Pecorino Romano is almost exclusively what I use anymore. I am also addicted to Pasta Limone', it's so simple and delicious. Also the Pecorino is great in authentic Alfredo. Authentic Alfredo is just 2 ingredients, butter and cheese. (with a bit of pasta water). So much better than the milk/cream based ones everyone makes nowadays imo. For me, the ultimate italian food is the Bolognese sauce. If you can do that great, you can make so many delicious meals. I'm addicted to authentic Bolognese, i've made it a half dozen times already this year. For me, the next thing on my list is making my own Pasta's. I've done some, but I especially enjoy fresh pasta in lasagna and the heavier noodles (Pappardelle, Tagliatelle etc). A good artisan Spaghetti or Linguini is fine imo. This carbonara looks pretty tasty. I may have to give it a try. With wife and her issues, the heavier meat fats from this may not work so well.

Pecorino is great as its not aged as much and tends to have a creamier texture - so basically it can replace parm in most pastas, though you may need a to add a bit of salt 2. Agree with Bolognese, especially a good one. Damn hard to unseat that as a top pasta sauce, though there are a number of ways to make it. And now that I think about it...I have to make a video on this 3. Making your own pasta is quite easy however I strongly recommend a pasta machine to get an even dough...also you will use a lot more eggs than you might think. Pappardelle and bolognese is probably my favorite combo. 4. This was indeed VERY tasty, however if you are looking for an alternative to the pancetta/bacon - i'd recommend either mushrooms or chicken, bonus points if you smoke them. Or just go the cacio e pepe route.
