    I have searched and seen a lot of videos about pandesal or ube pandesal and yours is the best! You guys are so THOROUGH not only giving the recipes but also the techniques and other tips and details that are so helpful to those like me who are not really familiar with baking. I also admire your tandem as you both know how to talk to your audience and to yourselves as well. You guys speak eloquently, give directions straight to the point and still maintain a little bit of humor which is very important so as not to make your videos boring... kudos to you both! Know that I’m a fan of your cooking show and would like to see more of your videos... keep it up guys! 👍🏼 new subscriber here...

      Oh okay. I hear you... there is a shortage of ube here in NYC also. But we've tested this dough recipe without ube, and it's definitely just as good without the ube and cheese for just plain pandesal :)

    After making ube pandesal like a dozen times and never get the right softness made me wonder what could really be the problem. I followed the videos to the dot. And found cooking with kurt's technique and thought why not try it. And I'm so glad i did. Finally a happy inexperienced baker here. Thanks very much for your videos. (No pics as i still have to improve on my cupping method 😂)

      Same here still need to improve the cupping method too and make it softer. I just got my hamilton beach stand mixer.

    Thank you so much for this pandesal recipe. It was a huge success! My husband and his sister loved it. However, since the Scots like their bread savoury I filled the pandesal pieces with chicken adobo flakes instead, and it worked! So again, thank you sooooo much!

    I love ube and pandesal! The best of both worlds. So intrigued by this recipe and always wanted to try it but 4 hours proofing is discouraging a bit haha but I bake a lot of cakes, and French macs. I’m sure I’ll make it sometime in the next month.     Mas madali gawin tong recipe nyo, kasi di nakaka pagod mag masa. Mad mabilis maging smooth at elastic yung dough. Maganda talaga kayo mag paliwanag, napaka detalyado pa. Salamat sa recipe nyo.

      @@cookingwithkurt Hi Kurt, I tried it yesterday and followed everything whats in your recipe then it turned out good except 2 things: the cheese I put in is not enough for the dough and the dough since I was using the breadmaker machine was soo soft so I just added like 3/4 cups of flour more...I will try again and I will use velveeta quick melt.       Bread flour has a slightly higher protein content, so it will absorb a little more liquid. So bread flour will result in pandesal buns with a slightly tighter crumb and slightly higher rise / will hold its shape more, but the overall texture will still be good.
      If you notice that the dough is a little too dry or stiff for your liking (depending on brand of bread flour you use) as you're kneading it, feel free to sprinkle a little additional water to the dough. But I don't think it will be necessary, since this recipe's liquid: flour ratio is already pretty high. Hope this helps! :)

    I agree with Pink Garnet. My daughter and I are in a conquest for finding a perfect recipe for this ube pandesal recipe. We will definitely try this recipe and will update my post after!
    On another note, if you can find the perfect recipe for Dulcinea's churros con chocolate, I would appreciate it very much! It's my most favorite snack/dessert back home. I've found recipes for churros but I am afraid that it won't be as soft and airy as the dulcinea's version of it. Please please please :-)

    Kurt, does it make a difference if I substitute your all purpose flour for bread flour? Some recipe also use half all purpose flour, and half bread flour? I like your recipe too. I succeeded making plain pandesal with someone recipe using ONLY bread flour and tanzhong flour mixture. It's great buft never add the ube. I love your technique. The bread preparation at night is like adding tanzhong flour mixture.

      Hi Elle! You can use a bread starter for ensaymada if you'd like, but I personally don't think it's necessary. The flavor profile using a bread starter works for a slightly more savory bread like pandesal. Whereas ensaymada tends to be on the sweeter side.
      That said, you may make any changes you like, any adjustments you see fit to make this dish more enjoyable for you. Hope this helps! :)

      Hi Jennie - this pandesal recipe works best if it's prepped and baked the same day. You can freeze the baked pandesal in an airtight container, and it will reheat well in the oven.
      That said, if you prefer freezing it before baking (once you've shaped the pandesal buns), I'd suggest freezing them on a baking sheet. Once they are frozen, transfer them to an airtight container - they will keep for up to 1 month. When thawing them, transfer them onto a greased baking sheet, cover with plastic wrap, and thaw in the fridge overnight. Then let them proof rise at room temperature like in video until they're puffy and almost doubled in size. In the video the last proof was for 2 hours. But it might take a longer with frozen bread - and might not become as big. Then bake as directed in video. Hope this helps! :)

This recipe can be made vegan by using almond milk (or just water) instead of cow's milk, leaving out the cheese filling (or using a vegan semi-hard cheese), and substituting eggs with flaxseeds (1 egg = 1 tbsp ground flaxseeds mixed in 3 tbsp of hot water till it makes a paste).       Hi Jhaz - ube powder is more a substitute for ube halaya, if ube halaya is not available. You should reconstitute the ube powder in hot water (per packet instructions), making a paste, and adding 1/4 cup of that reconstituted ube paste to the wet ingredients just like the ube halaya.
      In my experience, ube extract is the only thing that creates that strong ube flavor, without affecting the fluffy texture of pandesal. Adding too much ube halaya (or reconstituted ube powder) makes the bread very dense and heavy.

    Kurt, can i use Ube Powder in the absence of ube extract?

      Ube powder is more a substitute for ube halaya, if ube halaya is not available. You should reconstitute the ube powder in hot water (per packet instructions), making a paste, and adding 1/4 cup of that reconstituted ube paste to the wet ingredients just like the ube halaya.
      In my experience, ube extract is the only thing that creates that strong ube flavor, without affecting the fluffy texture of pandesal. Adding too much ube halaya (or reconstituted ube powder) makes the bread very dense and heavy.

      To be honest I am out of ube extract and wondering if I can use Ube Powder plus ube halaya instead of ube extract in a cake and pandesal?

      The first time i made it, it was fail coz I don’t have much time 😂 decided to try it the next day since its my off and just finished baking now. I made the plain pandesal and it was soooo good!! 😍 my housemates liked it. Thank you so much for your recipe. I will be trying the ube cheese pandesal next time. Your recipe’s are always my go to recipe whenever i want to bake something. Please continue sharing 🤗

    Hi Kurt, can the bread starter still be used after 24 hours in room temp sealed container?
