      parmesan and romano are salty cheeses, but yeah, i would put more cheese in there and some white pepper instead of the nutmeg. alfredo is a simple sauce, no need to overcomplicate it

    Nice quick video, I added garlic to the butter too.
    As far as tempering the egg, if the egg is not too cold you can whisk it in but tempering works too.
    I cooked some chicken breasts sous vide for an hour then finished in skillet I used for my sauce, added a lil flavor and cut down on dirty dishes.
    For people wanting to omit eggs, you can always add a splash of pasta water, the starch will help thicken it naturally, you could also add a touch of corn starch to thicken the sauce but the egg adds richness and smooths the sauce (it's fat).
    Lil salt and pepper, and some fresh parsley never hurts.
    I'm a BBQ guy in Texas so take these tips for what they are worth
    My 9 year old boy loved it, and that's what matters at home.

    Make sure to temper the egg yolk before you put it in the saucepan. To do this, just add a little bit of the hot cream mixture into a bowl with the egg yolk, mix until warm, then add it back into the saucepan .This way, it won't cook the egg and get lumpy.

      +Stephanie Chan I wondered that myself when I was watching the video. I swear I even saw the yolk cook when it was added in the video. I think they should edit it, for that I will give this video a thumbs down because unless someone has prior knowledge, they will ruin their pasta sauce.

      +xoheartyoona유나 certainly you can leave out anything you can't eat or don't have as you are making it for yourself. I am unable to help with the cream as I am unfamiliar with the variations of the US? Is all purpose cream a pouring cream? In Australia Thickened or pouring cream would be fine, any pure cream is fine.

    Thank you for your question. The trick is to add the egg yolk slowly, while constantly stirring the sauce. That way it will incorporate with the sauce without scrambling. Enjoy!

    I discovered this recipe yesterday then I made it for dinner tonight. It was delicious. Even my 2 year old and my 9 month old loved it. I will definitely make it again.

      I guess you have no idea how much salt is in parmesan cheese. Over 500mg per ounce. You don't even need to add a pinch of salt.

    I made this tonight and it was delicious! I omitted the nutmeg bc I didn't have it. I added smoke paprika and cayenne for flavor. I really like the 2 cheeses. The Romano gives the dish a deep rich pungent flavor. This is a winner. Thank you for sharing!

    1. Separate egg
    2. Stir yolk
    Melt 3tbs butter
    Mix in with 1 cup of heavy cream
    Add salt
    Add nutmeg
    Add 1/2 cup of grated parm
    Stir till melted
    Add yolk of egg
    Mix
    Simmer for 3-5 min

    This recipe was so good, thanks a lot for this wonderful sauce recipe. I did some little adjusts but the result came out wonderful.
    I added 1 teaspoon salt, 1/8 tsp nutmeg, 1/2 teaspoon white pepper, 1/8 tsp black pepper and 1/2 tsp garlic.
    I also added 2 to 3 tablespoons on top of the yellow to thin it out as recommended by a commenter over here to avoid any lumps. I used penne pasta in place of fettuccine, once the sauce was done, I put the pasta in the pan and I stir for like 2 minutes along with the sauce and I added like extra 1/2 cup of cheese to melt together & on top dry parsley to give a good taste :)

    Oh goodnes. Okay first of all I want to say my husband has always loved my pastas.. shrimp alfredo and my spagettis But I didnt make things from scratch until now. Our 2 year of marriage. . I never knew alfredo sauce was so dam easy to make. You cant imagine how much of a goof ball I feel like. Not only does this recipe taste sooooo good im saving tons of $ .... thanks all recipes. Ive learnes lota from your page... love from durango, Mexico! P.s nope we dont all just eat mexican food lol

    Using your recipe, I made a 3X portion of your glorious Alfredo sauce, so I used 3X the ingredients, plus a 3/4 brick of Philly, & a tablespoon of organic Morton & Bassett's "Herbs of Providence," some cracked pepper, 1 teaspoon of nutmeg, & holy smokes did it come out thick, silky/creamy & awesome. I used it for some 4 cheese tortellini shells. MMmmmmmmmmmmm...
    This was my 1st attempt to actually going by a quick & easy recipe, & you did not disappoint. Store bought jars of sauces are now officially dead to me. CHEERS!!!

    Made this today, and adapted as per the ingredients I had on hand. It tasted cheesy even though I didn't use cheese! First off, 3 tbsp butter with 2 tbsp all purpose flour. The resulting roux was heavier towards butter than flour. I added some milk, and boiled it down so it thickened slightly, and then added about 100 ml cream. And a lil stock that I had left after boiling chicken for the same dish. Added salt, pepper. When the mixture had reached almost its final desired thickness, I stirred in one egg yolk ever so slowly. And that was it. Really good, came together real quick. And probably the best success I've had with any bootleg version of the sauce.
    Edit: I did use garlic but that was when I put everything together - the veggies, the protein, the pasta.

    A few months ago I made this recipe and it was delicious! The second time I made it i sort of tweaked the recipe by skipping the egg and nutmeg, but it didn't have as much flavor. And yeah, next time, I'm definitely going to add garlic. It's my fav lol ❤🍽🍜😊

    I use a microwave and a blender to do this in about 2 minutes. heat the cream and melt the butter in the MW for about 45-60 seconds, put the egg yolk in the blender and the seasonings to the heated cream/butter mixture, stir, turn on the blender and slowly pour in the mixture. if you need to add some heat then just MW for another 30 seconds to a minute. works great and saves, time. thanks for the video.

    Thanks for your question, Panharath kim. The nutmeg is the traditional seasoning ingredient for this pasta sauce, but you may omit it if you wish. Substitutes might be allspice, cinnamon or mace.

    Yes, you can use milk instead of heavy cream. It might not turn out as thick or rich, but will still be delicious! Enjoy :)

    Thank you for your question, Julie. Nutmeg is a very traditional ingredient in cream sauces. If you are not a fan of the nutmeg flavor, you can certainly leave it out of this recipe.

    I made this recipe exactly like its supposed to be made last night but used fusilli noodles instead. The flavor is delicious but it is very oily bc of the butter. I am going to try again and omit the butter. Its the easiest recipe ever and tastes great so its a keeper.

      For the traditional Italian Alfredo sauce, all you need is butter, salted pasta water for the starch and Pecorino Romano ( a goat cheese ) , that's it. This sauce may be a lot of things, including delicious, but it certainly isn't traditional Alfredo. Cooked with egg, it is closer to a Carbonera " sauce ".

    Looks fairly good, me, use fresh grated nutmeg, fresh garlic, remove one third of sauce and finish pasta in two thirds of sauce in pan, then pour over pasta with remaining sauce, also temper your egg yolk, surprised that it did not curdle/scramble when added to simmering cream

    add garlic. fresh minced garlic. Plus pepper. Shallots at the start even. Whatever you want to do. The point is, this is a great base recipe from which you should add your own preferences. I made this with fresh spinach linguine, shrimp sauted in butter and salt along with steamed broccoli. It was incredible.

      Heavy whipping cream is to make whipped cream, I suggest to just use the normal heavy cream

    first of all, a good alfredo sauce has a flour on it (butter and flour combination to make a rue, for thickening)... and i'm working in a restaurant, they put red and green bell pepper to taste which makes it incredibly delicious.
    ps: you didn't whisk your egg yolk immediately when you put it in the sauce, so it curdled a bit...

    Exactly, no flour is needed at all. The cheese and the egg-yolk are all that is needed. The sauce isn't cooked separately either. Once the pasta has been drained it's thrown back into the same pot it was boiled in, then light cream is added (depending on the specific recipe), the cheese, an egg-yolk, some freshly ground or cracked pepper, etc. I've done it that way many, many times. But one can make the sauce in a separate pot. I'm going to try it tonight because I'm changing my recipe.

    I just use any type of cream, some cream cheese, some Parmesan cheese and like 2 tbsp of garlic powder. Comes out soooo good!!!

    Translation:
    in a saucepan melt 3 tbl spoons of 90% fat.
    add one cup of 35% liquid fat and let it simmer a bit.
    add 2 more quarter cups of 30% solid fat and let that melt in.
    and at the end add 50g of 100% yellow liquid fat.

    That egg yolk made it so amazing creamy and slightly thick. A MUST! I know recipes that call for flour and roux's and all that but damn this was awesome. If you mix this way of doing it with some other videos, you will make a masterpiece of a sauce in no time and easily. I added very minced onion and crushed garlic (basically garlic paste) and boy o boy it was good.
    USE FRESH CHEESES if you can.
    I used this video first to see what else I could add and CREAM CHEESE sounds absolutely stunna so maybe try that and you might really add some unique-ness to your alfredo sauce. Either way, SO MUCH BETTER THAN ANY STORE-BOUGHT Alfredo Sauce.

    Holy shit come on, you're supposed to tell people to temper the egg before they put it in or there will be a guaranteed hundreds of people frustrated with their grainy, lumpy alfredo sauce. Time to either re-do the video or put a caption that says to temper the egg yolk first.

      Sanchita Koppa take a bit of the sauce out and SLOWLY mix it into the yolk. Then add the yolk sauce to the “alfredo”. But to be honest this video is,... bland sounding. There’re tons better out there. For better seasoning I always add garlic, more parm than what she adds and some red chili flakes to spice it up.

      Pacen tho well, you can temper the egg yolk first, or you can remove the sauce from the heat before whisking it in, and it won’t scramble. As long as the temperature isn’t too high and you keep whisking, it blends just fine

    Finally...someone who puts the yolk in the sauce! I would add wine, garlic and shallots for more flavor, but I love the nutmeg and the egg yolk, which is part of how the original recipe was. People got scared of egg yolks and they are missing the richness that it adds to the sauce.

      you can, but you need to make a roux. make it with butter and flour, then cook it enough so you won't have a floury taste to the sauce, then add the milk. The roux is a thickening agent for Mac and cheese, and Alfredo sauce is basically the same thing in a way.

      If you use milk, make sure you add flour or cornstarch to the mixture. Add flour and oil/butter to a pan (which makes a roux), then slowly add the milk while whisking quickly so it will blend better. Hope this helped. (:

    @Allrecipes I have a few questions if you don't mind.
    How do I get the parmesan to fully melt? It came out tasty but I didn't like the texture because some of the cheese didn't fully melt.
    Also, I made this recipe for myself since I'm barely learning how to cook but my family tasted it and really liked it so I have been asked to make a large enough serving for about 5 people, how much of each ingredient wpuld I make to serve 5? I don't just want to double everything and call it a day because it might be a bit salty and I don't want to heavy of a parmesan taste.
    Last question, I want to add grilled chicken to this and I season the chicken with salt and pepper, so to not have to much salt and pepper in the taste do I cut the salt and pepper by half when making the sauce or do I just keep the sauce the same and just throw in the grilled chicken?
    I made this recipe after trying a few other recipes and this one is by far my personal favorite except I substituted the nutmeg for plain old black pepper because I didn't have nutmeg.

    Hi rachel. You can leave the nutmeg out if you prefer. It's usually used to enhance the flavor of cream based sauces.

      Heavy cream is hard to replace, Mohammed Aiyaad, but some cooks use a mixture of half-and-half and butter as a substitute. To substitute half-and-half for 1 cup of heavy cream, use 7/8 cup half-and-half with 1/6 cup melted butter. (Be sure the butter has cooled before blending it into the half-and-half.

    also for lith alfredo you can use 1/2 cream with 1/2 milk from the galon or full can milk we love it .....
