You need to remove all paint from inside of brake drum. It needs to be raw metal to engage with brake shoes. Spoke tension needs to be adjusted after sitting and rusting for so long. Your wheels may not be “true”. They can be not perfectly round or have side deflection. I do enjoy your vids, this one seems to focus on looks, not integrity of the wheel. That should come first.
AMI graduate, here. First tip: if ya have a bench-mounted wire wheel, it can also be used to strip paint off. Hubs, gas tanks, whatever. Second: throw those junk spokes away. New ones are gonna be sold as a complete set anyway. Third: If the spoke nuts are rusted in, soak the bejeebers out of 'em with WD40 for a day or two. Fourth: paint the hub before assembly, DUH! You'd have saved yourself a shitload of time and aggro by doing that. Okay, that said: lookin' good.
I was nervous at first when i seen you grab the gold spray paint but in the end i think it turned out really well. Thanks for making great content keep it up.
One suggestion on grinding the weld on the spoke. Get a small sanding disk around 80 grit on a 90 deg die grinder and make the sanding marks go lenthwise with the spoke. You can make the weld disappear and it will be less likely to break.

Getting a new cross-hatch on the cylinder through a hone is the least you will want to do. It'll remove any scratches or scrapes or surface rust. BUT sometimes if the cylinder is really out of shape, then they need to take more material off with a bore - requiring the next size piston and its respective rings. You also won't know what size rings to buy without having the piston in your hands, the markings STD, 020, or 040 being on the top to signify bore size.

Have you ever heard of tensile Strength of metal, also tempering of metal which involves heating up a metal and cooling it in a specific ratio to give the metal certain properties,,, ie strong, hard, but brittle or soft but malleable etc, there are good reasons that one doesn't mig weld a spoke.....
Oh god plz... When you true the rim it will not get straight with those spokes... Really. Plz plz plz. Those can snap off anytime when you start riding it... And new spokes really don't cost that much

Why don't you just buy a new set of spokes? It's stupid to try to save all the rusty spokes. Would be best if you take apart the wheels buy new spokes. Get the hubs and rims to a sandblaster and get a powdercoat on. Wont cost much...
They did fit! I am just going to keep them as a spare set, I was able to find a kit on eBay with front and back and springs for cheap so I had to jump on it! I am super excited to get the seat though!

Wait a sec mate, do not weld the spokes. You will have a wreck as they will break. Buy a new set, if just plain they are still better than what you've just done. Trust me a failed wheel from spokes snapping at any speed is not a good look (and it'll hurt like hell). You can paint the new plain spokes black the same as the hub which would look good.
The only reason everything is so easy like tires off and especially wait til putting on if you do modern street tires on big bikes you ain’t doing it EASY no way

Did I just see you paint the inside of your brake drum you need to get that out. What you have done is the same as painting a brake dusk (rotor).
1 more thing, you can actually put some straws to cover the spokes rather than taping them 1 by 1
