    I am Taiwanese. I wanna say I had never had sandy clams until I moved to the US 😂. I think the key is to put living clams in salt water for a while (maybe 1 hour) before you cook them. That's how everybody does in Taiwan. It helps the clam spit out sands. I don't think you can buy living clams in the US (unless in an Asian grocery store) and that's probably why they're always sandy.

      you can buy them live but they are sitting in shaved ice, not in water

      Clams are normally sold fresh and live here, dead clams arent sold unless they are frozen normally

    These are the kinds of videos which made me fall in love with Strictly Dumpling and this channel. Those expensive buffets are nice and all but realistically most of us cannot afford them/aren't willing to spend that kind of money on food. Night markets lets us see new foods and experience some of the culture of the countries. I love these!

      @@teeleaf19 My real issue with the expensive videos is less about the feasibility (I know I'm never going to MOST of these places regardless of price) and more about how samey they get. I mean; crab, lobster, caviar and wagyu beef, how many times can you record the same food prepared essentially in the same way a hundred times and expect the video to feel fun to watch? I do get that Mikey is in a different stage of his life now but I think it's more videos like this we need on the main channel and not the other way around.

    If you make it to Taichung, go to the Hanxi 旱溪night market. It's where the locals go. The absolute MUST when you go is 發哥炭烤,a stall that grills oysters, clams, fish over charcoal fire. The whole fish there is AMAZING! and of course the oysters and clams are great too, and the price is super affordable.

      I watch his videos while I eat my less interesting food that I cook. I can't afford to travel nor eat in restaurants, so I go to the feira, cook with locally grown food, hit or miss with recipes, and eat with pleasure in good Mikey company. The best seasoning is hunger and Mikey narrations!

    Just rewatched all Mike’s Taiwanese videos and realized that he didn’t have fried stinky tofu (taiwanese national snack) even once! As a Taiwanese I have to say there are plenty of other Taiwanese unique food and snacks and I wish to see Mike tastes some of them👍

      Stinky tofu is originally from China though so it's definitely not unique to Taiwan. There are plenty of unique Taiwanese dishes but that definitely is not one of them

      @@hc434 it’s true that other places in China also serve stinky tofu, but to be Taiwanese fried stinky tofu it must be accompanied by Taiwanese sauerkraut (高麗泡菜). Together with the sweet and spicy red sauce it neutralizes the ammonia aroma coming from the stinky tofu! Boy I really miss the stinky tofu 🫢😷😋🤤

      Mike’s had stinky tofu before and he didn’t care for it. He felt it was just like regular fried tofu and didn’t feel like the stinkiness added anything 😂

      @@joekatkkjj I believed he had stewed stinky tofu instead of fried ones in shilin night market. You can tell people who took him there knew it’s a lot stinkier then the fried stinky tofu and he would not like it! The fried stinky tofu with Taiwanese sauerkraut is a lot milder than the stewed ones!

    How is it that Mike can always find awesome food places that no one else has talked about before?? I mean I live here, and even I didn't know about that awesome hotpot place. I get the same feeling when he visits other countries. For example, I've been to Italy 2 times and still didn't know about most of the restaurants Mike recommended. This is why Mike's video is so worth watching.

    The reason the clams don't have sand in them is because they've never seen sand in their life. Most if not all of the fish and shellfish you get from these places are from places that farm them in confined areas. It's a thing all across East Asia.

    I live in Florida and rarely encounter a sandy bivalve (think thats what they all are called) because we purge them. I usually only eat them if they are live at purchase or maybe in a restaurant that serves raw oysters as those must be live before prep. That does mean its a rare thing to eat for me as live are expensive. However there is also a way to grow clams and bivalves where they never encounter sand and therefore do not need purging

    That’s not two kinds of tofu in hotpot. The darker one is pigs’ blood, very common in Taiwanese hotpot

    There is some weird food chemistry thing that goes on with freshly fried chicken. Same goes for breaded mushrooms, the heat from being cooked will only escape a fresh piece of fried chicken when you bite into it. You can leave it sit there for ten or more minutes and the first bite will always scorch the inside of your mouth if your not careful .

      It is custard apple but has been cross bred with pineapple so it’s not the round ones but rather pineapple shaped and the inside isn’t individually seeded.

    Sweet potato puffs ... what does the pressing down with the colander looking lid do? Seems it would smash them, but they come out looking perfect.

      I don’t think the lid comes down far enough that it would smoosh the puffs. It’s just enough to submerge them in the oil to cook them evenly.

    It really bothers me that all these TH-camrs - Mikey no exception - when eating hotpot they empty the whole plate, dump every single slice of meat in the broth like they're boiling soup. That's NOT how you do hotpot, people!! One slice at a time, keep the water temperature high, let the meat swim a little and just cooked!!
