150g Shortening

Damned hard to find marrowfat peas in Australia. Love me a good pie floater.
There is a recipe on here - the only alternative way to make mushy peas if you do not have marrowfat. Using green split peas and they are very acceptable - not the same as marrowfat. But hey anything that is really close. Thank you. Best, Rik

I like the way you tell people how to dice the onion and other things. I don't teach much any more but when I did, I told my staff the same thing. You do a lot of things the way I do.

I haven’t seen a proper floater in decades here in Australia. Back in the 70’s they were a popular and common pub meal though I always thought they turned the pie over to hide the fact that it wasn’t really fresh and had been reheated. They were often served under a pile of chip’s swimming in gravy. Nowadays you never see them anywhere. Those pies looked superb, I want one now and I’ve got the can of mushy peas to go on it too! Cheers mate, I’m off to the supermarket; with any luck I’ll have these cooked before the wife wakes up and puts in her order for tea. Ps. How hard was it to get Vegemite in Thailand? PPS, ketchup is known as tomato sauce (dead horse; rhyming slang) in Australia. Ppps. Have you tried my recipe yet?

Interestingly, I have been in Australia almost 60 years; have spent time in all states, and have never seen a proper meat and potato pie. “Meat and potato pies” are generally shepherds pies.

I HATE egg wash becuase I can always taste this stale egg flavor that definitely takes away from the pastry/pie crust flavor after it is baked. So I am happy you did the milk wash. Vegemite is also salty, years ago I would put a tablespoon in boiling water in a mug, yum. Poor mans soup😂 Now Vegemite costs over $5 for a small jar. But I have to have it for toast etc. BTW, I'm a smearer, not too thick 😂👍🇦🇺

Wow Rik that looks really good , my problem is finding dried morrowfat peas in the states. Amazon has them but you need to rob a bank to pay for them. Do you think extra thick split pea soup would work as a substitute for mushy peas? Regards

I'd like to know the make of the knife too. I think Rik mentioned it once. I can't remember.
Hi, Mate. For onions, I use very cheap, thin-bladed knives. The make is by a company called Penguin. Not a quality, expensive one. After years of cooking, I find the thin blade cut through the onions and release. The expensive chef knives, the onions cling to the knife. Now, it doesn't matter if you are only cutting slicing one onion; however, if you are slicing 70 kilos quick, the thin bladed cheap knives are better.
The prisoners did well with these pies, they used their time down under well.😊

pleased to hear you say be careful, you don’t want to scratch the pan. I get so annoyed when you see chefs like Jamie Oliver , James Martin et Al, using non stick pans and scratching the hell out off them with metal utensils. Even copper pans, tin lined, no difference, let’s just scratch them to bits. They either have no sense or too much money. And how often do you see them and the pans all look new. Does my head in.
