      No worries! I say "um" and "anyhow" a lot in mine. I've tried to stop, but I don't edit my videos at all right now, so, I may overuse other words as well, but that's what I noticed about mine.

    Thank you for sharing how you gradually increased your preservation knowledge. Made me relax a bit! It's all so intimidating. I've got the foodsaver and a dehydrator....working on waterbath Canning for next year... I am gradually getting some confidence and your videos are helping so much. 🙏 appreciate you!

    I have a water bath canner, a pressure canner, a dehydrator, a food saver vacuum sealer and a deep freezer so this was super helpful!

    I have to say I wasn't expecting that. I figured I already knew at least how I decide but wow I had no idea about the Vitamins that prefer the heat or cold. I would be really interested in learning more about that. A book recommendation would be helpful even.

      +Alisha James I have Hashimoto’s thyroiditis. I switched doctors and was reviewing my diet. She told me that I shouldn’t be eating kale and spinach raw. She said that they needed to be blanched at the very least because of the oxalates. All this time, I was adding it raw to salads. Ugh.

    Thanks for sharing! Another way to store dehydrated food is to vacuum seal in your jars. Rain Country is a great resource for info on vacuum sealing!

    I've seen many of the homestead channels getting a freeze drier like you received. Some seem to be given/ loaned (?) one and that's great. For the common person on low or a fixed income it is out of the question. So that is a consideration. Joy Giles

      True. Seems like every TH-camr I watch is being partnered with. That's awesome, but like you single older lady on fixed income... Well not in the near future. But I can still dream😁 also we deciding on which method you need to remember there maybe a time no power, again we all can't afford generators or solar power, so freezing alot would not be practical for long term.

    I'm considering a freeze dryer, but the price is stopping me. If the grid goes down it's useless. How much can I use it before that happens?? The question of the year I guess.

If that power grid were to fail, and eventually there was no gas to run generators or propane, how do you preserve then? I would love to hear what ideas you may have in certain situations!       My grandma said when she was little they had a smoke house. They smoked meats to preserve them.

      Personally, I like canning on a wood fire. I also have 3 hanging air dry dehydrators. Lactofermentation, smoke house, and salt curing. Such a wide variety of options with yummy results!

      We use a propane stove outside to can without electricity. You can also make solar dehydrators.

    This is a great video! Thank you for providing so much information! I too could talk about food preservation all day. I love it! My grandma canned every thing from her garden and meat she raised. I miss calling and asking her advice. She would love to see that people are learning this skill.

    Although I bought my dehydrator for $30 I also just air dry on paper plates a lot too. I feel this is the cheapest but I really do love canning certain foods.

      I sometimes throw items in the oven when I'm done baking. Cheap, easy and it works, you just have to get the timing down.

    Living in a tropical climate before I used to air dry a lot of foods like the locals. I can only do that in the summers now.... we are facing an energy crisis in Spain and need to focus on reducing dependency on anything electric. Fantastic video!! Especially on nutrition was eye-opening.

    I am so happy for you and that harvest right sent you a freeze dryer. We got ours this year and I am enjoying it tremendously. I don’t think I will ever preserve tomatoes any other way. The versatility of freeze dried tomatoes are endless. The tomato powdered can be sprinkled into any dish. You can make tomato sauce, tomato paste, tomato soup. And I just freeze dried raw pumpkin yesterday just cut straight from the rind and my picky grandchildren was eating it right off the tray. You are going to enjoy this machine I just know you will. And I like my green beans out of the can I don’t like them any other way. I’m here if you need any help with the freeze dryer I’m not an expert but I do love using it. Fresh raw milk and eggs do wonderfully I freeze them both before I stick them in the freeze dryer because for me they seem to do better. And of course freeze dried skittles are a must😉God bless and enjoy your new toy.

      Where do you store it? I'm curious how much noise/space/heat it needs and where is best to keep it.

      We keep it in our pantry off of our dining room. Which is an extra bedroom there is a ceiling fan in there and then I have a little clip on fan that I clip on the chair where the pump is to help keep the pump cool while it’s running.

    This is a very helpful video, thank you. I will add that I really enjoy fermentation when it gets hot out and the produce rolls in. Peppers, cabbage, root veggies, herbs, and many others can be fermented to keep the kitchen cool and food waste down. And perhaps you don’t do this where you live, but root cellaring is probably the least work of all.

    I love your presentation. The detail, common sense and clear concise information is great. It's true, if no one wants to eat it, then it's a waste of time and effort. My family love corn frozen, green beans canned, strawberries freeze dried----it does make a difference. I'm saving up for a freeze dryer and a steam canner.     With freeze drying you can also powder some of the ie carrots and tomatoes. Great for soups. Pastas and sauces.
    Also try and freeze dry some of your lemons this year and save freezer space.

    Dehydration depends on where one lives.
    Air drying is possible in many places. Where I live, the humidity prevents complete drying by air. so I need to use a dehydrator when my wood stove isn't running.

    I too am saving for a freeze dryer! One thing that is so hard about food preservation in the hottest month of the year, is that it can get unbearable. I typically use water bath canning which heats the house up so much. It’s sometimes hard to motivate myself, because it’s already a hot day and now I have canning to do. I have used the dehydrator which helps keep things cooler. How does the freeze dryer do when it comes to heating your house up? I only have a window air conditioner which barely cools my apartment. I suppose that water bath canning can make your air conditioner work harder too. (Which could cost more to cool your house.). Can you tell that extreme heat bothers me? LOL! I’ve never done pressure canning before.

    From personal experience only fill the freeze dryer tray no more than 1/2 full of citrus juice and fully freeze before freeze drying. Otherwise the sugars in the lemons or oranges will blow-up and you end up with a sticky honeycomb texture product that doesn't dry or reconstitute. It also doesn't taste very good. Same goes with pie filling and other things with fat or butter that might not be incorporated 110%. The fat and butter ends up all over everything! Takes forever to cleanup from both types of messes but especially the fat based ones. I made the mistake of freeze drying grated apple pie filling. I thought I ruined my freezer dryer! Luckily not the case and when the citrus juice exploded the same way I knew what to do. Have fun with it! It is such a blessing in our family and I'm sure it will be for yours.

    Check out rose red homestead they did a potatoe test . Between dehydrated or freeze dried which tastes the best or the worst. They cut the potatoes into different shapes scalloped, cubed, mashed, julienned and etc. She a good teacher. She try to help new beginners as well as people that been preserving awhile.     Exciting about your freeze dryer. I hope it lasts longer for you than a month like ours. It's been sooooo frustrating dealing with that company. I've been trying to have to fixed longer than I was able to even use it. Many frustrated customers with that company and they can't keep up. Such a bummer. I've lost a lot of time

    Hi Jessica! I have been enjoying all your videos. I especially related to the video regarding home church as we had a very similar experience in my family.
    My son is highly allergic to peanuts and the people, especially the older folks, in the church didn't understand the importance of not having foods with peanuts in the church. It made for frightening times that's for sure!
    One question, I hope that it's okay to ask and not too vain, where did you purchase your pintuck denim jumper style dresses? (The dark and also light denim). I have been searching for this style for a long time!

    I would do some research before freeze drying the lemons. There may be some limitations. Rose Red Homestead has been experimenting with them.

      Yes. We do some sauerkraut and hot sauce every year, but not much beyond that
