Spicy Pineapple Habanero Mojito
Ingredients:
3 oz J Wray & Nephew White Rum, or your favorite white rum
Ice
2 oz Pineapple Juice
6-8 large mint leaves
½ oz fresh lime juice
1 lime wedge
2 tsp of granulated sugar
1 Habanero pepper cut into thin slices
Ginger beer
Directions:
Tear and clap mint leaves to release oils
Muddle mint, lime wedge and sugar in a cocktail shaker.
Add pineapple juice, rum, and fresh lime juice to cocktail shaker
Strain the contents from the cocktail shaker into a highball glass filled with ice.
Add more mint leaves, habanero slices and top off with ginger beer.
Garnish with a mint sprig.
