We used to catch good size sea bass all the time here out of cape Canaveral, but they aren’t common anymore. I miss them terribly, and they are definitely hard to beat on flavor and texture.

Hands down my favorite fish. Sweet and savory flakey white non fishy tasting fish. They are great cooked whole in multiple different styles. Maybe do some long form cook videos with different methods.

Had black sea bass for the first time this year in North Carolina. I grilled it and it was the bomb. Was fantastic. I’d put it up there in my top 5 fish.

I agree. I've caught lots and lots... mostly 3X bigger, but that's the Pacific North West... No Lobster. No Blue Crab. But! We've got Dungeness Crabs... They're not as sweet as the Blues, but they're larger. (A poor trade-off, IMHO)
A small Pacific Oyster is an extra large on the East Coast, but they're bitter. (It's their diet. A different algea)
