Some very interesting ideas - using vortex for charcoal donut. Cutting ribs in half. with grate right under. I will need to try!

    Great cook Ray!
Noticed how you sped up the video to save time.
Great looking ribs! I think you got the “hang” of this thing.
Camera girl is so sweet...very helpful and supportive 👍
I did the Char Siu pork chops the other day using the Hunsaker. They turned out well, but I overcooked them a little.
I combined your recipe with Tommy’s over at Gallery Backyard BBQ. I gave you guys a shoutout. I’ll have my video out soon.
Funny you put that grill grate down below.
I failed to do that and my center piece of the Hunsaker fell off into the fire. Fortunately, I was removing my last chop when it happened!
    Take care😎✌️

Yep camera girl and I had been around for a long time. Thanks for watching. I wanted to just get the video out because I have to get back to work so I just pushed it thru. The ribs were tasty, but my favorite so far are the St Louis, but that's what "Camera girl" wanted so that's what we had. Thank you again for watching my trails and errors.

Oh BTW, "shoutout"? That will be a first. I'm just a humble backyard cooker trying to share videos with family, etc. I'll be looking forward to your video. I bet they were delicious. You know if your pork doesn't have enough fat it will be dry. You know when we were younger my dad would tell us kids to pickup some char sil at the store. He would want us to get the fattier pieces and to request that. Of course, as kids, we try to forget that and denied that he even told us so when the person at the counter would ask "do you want the fattier pieces?" we would said no. No doubt they knew better and were testing us. You need fat for flavor. Many years later I am finally learning this. Sorry dad, should have listened.

rayc76knoxville You might be a humble backyard cooker, but you’re doing a pretty good job of it. At least you got my interest. I enjoy watching your videos.
Now that you’ve gone back to work I hope you keep up with TH-cam and still make videos!
Yeah you are right about the fat of your pieces of pork having more flavor and juicier.
My chops were too thin. They were dry, but they had a great flavor. Next time I will make sure and get the thick fattier chops.
      Thanks for the tip!

Inquiring minds (me) want to know what temp you cooked your ribs at to get them done in 3 hours.

Ray, enjoyed the video. What is not to like about ribs. Did you notice at the beginning of the video how close that falling ember came to your sneaker. Yikes!!! Be careful my friend. I could have put a hurting on those babybacks. They looked good. Lastly I think you were holding out on us (only kidding)...around the 7:20 mark I see the PK with fires lit. Curious George wants to know "whats cooking"? Once again great job.

Hey Jeff, I saw it as I was pouring the charcoal. Wow, I said to myself! It was bright red and really hot. No flip flops while on duty. You are quite observant. We had some family over (1st time in awhile) and one of our family can't eat "smoke" food right now (which surprised me) so Boy #1 was helping me grill up some kebobs. Nice thing about the PK is that it doesn't take much charcoal and it great for fast and hot cooks. Thanks for following along. I think I better start working out. I'm becoming a big boy! ha, ha. God Bless.
