Robert Muldoon actually kills the T-Rex with a rocket launcher in the book i think and they only have rocket launchers because for some reason those where the only weapons InGen allowed on the island
The main reason they had rocket launchers is because of how the nervous system and the overall toughness of the dinosaurs made things like Shotguns barely capable of doing much to the mid-range dinos. They also used like a bazooka tranq gun. Also Ingen didn't let him have the rocket launcher, Hammond did when muldoon said "screw this I'm quitting unless you give me better weapons."
The adult t-rex dies by the end of the novel. It's never stated how, but given that Muldoon Tranq'ed it underneath an active waterfall it's probable it drowned to death.
