- Hello, my beloved, Woodswoman Watchers! As of the publication of this video, I am exactly 48 hours away from my next big adventure!  in this video, find a detailed description of what I am bringing in my non-cook food sack for this 300 kilometre, 12-day thru-hike. Each day’s menu:
2@ Boost breakfast/coffee mixtures
80g McSweeny’s Pepperoni sticks
2 different flavours of homemade protein cookies
1 homemade pecan raisin cookie
1 homemade fruit roll-up
50g almonds
75g dates or dried apricots

Protein Cookies

2 cup peanut butter
1.33 cup brown sugar
2 large egg
1 cup vanilla protein powder
0.5 cup chocolate chips optional
3tbsp Gatorade crystals (makes 500mL)
= 2085 calories, 80.4g protein, weighs 518g (just over one pound)
Preheat the oven to 180C/350F. Line a cookie sheet or baking tray with parchment paper and set aside.
In a small mixing bowl, combine all your ingredients and mix until combined.
Using your hands, form 12 balls of cookie dough and place them on the lined sheet. Press down on each cookie to form a cookie shape.
Bake the cookies for 12-14 minutes, or until the edges begin to brown.
Remove from the oven and let cool on the baking sheet completely.

Fruit Roll-Ups
1 part banana
1 part berry (raspberry or blackberry or blueberry or strawberry or a combination of these)
Blend with a hand blender
Pour onto silicone, trays
Dehydrate at 145°F or 63°C for 6 to 8 hours
Peel the large, circular ring of dried fruit off of the silicone ring and cut in half 
Place onto parchment paper and tightly roll
Place into a Ziploc bag and store in a dry place 
Also try: banana and apple, sprinkle cinnamon after pouring onto trays
Also try: banana and peach
Also try: banana and blueberry, sprinkles Chia seeds after pouring onto trace

All very interesting! I love that you’re not into junk calories like so many other hikers - setting a good example! I’m wondering, though, if the peanut butter in the cookies provides enough daily dietary fat, which helps to give you energy and assists digestion.

The peanut butter in the cookies alone would not be enough protein and fat, of course. The pepperoni lunches pick up the slack in those departments. I agree… It’s crazy to me how many hikers eat candy and junk and don’t give consideration to protein and fibre and vitamins and minerals. Thanks for watching and chiming in, Jean. Great video, very informative. Are you carrying all the food you need from the start, for your entire through hike? I believe you mentioned a resupply at some point so I'm wondering if you'll be shipping some of your food there? Have a great and safe hike, so looking forward to the videos!
