was the discussion about plastic and BPA fears. I will say that I'm less worried about BPA linings and more worried about the oil industry destroying our planet both with the single -use plastic made from the oil that is extracted, and the dirty process of drilling for it. So I am very conscious of the items I buy and do love hearing any alternatives to single-use plastic. I really want farms to stop distributing their produce in plastic wrapping! Makes me nuts.

    I just made the first meal. I did have to substitute the tomato for cucumber in the dip because while I love tomatoes my skin does not. It still turned out amazing!

    For my money, it’s the MINT that makes this salad. Chels, the dressing was DEVINE! I used the herb salad mix from a store in the states (Trader Joes ) instead of the kale. Seriously, delicious! Thanks 😊 so much. 💚🌱💚

    So I did make the broccoli rice bowl for breakfast. I had cooked rice in the fridge. Steamed my broccoli and had all the other ingredients. It was the most satisfying meal I’ve had in awhile!

    Everything looks delicious! One note: I think your calorie estimate on the hummus is off…one serving is usually no more than 80 calories and a serving here is the US is 2 TBS 🥰

    Great video. Ketoprak is the Gado Gado version with noodles. Gado Gado traditionally doesn’t have noodles. So yum! Your version (😋)

    So, I see that you like Korean food! I want to give you an awesome sauce recipe!
    This sauce will be awesome with your sushi bowl and bibimbap!! (super yummy with the toasted seaweed [we call "kim"])
    For You
    *1T gochujang
    *1/2 cloves minced garlic
    *1/2 tsp maple syrup
    * 1T apple cider vinegar
    * 1/4 tsp sesami oil (or more)
    For Kiddos
    * 1T soysauce
    * 1/2 tsp garlic powder
    * 1/2 tsp onion powder
    * 1/2 tsp sesami oil
    If you want more spicy, add little more gochujang, you can skip sesami oil but personally, taste so much better with it.
    I really hope that I can see you try this sauce!

    Thanks Chels! You are my go-to for the best UTube videos for WFPB, no oil recipe ideas! You mentioned in one of your recent podcasts that you have to make meals that “you” love and I have found that to be so true focusing on recipes that you will actually use and that are your favorites. For me that looks like WFPB lasagna, vegetable pizza with no-cheese sauce, stir-fried vegetables with crushed tomatoes over rice/potato/beans, nice cream, tu-no salad on lettuce leaves, and so many more. Thanks for keeping it real and for all your words of wisdom. You are so smart and we appreciate you sharing your knowledge. I’ve already reached by goal weight but love your idea of joining the Lean with Plants Community in order to have the ongoing community support. I’ll wait for the next open window. Thanks again.     My problem with plastic is not the health aspect of it but the environmental issue it creates. Therefore I try to not use anything wrapped in plastic as much as I can. We have more and more stores offering goods package free but of course this is sometimes not as convenient. Love your recipes, the sushi inspired bowl is one of my go to meals each week. Ím still not sure if I should buy an airfryer although I see some many raving about it 😄

    I just made the rice and broccoli bowl and holy moly that was delicious! My partner was eating leftover vegan deep dish pizza and he said my dish was better than his and he loves pizza! Thank you!
