Dry the chicken on both side with paper towel before putting in ur chicken is too wet, thats why it has so much oil spills. 3 u put way to much oil, look at the spill u made when u put the first breast in. 4. Your pan is not heated enough before u put the chicken breast in. There was no sear. Make sure to heat the pan before u put oil so u dont get too much char on the chicken. 5. Cook once each side and dont move the chicken that is important. For any pan searing 6. You either put the garlic in before chicken and fish them out like the chinese do for stir frying or put whole cloves in so it doent get burnt and stick to your chicken. 7 never put lime juice into burning pan, it will make it bitter, if you want to use lime juice while cooking i suggest low heat and also a sprinkle of sugar. 8 let the chicken breast rest before you cut. So the juices dont run out. 9. If you are doing the buttered recipe, you had to let butter brown a bit and baste the chicken to add flavor and collor. 10. Cilantro and chicken doesnt go together, to add color, try finely chopped chives

I think it will be better if you marinate the chicken first with garlic, lemon juice, salt and pepper before you fry it. You can add butter just before you get the chicken out from the pan. That way, the garlic won't look so overcooked (thus leaving bitter taste to your chicken) and the chicken will taste better.

Always preseason your chicken with salt and pepper to taste don't use garlic powder if using fresh garlic it will be a bitter taste on your palate as well.

You don't move around so much, it will loose it's liquid....salt and pepper the chicken before putting in the pan, add crushed garlic with fresh thyme and rosemary, and in the end butter...run the chicken breast with the butter ...let the chicken settle down for 5 minutes before cutting it This is the worst recipe

My way, I seasoned my chicken with salt and pepper then fried with garlic butter on low fire, simple, juicy and tasty.
