Same. You can use a lid and add a few drops of water on the side for some steam...

I believe you can do so. But perhaps it's best to use most of the batter at once. For best results

Yes milk burns very easily. It needs to be on very low heat, preferably with steam, maybe a little bit more butter and or oil. If you haven't got a griddle Iron press or thick base pan. I would use wax paper check it often and check it quickly.
Crispy is nice but burnt pancake taste disgusting
You made a few small mistakes.. it isn't the milk.
1.. you didn't use nonstick. If you don't use nonstick, then you need to use enough oil and butter, but also let the pan heat up properly first. That will prevent sticking :-)
