    Thanks I absolutely love pumpkin. I’ve found that the flesh of white pumpkins to be super sweet and not at all runny. If you haven’t tried them and can find them in your area I highly recommend giving them a try :-)

    I ended up making these on Sunday. SO easy and, although, my piping skills lack LARGELY, they still came out great! I used lemon juice with a ginger kicker and the icing is delicious! My husband loves them and I will be sharing with my elderly friend this evening. Trying to get her to make the switch to plant-based.

    My husband came across this recipe and forwarded it to me. He thinks the picture looks like the Little Debbie Oat Cakes that we used to buy (but not for over 10 years). They were his favorite. These look delicious. Getting to pipe the cookies is a plus. I always feel like such an accomplished cook when I pipe something! I have put this in my stack of upcoming dishes so will be making it very soon. I have subscribed to your channel and look forward to seeing all your past and future dishes!

    Hi Jill, as always Love your recipes! I wanted to let you know that you can cook the small pie pumpkins whole in the instant pot on high for 6-10 min depending on size. Don’t go too long 😊 Just add water to cover bottom and use the metal trivet so the pumpkin doesn’t touch the bottom. When done release pressure and let cool. Remove, cut in half and remove seeds, etc. Just another option😊

    I made these cookies and was surprised at the amount of time i needed to “grind “ the oatmeal into flour. I also used the canned pumpkin. I forgot that Jill cooked hers longer than the time suggested and mine came out soft in the center. I did put them back into a warm oven and they firmed up. I will make these again but will cook longer, most likely it was the use of the canned pumpkin. Very tasty, everyone liked them. I did not make the frosting. Thanks for sharing.

      Yes, most of the "vegetables" are actually fruit, except for the flowers, the leafy greens and the roots. It always makes me smile when people say they don't like vegetables 😊

    Any round orange fleshed winter squash makes great pumpkin recipes. Almost all canned pumpkin is in fact orange winter squash

    Exactly the recipe I was looking for!
    I bought Organic Pumpkin Pie Spice from Starwest Botanicals (because I love their yellow Curry Mix). The ingredients in order are: Cinnamon, Ginger Root, Allspice, Cloves, Nutmeg. In my opinion this blend is WAYYY too heavy on the cloves so I'll be adjusting it, probably adding some Ceylon Cinnamon and going from there. If anyone has a solid Pumpkin Pie Spice Mix with balanced ratios please share!

    The Heirloom "Long Island Cheese" Pumpkin is very easy to cut open. Normally I have to have my hubby do it for me because Pumpkins can be tough... but I can do these Cheese Pumpkins just fine.

    The cookies sound/look good enough just by themselves without the frosting!
    BTW, also I like to use butternut squash for baking "pumpkin" things instead - cook it and puree the flesh in a food processor....very flavorful (and no one can tell the difference).

    TIP! - For those who cannot eat Pumpkin, just use Applesauce or even Berry/Fruit puree in place of the pumpkin. It works the same.

    It would be a great idea to put all your dry ingredients together before turning the oats to flour. Then you know that you know there are no little clumps of baking soda hiding.

    We grew the heirloom seed "Long Island Cheese Pumpkin" which is a medium "Pie" pumpkin and very yummy.

    Tip : wash and dry the seeds, sprinkle them with your favourite savory spice blend and roast them while the oven is pre-heating.
    Tip : if you're watching your weight, don't gring the oats into a flour, you will burn more energy digesting them, and substitute the cashews for cooked chickpeas or butter beans.
    What do you guys do with the seeds and what do you usually substitute cashews with? I'm curious 😊

      Additional tip: Save a few of the largest seeds to plant in the spring/early summer when it warms up. Keep selecting from the plants that do best, produce the best and taste the best, and after a few generations of doing this you will have an excellent variety that is acclimated to your area and soil.

    I know that the small pumpkins are probably better...but to keep recipes low budget, I use the big pumpkins and I find they work well. Just add more spices.

    I couldn't get my frosting to go smooth, I tried over n over in a high speed thermomix so gave up in the end but they were still really good.

    I used the metric measurements and they turned out a bit cakey/gooey (still delicious, but not very cookie like). Should I increase the oats?

      Yes, maybe try just slightly mor oat flour. The metric conversions come from a recipe template that converts the measurements so I’m glad you are letting me know

      I tried it again with a cup measurment on the oats and it turned out to be 240 grams! Quite a difference. Kept the rest at metric measurements. Turned out way better. Still not a traditional cookie but so good!

    Looks like a very good recipe. Did you try to add aquafaba to filling instead of water? I didn't use aquafaba yet, but looks like it can work like bitten egg whites.

    I am allergic to all nuts. Being a whole food plant exclusive eater makes subbing out nuts a regular occurrence. I wonder how "whipped cream" would taste using Hannah yams or white sweet potatoes, with vanilla, plus some dates. Have you ever used white sweet potatoes in a frosting or whip or icing type process?

      I use a ripe banana with 1/2 cup of soy milk, and vanilla, then I blend it. Once it's done, i put it on the stove and i thicken it with arrowroot starch (or whatever starch powder you have). I first dilute two tablespoons of the starch into water. Then, when it's hot, i add it to the banana mix. Then I stir to thicken it up. I put it in the fridge for a couple of hours. It comes out real nice, like a thick pudding, and it makes a delicious frosting.

    Mine were slightly gooey after 15 min in the oven so I did a few minutes longer i have a smaller GE gas oven that can be variable. Just curious what the bottom of your cookies looked like? (Were they slightly crusty or soft?)

    I saw the nutrition information, but I didn’t see a serving size. Can you help me with that? I’m surprised by the calories of serving size if one cookie. Gotta be the dates, then.

      It makes 16 cookies and I believe the nutritional template that is on the website measurements are per cookie.

    The picture shows them as a sandwich cookie, but the recipe says not to stack them, I'm confused.

      Don’t stack them if you just frost them. The sandwich version in the picture just looked better for a photo

    Any idea how whole dates translates to date syrup? is 1 cup of dates equivalent to 1 cup of date syrup?

      Not sure it will work because date syrup doesn’t have any of the fiber that the dates have. It may just be too much liquid

    Dates are quite expensive and only available in 8 oz. bags in my area. Any advice on where to find good, inexpensive dates online in larger quantities? I live in a rural area and the nearest whole foods market is almost an hour away.

      First of all Whole Foods is a complete and utter ripoff on literally every item. Second "Inexpensive" is relative and IMO inexpensive dates don't exist. The best price I've found on the Medjool Dates (way better than the Deglet Noors in terms of flavor and caramel-like consistency) is at Costco ($60/year membership) for ~$11-12 per 2-lb. box. The second best price looks like a tie between several brands on amazon. Bard Valley Natural Delights is the brand Costco carries and I can totally vouch for - still you will want to open each one with your hands first as occasionally there will be a moldy date for any brand. However these are available for not too much more on amazon. Good luck!
