I HATE egg wash becuase I can always taste this stale egg flavor that definitely takes away from the pastry/pie crust flavor after it is baked. So I am happy you did the milk wash. Oh and NO NO NO ketchup!! Yikes
OMG! These are superb! Bought 4 of the smaller tins, which are plenty big enough for us. The ingredients, as shown, made 5 pies in total. They are brilliant pies! Well impressed 👏 👌
I like the way you tell people how to dice the onion and other things. I don't teach much any more but when I did, I told my staff the same thing. You do a lot of things the way I do.

Wow Rik that looks really good , my problem is finding dried morrowfat peas in the states. Amazon has them but you need to rob a bank to pay for them. Do you think extra thick split pea soup would work as a substitute for mushy peas? Regards

Pies look great… but I have a question about the oven I’ve seen your review and it’s the best one I’ve seen. If you wanted to use it as a regular oven would you use it on the toast setting and alter the time and temp as required?
Hi, Mate. For onions, I use very cheap, thin-bladed knives. The make is by a company called Penguin. Not a quality, expensive one. After years of cooking, I find the thin blade cut through the onions and release. The expensive chef knives, the onions cling to the knife. Now, it doesn't matter if you are only cutting slicing one onion; however, if you are slicing 70 kilos quick, the thin bladed cheap knives are better.
Vegemite is also salty, years ago I would put a tablespoon in boiling water in a mug, yum. Poor mans soup😂 Now Vegemite costs over $5 for a small jar. But I have to have it for toast etc. BTW, I'm a smearer, not too thick 😂👍🇦🇺
Interestingly, I have been in Australia almost 60 years; have spent time in all states, and have never seen a proper meat and potato pie. “Meat and potato pies” are generally shepherds pies.
Lol! I always thought that slicing that onion sideways was time-consuming and dangerous I've always cut my onion dice just like how you do. Now in Australia did they ever make this with kangaroo?

I get so annoyed when you see chefs like Jamie Oliver , James Martin et Al, using non stick pans and scratching the hell out off them with metal utensils. Even copper pans, tin lined, no difference, let’s just scratch them to bits. They either have no sense or too much money. And how often do you see them and the pans all look new. Does my head in.
