Yeah, that's true indeed. I'm from the UK but Indian food is probably overall my favourite. Variations on bhurji have been a mainstay in my breakfast repertoire for at least the last couple of years since I discovered it, albeit with less oil and eggs than this since I just make it for myself. I wouldn't say that I'm a good cook in general, but the stuff I do make usually turns out pretty well. Masalas used properly are a gift to the world.
Ingredients 3 large onions 3 large tomatoes 4 green chillies 1 inch piece Ginger 2 tbsp butter 2 tbsp vegetable oil Salt as required 1 tbsp red chilly powder 1/2 tbsp turmeric powder 1 tbsp pav bhaji masala Handful of coriander leaves 6 large eggs Method - Chop onions finely - Add oil, butter and onions and allow the onions to sweat - Chop chillies and ginger and add it to the pan - chop tomatoes and add into the pan - Add salt, turmeric, red chilli powder and pav bhaji masala - Mix everything - Beat the eggs add salt and put the eggs into the pan - Egg Bhurji is ready to be served.

My mom used to make me a lunch dish for school when we were in the middle east.... it was an egg masala stuffed kubboos. I didnt show much interest in cooking when she was alive. She passed away when i was in college. And i was left with few of her dishes that i really loved but no idea to cook it. This egg masala i tried to make a 100 times different ways but couldnt get close to that taste that i remwmber. Then i thought mayb she didnt makr it in typical kerala way. Cz she srudied nursing in BHU, Varanasi she had other stately influences in her cooking. And i thought mayb i should try making an egg bhurji. I didnt have pav bhaji masala. But i checked the ingredients and added everything that was involved. What can i say..... Thankyou.... after 8 years of searching (i started cooking after marriage) i git the taste right yesterday ...... thankful.... it was delicious..... next time im gonna stuff a kubboos and see if i breakdown with nostlagia...

Man, what a great recipe… the twist you suggest for pau bhaji masala… it made my day. I also added little less than half lime for 6 egg bhurji to cut the sweetness of onion. Also i microwave onion for 2 minute before to remove its raw smell. End result is so amazing. Wish I could attach the pic of my bhurji. 👍🙏🏻
