No. When you grill or smoke, you don't set the temp to 155/165. You set it to 270-350. Otherwise it would take days to heat up the meat, making it very dry.
Why 250°? That's too hot too fast. You only need to bring it up to 150°-165° and it's slow and gradual. Either the first cook was too hot or you cooked it even further in the reheating process causing it too shred.
Used to tailgate at the Seahawks games with a guy who would reheat smoked meats like this. It’s a great way to get that smoke flavor when you don’t have time to wait 13 hrs for a brisket to smoke. I’m with you, it’s good stuff and I wouldn’t pass on this.
Seems like a waste of wood/pellets just to reheat - should have just used an actual sous vide machine. Also, I use a good granton knife to slice my briskets. Serrated knifes do the opposite and tend to shred the meat up worse.
I actually wanna pick a fight with the whole "serated knives are better to get nice clean cut" instead of the dry reheated meat like the rest of the comments
That smoke ring is bodacious, but it does look a little dry, my guy. I realize this is basically leftovers, and I'd still eat it, but when people watch brisket videos they want a squirter.
