    I've been meaning to get back here and comment. I'm not much of a cook. I'm the family griller and chicken has always had mixed and inconsistent success. However, I tried your technique and used your Jo Jo Rub that I scraped together with what I had laying around in the house. Near the end of grilling, some friends dropped by unexpectedly. I put out the chicken wings and never in my whole life did I receive such compliments on food I prepared. Great success! Thank you!!!

    I’ve watched a lot of chicken wing videos, trying to find one I’d like to try. Not only was your entertaining, but I liked your message. Today I’ll try doing wings on a Weber gas grill using your method. I’ve baked, oil fried, and air fried wings, but never grilled. Keep up the good work and God Bless America💙🇺🇸❤️.

    I followed this recipe (except I used the two side baskets). Used the JoJo Rub and some hickory chunks for smoke and the wings came out awesome! Thanks for sharing your knowledge!

    I have a tiny (as in I bring to beach and tailgates) Weber kettle that I use often. But also cook wings on my Weber gas grill. When I cook them on the gas grill, I put all three zones on high. I fill up a little metal box with hickory wood chips and place on the back burner. After 5 to 10 minutes the chips start barely smoking, I then turn the front 2 burners on low/med-low. I let those cool while the chips get really smoking, 10 minutes or so. I then cook my wings on the front 2 zones. They come out great...

    That flap of skin you called the cape (not the wing bone) that you took off is my absolute favorite part. When it’s cooked right, it crisps up and really makes the wing even crispier.

    Great video! professional and well done. Presenter is very pleasant, entertaining, informative, and easy to understand. Friday we have Gng of friends coming over to watch Cardinals Baseball on TV and part of the menu will be these wings marinated in JOJo rub. I for one prefer to cut the tip and the extra skin off and save them to make broth or to make a rich chicken stew with the collagen in the wing tips and skin. Thanks for the vid!

    I leave the tip on the flat and cut the drum into 2 pieces. There is deliciousness on that tip. I also don’t cut any skin off, also deliciousness

    I've never tried cooking the wings like this but they turned out SO GOOD! My kids couldn't get enough and barely left any for me, lol! I thought the JoJo rub was a great addition to the wings and YES, they were really crispy....thx for the vid!!!

    Me too, I cut the tips and flap off too. I don't put any spices on before cooking though. I like to start them plain and then add a few spices after they've been flipped once. Add a little more after the second flip. If you put the spice on too early it will turn black and taste burnt.

    Holy cow...er chicken! I tried the rub and the technique and I don’t think I want to make them any other way! I was totally skeptic that it would mimic frying but it was spot on. For a little extra crispiness I finished them over the hot coals and I was in wing heaven! Thank you very much for this video! ❤️

      Red Meat Lover I also had to mention I love that you present this with a little humor in your video. I do have one (possibly stupid) question. If I use the rub on bigger cuts of chicken (legs, thighs), will the skin turn out just as crispy as the wings did?

      Hey Tony, not sure about legs...haven't tried. However, we don't believe it would work on thighs as that is a much thicker skin than the wings and there's more fat below the skin as well. We just recorded a skinless chicken thigh recipe and will release it soon. We used the same JoJo Rub and a lot more direct heat, they turned out great and we can't wait to share!

      I just wanted to say that I just found out if you double the JoJo rub recipe, it fills up an empty 8 ounce bottle of seasoning salt! Now I have some JoJo in the hole! Lol

    Great video, love the channel. I personally like to leave them whole, the tip makes for a crunchy treat if you put the work in. They are the lobster legs of chicken wings, not much meat but what’s there is worth chewing for!

    While I get tossing the wing tips as there's not much on there to actually eat you should save those little bits and bobs. Stick them in a freezer bag along with the bones from your finished wings and into the freezer they go. When you have enough, you make stock / broth from them.

      Yeah, those tiny flaps of skin actually help in the crispiness. My wife and I LOV chicken skin. That's where all the flavor is. But, if someone eats a LOT of chicken, it makes sense to cut off the "skin fat" to avoid higher cholesterol. Yeah ... it does raise it, especially for people who eat a LOT of chicken.

    All those little nubs and flaps.. Have the best flavors when they crisped up..jeez.. Breaks my heart to see the best parts cut out.. I'm born and raised in Buffalo... So I'm pretty up on the wings lol

    Im using gas grill (char grill tru infrared) what temp and time should i be cooking this bad boys? thanks for your time!

      Are you using Bistro / kettle or cabinet? I've neither used either for this but should be able go 350ish with wings over indirect heat. Ideal temp can depend as every grill has it's heating / retention differences so just experiment and rotate wings to avoid burn in hot zones. Let us know how they turn out!

      throw some wood pellets in that infrared grill if it's the one that has the trays with tiny holes in them. Adds nice Smokey flavor.

    Great technique you used i actually do the same thing but i wished you would have used another set of tongs to flip your chicken after the first usage because there is still bacteria on them. Maybe you did but i think it's important to do so or talk about it because there are a lot of inexperienced grillers out there and they need to know about how to deal with chicken because they do carry plenty of bacteria. But other than that great job!

      Thx for the great comment, good point....agree, proper food handling is absolutely necessary. We did clean them but not clear in vid...will try to incorporate more food handling tips in future vids!

      Great question! Use the grates at the bottom and top of the pit to control air-flow. The more air, the hotter the fire and vice-versa

    a strong thumbs up, and the wings were good... but not quite a replacement for fried... similar with baked wings, slow cooked, etc... the best i've had/made is hot fat fry... i will continue to practice with the techniques you shared, and grilling has some obvious benefits... my critique is that grilling is too dry- and i equally critique fried wings that are greasy... i've tried your technique with your blend, straight s&p, lemon pepper, bbq sauce glaze, frank's glaze, a little more time, a little less time... pre-baking or slow cooker + grill comes to my mind as a middle ground solution... too much dry heat and a long time on the grill leaves the skin dry, not crispy
