    Butter Fudge (from: Bluebird Homestead)
    8 oz. - 2 sticks butter
    17 oz. (2 cups plus 2 Tablespoons) evaporated milk
    16 oz. light corn syrup
    6 cups sugar
    Butter 9x13 pan well. Cook to 244° at sea level (adjust for high altitude). Beat 15 minutes. Smooth into pan, score before cool.

      Did you put vanilla in the butter fudge ? My mom used to make it similar to the butter fudge but she put vanilla in it and since it wasn't chocolate we called it vanilla fudge. 😂 It looked exactly like the fudge you made.

      I went through all the recipes and the peanut butter fudge is not the same as either of the TWO recipes in the link! I went to the search bar and it didn't come up there either. I wanted to know the sizes of the peanut butter jar and the vanilla icing. I couldn't see the ounces on the labels. I know I made the recipe a couple years ago, from another of your videos

    My sister and I made this( 5 lbs. at a time) by hand to sell for our Christmas money. We called it Christmas Fudge. This was in the 1960s

    Butter fudge is old school; that is what my Grandma made (only difference is she used 2 cups evaporated + 2 tbls. half and half.) It is THE best fudge ever!!!! It is even better if you can find a high fat butter like Vital Farms or Kerry Gold. Everyone should try this recipe, it is the bomb!!!!

      I usually make this recipe as it was what my mom and grandmother made as well. Makes the best fudge. We would add coco and vanilla
      Be willing to bet using kerigold Irish butter much more rich and yummy

    Golden Syrup comes from sugar cane so is a deep rich amber colour so our fudge is usually much darker than this. We don’t really use corn syrup in cooking here, but Golden Syrup is more of a store cupboard essential. It’s a delicacy in Devon and Cornwall and often contains clotted cream for additional richness.

      Golden syrup is not from corn at all! It is made with inverted sugar which comes from sugar cane and lemon if you need to make at home

      What exactly is clotted cream? I've heard of it and seen it on a menu and have gotten everything from sour cream to whipped cream.

      @@liz6733 my grandmother used to make her own, from what I remember she used to heat the cream (she had this thing in her kitchen which looked like a small stove with a hole in the top to set a metal bowl into. It was sort of built into the wall) very gently and slowly. It would eventually form a light crust on the top and the cream underneath was wonderful.
      I seem to remember (this was over 60 years ago!) it was quite a long job but that may just be a child's perception of time. It not only made wonderful cream but it used to keep longer as well. My gran always used to put a dollop of cream in her Cornish pasties 😊.

    It's interesting how everyone does things differently. I noticed you opened the evaporated milk with a can opener and my mom and grandma and now myself have always used bottle/can opener that pokes a hole in it and then of course you have to do that on both sides of the can for the flow. I have to say again how much I AM LOVING these quick and easy recipe videos! I am excited to try this butter fudge! My friends call me the Queen of Fudge. LOL I've made all kinds and flavors, but I have never heard of Butter Fudge!

    I just made a 3 ingredient pb fudge that was literally 3 min and minimal mixing. To say it was the easiest and tastiest, it's an understatement. I'll try yours, though, tawra because 2 ingredients. 😊

    OMG. If I didn't know better, I would think you got that 9x13 right out of my cupboard! I'm 67 yrs old and I got mine from my mom as well! It looks exactly like mine, down to the scratches in the bottom from cutting cake. Thank you for all the recipes you post. I am going to be making several of them for Christmas presents.     I love your recipes... the traditional fudge looks AMAZING... I wonder if you could make a maple pecan/walnut fudge using that basic recipe, but with Maple syrup instead of the corn syrup (or maybe 50/50), and add pecans to it...

    What you need is a offset metal spatula to spread out your candy/ fudge. Also they are great for frosting your cake with frosting.

    I’m enjoying your videos very much. A quick tip… cover the top of the fudge with parchment paper, then use the bottom of a glass or measuring cup to smooth the top out for a finer finish.

    The main difference between corn syrup and golden syrup is in the manufacturing," explains Zeratsky; corn syrup is made from corn starch, while golden syrup is made from sugar. In the U.S., golden syrup is usually sold under the name of light treacle, but it's not readily available in many grocery stores.
    It can be substituted for golden, visa versus.

    For the Bluebird Homestead Butter Fudge recipe, looks like yours came out just fine, but if I'm not mistaken, she said after she took it off the stove and poured it into the stand mixer bowl to let it sit 15 mins and not to touch it until that time had passed, then beat it for an unspecified amount of time and go by the way it looks, as you said, until it starts pulling away from the sides of the bowl, etc. Apparently the recipe is pretty forgiving, lol. My kind of recipe! Thanks for sharing all the cool fudge recipes and Merry Christmas. Making mine now.

    I came across your channel and I have to tell you I’m in love with your channel. My great grandmother used to make this butter fudge when I was growing up and before my mom passed away we tried so hard to get that and her popcorn balls!!     We don't use the syrup either it's a bag of granulated sugar 2.2lbs and we use a tbl spoon of vanilla essence it's a crumbly fudge but very tasty I tried a recipe with clotted cream and it turned sour very soon after making it also don't tell people to use a hand held mixer to thicken I burnt mine out so always use a stand mixer also don't place your silicone into the dishwasher as it absorbs detergent and you will taste it in your food wooden spoons are best 😊😊😊

    The syrup that you using is nothing like golden syrup. It's a glossy dark caramel colour. It's a beautiful flavour.

    The 1st one butter fudge looked just like my grandmas Christmas fudge! She stirred it though they used 3 to 4 people ending with my grandpa as he could stir it at its thickest stage :) 1 of her grandmas was born and raised in Ireland. I wonder if thats where she got it from?

    Corn surup and holden surup look a diffetent colour. Holden syrup IS golden in colour.

    Golden syrup is not the same as corn syrup. The are made from entirely different ingredients.
    Corn syrup is derived from... corn.
    Golden syrup is derived from cane sugar.

    OMG same ingredients and amounts as my grandma's toffee recipe, difference is you boil to hard Crack stage and pour quickly on to a sheet pan and refrigerate several hours or overnight. Next day cover with a piece of wax paper and whack slightly with a table knife handle, anything else will smash the toffee. You only want small pieces that fit your mouth,this will crunch like a Heath candy bar or you can roll it in your mouth till soft and caramel like. Also you can add nuts or coconut right before pouring on to a sheet to cool. SO DELICIOUS. cover top with chocolate after cooled but before cracking into pieces

    If you let your fudge go a little longer on a slightly lower heat, it will get crumbly and be Scottish Tablet, delicious!

      No. It is a derivative of raw treacle, as I understand it. It's much lighter in colour and thinner than treacle. We use it a lot in our baking. It has a lovely light golden colour. Almost like a toffee taste. I don't like the taste of actual treacle.

    Would an electric hand mixer in the pan for 15 minutes work? I do that to make cream puffs. Mine has plastic buttons on the bottom of the beaters to prevent scratching.

      My family has been making potato candy for at least 5 generations! The first generation was from the Appalachian Mountains. You mash a boiled potato and add powdered sugar and mix until it is like dough. Roll it out to 1/4 inch thickness. Spread creamy peanut butter on dough and roll into a log shape. Wrap in parchment paper and freeze. Let thaw for a few minutes before slicing right before serving.

    Actually, corn syrup is made from corn starch, golden syrup is made from sugar. The taste is different, but the function probably is the same. You can buy golden syrup at most markets now.

    That is not golden syrup. Golden syrup here in New Zealand is dark almost like treacle.

    Alot of sugar in that fudge,plus putting syrup 😮
