Yeah, that's true indeed. I'm from the UK but Indian food is probably overall my favourite. Variations on bhurji have been a mainstay in my breakfast repertoire for at least the last couple of years since I discovered it, albeit with less oil and eggs than this since I just make it for myself. I wouldn't say that I'm a good cook in general, but the stuff I do make usually turns out pretty well. Masalas used properly are a gift to the world.
Im from the Philippines and i studied in the medicine university with lots of indian students since it's a semi indian medicine school. And there are various foods in the canteen with indians food and this is the one that i like. THANK YOU FOR THE RECIPE!
Ingredients 3 large onions 3 large tomatoes 4 green chillies 1 inch piece Ginger 2 tbsp butter 2 tbsp vegetable oil Salt as required 1 tbsp red chilly powder 1/2 tbsp turmeric powder 1 tbsp pav bhaji masala Handful of coriander leaves 6 large eggs Method - Chop onions finely - Add oil, butter and onions and allow the onions to sweat - Chop chillies and ginger and add it to the pan - chop tomatoes and add into the pan - Add salt, turmeric, red chilli powder and pav bhaji masala - Mix everything - Beat the eggs add salt and put the eggs into the pan - Egg Bhurji is ready to be served.
I followed the steps by Varun and egg bhurji was amazingly tasty it brought a smile during Corona times when we all are quarantined, It reminded me of PAV and BHURJI I used to have in Bombay in 1990s . Varun thanks for sharing the recipe and your positive energy

I made it with all the recipes mentioned but with Everest's Kitchen King Masala because I didn't have any PaV Bhaji Masala. Still not bad, I'd say. Added a spoonful of Chat Masala at the end. Thanks Varun (and Get Curried).

Man, what a great recipe… the twist you suggest for pau bhaji masala… it made my day. I also added little less than half lime for 6 egg bhurji to cut the sweetness of onion. Also i microwave onion for 2 minute before to remove its raw smell. End result is so amazing. Wish I could attach the pic of my bhurji. 👍🙏🏻
