Excellent the way you use both the parts.
We used to skin-out... cut it into small pieces.
While frying...we used to add coconut, a good amount of coriander leaves, curry leaves a little, jagerry a piece. After that raw gingelly oil sufficiently and not much. This can be preséved for a week in air tight container.
Actually this vegetable is not explored for curries at it's best way.

👍👍🙏🙏 Peerkangaai koottu .....try this method...after washing well soak the Moong dhaal for 10 minutes. Then in a pressure cooker cook Moong dhaal + Chana dhaal with Peerkangaai pieces, 1tomatoe(raw/ripe) 1or2 green chillies, Salt to taste and little turmeric powder. Add necessary water for cooking the dhaal. Then remove the cooked dhaal with Peerkangaai pieces etc., and keep aside. Mix the grated coconut well.
Then separately heat 1or 2tsp oil fry the mustard little, 1 or 2 red chillies, 1tsp Urad dhaal and few curry leaves. Mix with dhaal, Peerkangaai pieces etc., well. Now Peerkangaai koottu is ready to serve. Thickness and salt etc., as usual everybody knows what to do. Thanks Sowmya 🙏🙏👍👍 God Bless you 🕉️ Take care:)
