Paneer Matar Pulao (Cottage Cheese and Peas Rice)

  • Ingredients:
    2 Cups Basmati Rice
    1 Cup Frozen Peas
    1 Large Onion (optional)
    1 Tbsp Cumin Seeds
    1 Cinnamon Stick
    4 Green Cardamoms
    2 Black Cardamoms
    2 Bay Leaves
    4 Cloves
    2-3 Tsp Salt (according to taste)
    Pinch of hing(optional)
    2 Tbsp Ghee (use oil for vegan version)
    1 Cup Paneer Cubes ( recipe: • Homemade Paneer (Cotta... )
    Use tofu for vegan version.
    Method:
    Wash rice and soak in some cold water for 30 minutes and drain well.
    Chop onion.
    Heat ghee in a pan. Add in cinnamon, bay leaves, cardamom, cloves and cumin seeds. Sauté for a little bit until spices are fragrant. Be careful not to burn them.
    Then add in onions and fry until translucent. This should take about 2-3 minutes.
    Then add in the paneer cubes. Gently stir them to the ghee and spices to be careful not to break them as they are a bit soft. Brown them for a few minutes.
    Next we’ll add in the rice. Very lightly and carefully fold in the rice to this mixture until the rice grains are nicely coated with the ghee.
    Sprinkle the peas on top.
    Add in 4 cups of water to the rice.
    Season with salt and hing if using.
    Bring to a simmer and cover the pan. Let the rice cook for 15 minutes on medium heat until it's done and all the water has been absorbed.
    Sprinkle with some fresh chopped coriander.
    Serve with some curries or chutney.
    Note:
    Replace ghee with oil and paneer with firm tofu for vegan version.
    You can skip the onion for fasting recipe.
