    ingredients + instructions:
    MEAT:
    1 Gallon of water
    3/4c salt
    1/2c brown sugar
    1tbsp black peppercorn
    2 bay leaves
    3 sprigs thyme
    Combine all
    Install 1 large skin on boneless turkey breast. wait for a day then remove
    pat dry
    put on wire rack on a foil lined sheet, sprinkle on old bay or similar.
    put in 400F oven for about 30 mins, until 163F
    let sit until room temp, then wrap in plastic and put in fridge overnight.
    Slice
    ------
    Sando Sauce:
    1/3c mayo
    1/4c yellow/djon mustard
    1/4c parsley
    2cloves garlic
    salt + pepper
    combine to get lube
    ----
    heat 3tbsp oil in large pan on med/high heat
    add 1 container (1/2lb) grape tomato
    Remove once they're charred and softened
    season with salt + pepper
    ---
    Thinly slice onion, then rinse in bowl
    ---
    Construction:
    1. Take 2 pieces of bread per sandwich
    A. toast if wanted
    2. Put on sauce
    3. put on lettuce
    4. put on tomato
    5. put on onion
    6. put on m e a t
    7. crown king
    8. moisture incoming

    I worked at an artisan sandwich shop. We always tried to keep the food cost of any sandwich below 25% the price of the sandwich. The economy of running a restaurant vs the economy of cooking at home is just different.

      Don't let anyone think that 75% of the cost goes to the owner. About 40% of the cost will go to paying staff, leaving 35% to cover utilities, equipment, rent, marketing, business insurance and other costs of doing business.
      Honestly, I wouldn't dare open a restaurant without owning the real estate outright. Margins are so thin I want to at least know I've eliminated rent as a factor

    The unit price per sandwich is always low, but if you don’t have most of these ingredients on hand, you end up paying easily 70 dollars for the ingredients. I want to see how cheap josh can go for the total purchasing price. Much love and keep it cwispy dudes

    So, I made this recipe over the weekend and I have a few notes on it:
    - I used the light sprinkling of salt method. Worked great. No need for old bay (as was used in the video) but the choice is yours
    - I found that my "sando sauce" was way too thick. I was going by the weights in the recipe, and it was basically parsley paste. What I did was add another 1/4 cup of mayo and that really helped.
    - I used yellow mustard, not Dijon. I found the mustard really started coming out as it sat a few days.
    - Once you're done cooking, really let it come back down to room temp. Even if it's just warm, it'll make a difference. My turkey was a tiny bit dry in some parts, but the flavor was amazing.
    - Using butter or margarine to toast made no difference. It didn’t add or take way, so don't think you're missing out using margarine to toast your bread versus butter.
    - Butter lettuce over iceberg.
    - The onions were nice. The rinsing made a huge difference.
    - He says in the recipe that he used "grape" tomatoes. The recipe online says he used grape. I could not find grape tomatoes on the vine. Do those even exist? Plus, those are super round grape tomatoes. IMO, I believe those are cherry tomatoes. They did spit a ton, but were fantastic charred.
    - The price on this stuff is crazy. It's still cheaper, but a whole turkey breast can be pricey. This is during Easter as well, so Turkey is available but it's still pricey. The flavor is fantastic! However, the turkey is where you can make or break your budget. Shop around, please. Mine was $28.85 CDN per Kg at Easter time. I got about 7 portions, but cutting it as thin as sandwich meat is not something I did. It was a little thicker.
    Just my obersavtions.

    Made this with your ultimate sourdough loaf using your sourdough starter recipe. - exquisite btw. Instead of turkey, I brined and roasted two chicken breasts. Fabulous. This recipe has saved me tons of money in the last two weeks. I can't wait to change it up just a little - next week im doing roast beef sandwiches with homemade sourdough Kaiser rolls. - I roasted a eye of round roast the other night and put it in the freezer. Can't wait.

    Deli worker here: the slicer doesn't suck, you just need to cradle the turkey on the other side - especially turkey breast, it always breaks apart

      @@TripleFudgePacker the only thing wrong with it is that its not all the same quality, some times it's a little low on sauce sometimes it's a bit crunchy so those people probably went to a bad location or went on a bad day but no matter what it's always a great price. I think the price actually makes it taste better. Nothing is better than saving money no matter how rich or poor you are it will always feel amazing.

    I had never knew the taste parsley delivered until now!! I made this sandwich for my family. Obviously I didn't make my own turkey but still came out super delicious. Was also my first time using butter lettuce, by far the best lettuce I've had. Everyone in my family loved their sandwich. Will be eating more homemade sandwiches. Thank you

      In the Midwest Panera charges $8 or $9 for a full sandwich, sub shops like Jersey Mike's and Firehouse charge $12 for a foot long sub, any quality deli the sandwiches start at $9 and go up to $15, $16 depending on the meat. So I imagine in places like LA, NY or CHI you can add several dollars to those prices.

    I've made this a couple times and it is legitimately the best sandwich I've ever made. I think it has less to do with the turkey and more to do with all the other ingredients, especially the toasted sourdough. It's definitely not cheaper than any homemade sandwich, and you'll probably waste some turkey unless you want to freeze it. Also, 30 minutes is an absurd estimate for cooking the turkey. It's taken 90 minutes or more for me.

    I made this today. It turned out wonderfully!
    Some notes:
    I used boneless skinless chicken breast which worked well so even if you can’t find turkey, give it a go!
    I topped mine with a few different spices before roasting but my family liked paprika the best.
    The brine as listed is 5.4% salt by weight. The meat I used was Kosher (already salty) so I dialled back the salt to 5% and it was still a tad salty. When I make this again I’m going to aim for 4.5%.

    I have to agree you can make some really choice, really cheap sandwiches if you know what to do. I've got a favorite of mine that I use, personally.
    Bread: anything that toasts well and tastes good.
    Meat: I either go with ham or pork shoulder. I can get an absolutely monstrously huge pre-smoked ham for $30 CAD, cut it into reasonably chunks, and freeze whatever I'm not using. Ham holds up to freezing really well and I'll have well over a month of sandwiches with that meat or more depending on how much I use, plus there's no cooking involved. For pork shoulder I can get a really big one for $9 CAD, enough for a dozen sandwiches for more, and cooking is just 'salt, pepper, oven, cook for X hours, broil for ten-ish minutes at the end'. So easy, so cheap, and the resulting crispy pork crackling is so ridiculously good with sandwiches.
    From there you can just buy whatever cheese and condiments you want. Add some lettuce and sliced tomato, you'll have a sandwich that'll fill you up for most of the day on its own, tastes great, and is _very_ cheap. Not as cheap as just PB&J of course, but a damn good upgrade for very little price. This method also requires about 1/10th of the kitchen tools and prep time as Josh's too so, bonus there in my lazy books. I've never done a full dive on prices but there's a ton of room for finding cheaper options or buying in bulk to save on cost with this method (namely, buying in bulk that doesn't require you to eat a ton at once before it goes bad).
    Recently I also started spicing up my sandwiches with some home-grown basil too, and what a great addition. The plant was only a few bucks and just needs water, and has fueled dozens of sandwiches with so much fresh flavor.

    My experience with a lot of these things is that if your goal is to be as cheap as possible, it's often cheaper to just buy the ingredients in the store. On my last trip I saw the cheapest white bread at like .79 cents a loaf. HOWEVER, if your goal is to make something GOOD then this is where Joshua's recipe really slams. Just about everything he put in there from the turkey he brined himself to the bread that he baked himself would basically be artisanal and expensive AF to go out and buy on it's own. This really would have been a $12 sandwich.

      Who in the hell spends $12 for a sandwich? I mean, a 9-inch sub at a solid Italian deli here in Chicago is about $8-$9. OK, at the high-end of places I can find one for almost $12 ($11.50). But that's not "average." Average sandwich, I'd say, is about $6.

    I like what hes doing. I just can't get over the fact that he doesn't include the price of these ingredients when you buy them in a store. Like 1/2 a cup of brown sugar maybe 20 cents but when you buy a bag it's like a couple dollars more. Same with a lot of the other ingredients

      True but some of them are ingredients you would have in your pantry like oil, ofc a bottle of oil if you have to buy is $5-10 but you only need $.20 of it for the specific recipe same with mayo and other things you may have already

      He does include full prices when you have to buy something special that it’s not a common staple of most people’s pantries. Also, there’s always a moment, after he finishes cooking and shows the finalized dish, when he puts the full price of the meal if you were to buy everything.
