    the more i watch this video, the more I want to be a chuck wagon cook. i cooked for firemen for 28 years. its time to be a cowboy

    It’s amazing to see a video in 2020 on TH-cam of my old man and his wagon. Thank you for bringing back all the memories of being under that fly. He and that wagon went to lots of places together. Going with him to the LX and to the chuckwagon cook off in Amarillo was some of the best times of my life.

    This is a beautiful video. The cook might have done that a few times. Great star of the piece, the 1882 cookstove -- I grew up with a cast iron cookstove, and there is nothing like th heat and comfort those stoves throw out. Thank you.

      Good eye! Lighting was a bit sketchy before sunrise and under the fly. Ev3n worse when the lantern went out! ha!

    You did a good job putting this together. I really appreciate the lack of dialog that shows that these guys know what they're doing without pointless yaking stating the obvious of what's going on.

      As a documentarian, I make it a point to record moments in time and let the events unfold without my own observations and commentary getting in the way. I do not always get to follow "the fly on the wall rule," and sometimes have to prod for details when needed. I am glad you appreciate this approach to documenting contemporary life.

    I did a project in a whole lot of communication sites surrounding this area. Remembered seeing the ranch. This was back in 2012. Took a picture of a mean old mule outside a site in Pampa...loved him....I use it as my picture on TH-cam when I want to be incognito. Outside the town of Muletree I crossed a couple of ranches to get to a remote site. When I got there a herd of black cattle with dark eyes surrounded the site. At one point I stepped out the site and their were at least 50 pairs of eyes focused on me like I was the massiah and was suppose to take them to the promised land. Perhaps I was the first black man they ever saw. There was some serious expectations in their eyes! They probably knew they were meat and not dairy cows. Gained a lot of appreciation for Family Dollar and Subway. I was all over West Texas even into southern OK. ...you learn to look out for tornadoes...this was right after one devastated Moore. Lived through the one that went through Wichita Falls in '79...that was enough for me! You learn to keep your gas tank topped off...just because your GPS said there was a gas station does not mean it's been operational for 50 plus years. At some sites ice would fall off the tower guy wires like javelins. They could land 100 feet away. Opening combination locks when it was cold out was harrowing to say the least. Passed horses out in the fields and felt sorry...nothing should be out there in that weather...but I was out there with them. Took pictures of the gate locks...interesting work of art for sure. This video took me back to my hunting days with my buddies in Arizona. Did not get up quite as early but sure loved cooking for them. Realized I was not there to hunt...still was very successful at it. They never knew what to expect because I loved cooking. I invited some folks over to breakfast once on the north rim of the Grand Canyon while on an archery hunt. They were from Boston and was amazed how snug and efficient our camp was. Those liberal thought they were getting instant coffee..NOT. Fresh ground whole bean. We entertained them for a few days. They were traveling cross country in a Datsun station wagon eating trail mix and food from a can warmed on a sterno....that's was some time in the early 90's. Desert was always a treat...my specialty was Granny Smith apples sauteed in brown sugar, butter and a little lime juice topped with toasted almonds. Nothing like seeing grown men perk up as I produced a can of whipped cream to top it off after four days of hunting. Here's to you Jim and Ernie....see you on the other side one day....I will be in a chuck wagon with clanging cast iron skillets.

    Would love the recipe for the biscuits. The chef uses such a light hand to roll and cut them up. They must of been light and fluffy. Hard to see the finished result or I missed it somehow.
    I know it’s hard work but everyone makes it looks so easy and enjoyable to be a working cowboy. Great videos.

    This was a fantastic video! There was no need for you to explain what you were doing. Every watcher can see it and can understand it. The biscuit making from start to finish was very satisfying. I'm happy to have seen the entire process; even sifting the flour. This was a very educational video. All you have to do is watch.

      Ted and his helper have to get up at 3am each morning to get the stove hot and make all the fixin's from scratch each morning. The ranch hands are served at 5:30 so the cowboys are saddled up and headed out for gathering just after sunrise. On some days, it's tough enough to roll out of the bedrolls that early! ha!

    I have eaten a lot of meals cooked on a wood stove. I clearly remember my mother in the kitchen in high summer frying chicken and making biscuits. I don't know how they stood the heat.

      I once worked in Hattiesburg, Mississippi during the summer of 1973 and ate lunch a half-dozen times at a popular place that was open only for lunch. A black lady had turned an old large 2-story home into an eatery on the ground floor. Customers would line up in the driveway to enter via a side door that opened into the large kitchen that had four gas stoves with ovens cooking and baking meats, pies, and breads while various veggies were either still cooking or staying warm for serving on the range burners on top. Customers served themselves from pots, pans, and skillets sitting on burners turned to low in order to stay warm. We picked up the rolls, cornbread and deserts in a small room before entering the dining areas. There was no AC of any kind and some folks would be sweating before exiting the kitchen. The food was well worth the time spent filling our plates in that hot kitchen. The two black ladies doing all the cooking took it all in stride. We would exit out the front door well fed and wanting to take a nap. Ha!

    All I can say is I'm watching this on a Fri. night about 11:30 pm. and by the time cookie was done I was starving. Good job and a good hot breakfast before the day starts.

      It was a moth flying closer to the camera. I do not recall any birds under the fly at any time all week long and it would be very unusual to see any birds flying around a couple of hours before sunrise with the exception of the Common Nighthawk which I generally see during the cold months. Ted's lanterns are the only lights for miles around!

      Well, sir to tell you the truth, not all cowboys are in fact skinny. As you will notice in the video, the first one to the breakfast buffet is a bit more filled out than the majority of the others. He is not only older but he is also the ranch foreman. He normally is not as physically active as the others because he isn't expected to do the hard work. The younger hands Are generally assigned the most physical duties and work longer in order to prove themselves to make a good hand and help build their character so they will naturally burn more calories. Another aspect is that there are few obese working hands because extra weight in the sadddle causes the horse to work harder (and require more feed) and there is potential to cause injury to the horse. or it tires too quickly before work is done.

      Hanging over a firepit outside of the fly so the hands have access to it while they take care of their morning chores before breakfast is served. They also ate their meals in the mess tent next door to the chuckwagon. I have another video of that tent being put up.

      Yeah, just ask all the old-timers in their 80s and 90s who have been eating meals cooked on and in cast iron cookware almost every day of their lives. It must be pretty healthy! ha!

      Thank you sir! I certainly had no complaints during the two weeks I spent with this outfit. As a matter of fact, it was top notch compared to others during this century and I suspect it was much worse during the 1800s based on stories from cowpokes from the 20s archived in the Southwest Collection.

      You can blame the pandemic for the cancellation of one Spring roundup working wagon and two cook-off events. I began 2020 with at least 7 chuck wagon related trips on my schedule and now only 3 are still a go for now. So hang in there and thank you for your support!

      And you don't see much "baking from scratch" either. When was the last time you bought a sack of flour? At the beginning of the virus lockdown when food stocks, and paper goods, went flying off the grocery store shelves... I noted there was always a good stock of fruits, vegetables, spices, and baking goods while all the boxed, canned, and frozen dinners disappeared and some items are still not in stock on a regular basis. Go figure! Most people don't know why a cook would want to sift flour before mixing.

    Any clue what brand or what you call that Dutch oven/covered skillet is? I have one like it with a 14 on the handle but I don't have a lid for it. Mine has a bump out on the bottom that looks like a flathead screw. I'd appreciate any help because I can't find a thing out about it.

      Apples & oranges or TV chef & Waffle House cook. When Ted is out on a working ranch he usually serves one to two dozen cowboys three squares a day seven days a week. Bunks out by 9-10pm and back up again at 4am. Poodles to Blue Heelers, who works the hardest?

I will keep trying to locate him. I know nothing about his helper at this time.

    These guys don't look like any cowboys I have seen They look like those guys that pay to be on a ranch for a few weeks and have bought they outfits at the local western wear shop at the mall.

      About a half-dozen of the men coming in to eat are full-time employees on the LX Ranch and the rest are "waddies" or day-hands hired to work the two-week Spring roundup. And some of the waddies are hired to practice their skills during roundup so they are in shape to represent the ranch for the Coors Cowboy Working Ranch Rodeo held in Amarillo the first full weekend in June each year. All of them are truly working cowboys from the Texas Panhandle I can vouch for that!

      Yes sir sad times are amongst us old hands, most of these youngsters I tell them there's more to being a cowboy! They look the part and that's it!! I remember working for different cattle outfits in south texas 10 dollar a day in the 70's! Mr.Please keep memories alive!!! God bless sir!!!🙏🙏
