    Gen 2's work like a dream with the side feed. Note to self: don't watch Steve's cooking vids before bedtime. That got the juices running! Meal fit for a king.

    There is nothing wrong with the way you made your Roux. But an easier way is to simply brown your sausage then sprinkle some flour on your sausage and drippings and stir until the flour has disappeared. then simply add some milk or cream and stir until it's as thick as you want.

      That's the way my granny showed me only takes a teaspoon of flour I just eyeball it I like brown gravy so I let it brown then just dump about two cups of milk 😋. Also she made her biscuits with Crisco and in my opinion it makes the best biscuits hands down.

    • @leiatyndall8648
      @leiatyndall8648 5 ปีที่แล้ว +5

      I know somebody once told me to add all the milk at once, but really, just add a little at a time, stirring it all the while. It helps avoid lumpiness when you work the roux & the milk together gradually.

    • @hadmatter9240
      @hadmatter9240 5 ปีที่แล้ว +6

      Quite right, @Belford Lancaster, but seeing him make it kicked my OCD into OD. My late grandmother would've probably smacked his hand with a wooden spoon had she saw that clumpy mess. Also, you add the liquid slowly, then remove the pan from the fire when it has thickened.

    • @hadmatter9240
      @hadmatter9240 5 ปีที่แล้ว +2

      @@goose4342 Yup, mine used Crisco, as well. I just wish I would have asked her to teach me how to make chicken and dumplings, cause my mom could never get em right, even though grandma taught her how.

      @@fireboxstove I’ll have to check my gear but I think I bought one of your firebox stoves for motorcycle camping. Haven’t used it yet. Looks like I’m going to need another and the oven set up.

    Beautiful biscuit!!! You are in the winter, under a tree, making a kick azz breakfast from scratch! Just want you to know that your videos make me want to run away from home and camp/cook under a tree in the middle of nowhere! :-)

      You will love baking in it. It is fun and the food turns out good. I would recommend just making sure you keep your heat low on the bottom and put as much heat as you can on the top. Let me know how it turns out!

      We have a success story! Fresh-baked coffee cake with Jiva coffee in the woods. Some learning curve items though. First, don't overfill the cake pan with batter! Cake batter does not cook well on the thermal mass rocks, and makes you knock your coals off the top of the oven when you end up yanking the oven door open because you don't know that it is baking spilled dough in the rim of the lid! Lesson #2. Our most prevalent firewood, Alder, does not make long lasting enough coals to bake with. I was using two stoves to keep a supply of coals coming, and had a very hard time of it. I want to find a source for good mesquite charcoal as you use in your baking. But it worked! And it was delicious. Next up, a loaf of bread next weekend. And we need to buy a few more of your accessories for the system. We'll order up next payday (we're retirees and get paid only monthly) and expand this system and get more practice with it. Can't wait to surprise the grand kids!

      I loved hearing about this. Thank you for sharing. The whole idea to it all is learning how to do it and perfecting it while having fun. You are doing great and the next time will be even better. You have to learn to use your resources as well, the wood here in Utah is different then where you are at, so we find what works and make great memories. Your grand kids will enjoy this with you. Thanks again for sharing! Cheers!

    Heck. Yes. You got a new subscriber. And a new customer as soon as I can scrape together both the dough (it's more scarce than biscuit dough) and the support of the lady to add another stove to my (what seems to be becoming) collection! The surprise sledding bit at the end had me rolling! Good stuff man.

    Biscuits & Gravy is not a thing over here but I swear, if I ever make it to the States, I will ask for it as soon as I land! (and I will forgive them if it’s not cooked on a wood fire).

      I don't know if Mark is in the U.K. like me, but in Brit speak Sir, would 'biscuit' be essentially a pastry crust, or an unleavened bread perhaps, and whilst our 'gravy' is normally brown (like with an oxo cube or Bisto), yours is maybe like a paler broth or stew? Also, what is the 'Rooe' you speak of? We need culinary conversion unit here !! (Lima Oscar Lima). Great oven tech set up. Kind regards.
