    Nugget. When let's say you need one more jar to fill out your canner. Can some water. It will then be sterilized for wound care. No expiration as far as I know. I know this is not necessarily food storage but it is preparedness.

    Just watched Suttons Daze compare how six different beans varieties can swell during process. Have been watching your channel for a couple of years now and am amazed how you can make quick work in the kitchen during each season. I will be pressure canning for the very first time this weekend and am nervous. I will use your soak, no parboil method. Just makes sense. God bless 🙌 .

    If you are searching for a dairy free frosting recipe this one from Minimalist Baker is fabulous. Also I am really enjoying your videos. Have a great week
    FROSTING:
    1/2 cup vegan butter (SOFTENED // 1 stick yields 1/2 cup - we like Earth Balance and Miyoko's brands)
    1/4 tsp vanilla extract
    2 1/2 - 3 cups powdered sugar (SIFTED)
    1 splash non-dairy milk (optional // almond and coconut are best!)

    Such a wonderful video, as always! Just a tip I learned this year: you can make your own baking powder! I ran out at the beginning of Covid and couldn’t find any so I looked up replacements and found to make your own is 1 part baking soda and 2 parts cream of tartar. They say to add 1 part cornstarch to stop caking but I don’t find it helps.

      Oh and I just recently learned that paprika comes from paprika peppers. Maybe everybody knows this, but it was news to me! So I ordered some paprika seeds and will be growing my own this year.

    I wish my mom had given me the skills of cooking from scratch. Im a grandmother now and im teaching myself how to cook from scratch and sew and grow fresh fruits and vegetables and herbs. Everything im learning im now teaching my grandchildren and my kids are adults now and im trying to get my kids involved too.     I've watched this one before but had forgot the whole procedure and it popped up again today, so much easier than the Ball Book on canning beans so I've got my 7 quart jars with kidney beans soaking now and will be ready at 6am tomorrow. I have so many dry beans to get Canned up so will be working on getting them canned up for winter use. Anna In Ohio

      You don’t have soak first. Just add 1/2 dried bean to a pint. Or 1 cup dry beans to a quart and process 90 minutes

    Just in case you didn't know you can use that chicken pea juice as an egg substitute as well. We made aquafaba meringue cookies and they were delicious!

    I use left over oatmeal by placing it in a loaf pan let it cool .when it's cool and firm, I slice it and roll in flour and fry in bacon grease
    We like them with jelly , or apple sauce.

    that second rinse water could for sure be used for watering plants or placed in the canner. we don't pour rinse water down the drain. where I live water is precious. good video though on how to do basic bean canning. I do find that my pinto beans are mush after 90 minutes. haven't tried the black ones yet.

    In uk we have tins of beens in tomatoes. They can very cheap with toast, will make a meal. Good for sick kids, and when you need to stretch the buget, ican be used to stretch meat, aid to cottage and sheepard pie.

    Merriang frosting are dairy free. Also the 7 minute frostings are great for cakes and muffins which is dairy free.

    you should soak any beans that are kidney shaped in acv and water 12 hours, drain rinse and then pressure can, and other dry beans in salt water, about 2 tsp salt per quart of water again 12 hours. Then they are digestible for the body.

    I’m taking a budgeting course and on their sample budget they had $600 for groceries for a family of three. I feed myself for $200 or under per month. A second person would not add that much more and I can’t see a child adding an additional $200. I can and preserve as much as I can so it ebbs and flows how much I spend each month.

    I am relieved to hear there is someone else who can’t do gluten, soy or dairy. For the last 8 years I have been gluten free, dairy free and soy free. Unfortunately I can’t do nuts either so I have to use coconut milk, coconut oil, and canned coconut milk.

    Have you tried aquafaba (the bean water) for a dairy substitute? I have seen people use it for a whipped topping. It might be worth a try for your baker.

    What juicer do you use for carrots? How do you use the juice and pulp? Thank you for tips on beans. I tried canning some and hated the mushiness. I like the texture of store bought canned beans.

    With all the food shortages that are to occur, how will the companies like Azure etc maintain their sales.
    One Prepper vlogs said some countries that export food items etc will not be doing so because they are storing it for their own people. As America should be doing so.
    Have you ever canned carrots, celery and onions together…..I’m not counting on those items to be available all the time nor am I going to hope for an abundant garden, who knows how the weather plays out this year and if there will be what I plant flourishing…I bought celery for $1.49, ordered it at $1.29 a bunch and in one day Kroger raised it to $1.49….Walmart was $1.99….
    I was shocked that a Dollar General store where there are a lot of low income people living had milk $4.50 gall and eggs were $3.75 dozen…few things were marked $1 as they use to…I just imagine how stressful it must be for you with all your littles to feed…..I worry about my grandchildren….
    Because of my polymiagia rheumatic-a I’ve been in a lot of pain for three months therefore limiting what I could accomplish. Fortunately Dr put me on prednisone which I really don’t like to take but I had so much pain and exhaustion I had to…if anyone out there has it what do you do to relieve the painful arms and shoulders. It effected my right hand making it difficult to do all of what needed to be done.
    Are you keeping your chickens covered to protect them from the bird flu? I saw where it’s hit farms as well as producers…don’t know if it’s true but they said over 18 million birds were put down in just one state……
    It’s downtrodden , my husband had a fit about canned food under our bed today, no he doesn’t clean under there nor put his shoes….he’s tired of the canning jar boxes piled under the center island, tired of the money spent towards buying food to prep and all the prep work that I’m doing….doesn’t like the boxes that I’ve neatly tucked in the area by the greenhouse with veggies growing in them so on and so on….
    Anyone else dealing with a spouse not believing this should be done and not accepting sacrificing spending money on all the snacks, camping and going out because the money goes to buying meats to can…….am I the only sad woman struggling or are there others out there because I need some encouragement …..😟

      How did you come up with the time 90 mins. I went on the national preserving website and it says 75 mins. I’m trying to can beans for the first time while first time using the pressure canner and I’m still a bit lost

    I am new to pressure canning. I have more experience with kernl, i.a. with the Nurcing Traditions book. I am trying to learn more about the processes, i.a. by watching videos on TH-cam. In your video you mention soaking dried beans and phytic acid. Phytic acid, I understand, is broken down via phytase enzymes found in kernels and beans and improves the availability of nutrients and vitamins, as I understand it. You mention that adding acid to the soaking water breaks down phytic acid. My understanding was that the breakdown of phytic acid via phytase occurs during the soaking and that the addition of acid ensures that clostridium botulinum, which produces toxins, cannot live in liquid with a low pH. Am I misunderstanding or mixing things up.

      Acid is only necessary for the prevention of botulism in water bath canning. In pressure canning it's actually the pressure/high heat that prevents the botulism. In the case of these beans, the acid is actually rinsed before canning begins. It's only there for the soaking part.

      Our well water is safe for consumption. We just prefer the taste of the filtered water for drinking.

    Love your posts.
    Question: how do your beans look after they are cooked? I have canned beans before. And they come out mushy. Do you happen to have any advice?
    And no I don't soak my dry beans.

    We love Azure, too! Have you tried coconut oil as a substitute for butter/shortening? :)

      Yes! We enjoy it, but my husband isn't a huge fan of the flavor so I really only use coconut oil when he isn't eating with us.

    I never think of soaking my beans until I want to can them. I must try your method and plan ahead a little better. Great idea to lessen the dishes in the sink, too. Do you add 1 cup of beans per quart? Have you ever eaten beans over toast? Yummy smashed up a little with olive oil drizzled and a little garlic, herbs.

      I usually fill the quart jars about a third of the way with the dried beans

      @@threerivershomestead I did the same thing here but with pints. The white beans swelled to top, can I still can them as long as liquid to one inch? I added 1/3 of jar of beans before soak. Thanks for any help.

      Other channels all say 1/2 cup dry beans per pint, 1 cup dry beans per quart.
