    May I share a tip I learned from another TH-cam cook? If you tightly wad up your parchment paper then uncrumple it and mostly smooth it flat again not only will it stay put on a flat cookie sheet but it can be shaped to fit different shaped pans too. Especially when you snip the corners as you did. Works for me.

    My grandmother used to make peanut brittle and the minute she just got the baking soda stirred in, she would quickly dump it onto a buttered sheet pan so that the air bubbles are still in the candy. This would cause the brittle to be very light and airy. Making a delicate brittle. The more that you stir the less air bubbles you'll have. Making the brittle harder

      @treeissaved2359 And that, right there, is the wonderful thing about making brittle. Some families, like yours, prefer the lighter air-filled brittle, and some, like ours, prefer the more dense structure. Either way, I am not turning down a piece of homemade brittle, as both are delicious!

    For my turtle candy I use one small pretzel, put one rollo candy on top ,warm in the oven to soften,then place one pecan on top and gently press. Easy to make lots ❤

      After pressing the pecan on top of each warmed Rolo, I lightly sprinkle edible candy decorations from the bottle - sold anywhere there are cake & frosting mixes sold in most stores. I use tiniest nonpareils or crystalized sugar or shapes/designs/colors depending on the holiday! Cute for Fall is to use orange sugar crystals and tiny leaf or squirrel shaped wafer decorations on top of lightly drizzled melted white chocolate over each pecan...can get so creative with these simple chocolate carmel pretzel favorites!! You can put two of each in a holiday mini cupcake paper or foil cup for easier serving...yummy treats!

    The syrup will cease because the nuts are cold. Adding colds nuts rappidly drops the temperature of the syrup. If the nuts are cold, colder than the syrup. The syrup will cease. If you heat your nuts some before adding to the pot the surup wont cool down as much. It will take less time to get the syrup back up to temp. I also use 2 Tablespoons of baking soda. The soda makes the mixture Fulff up and the cany is lightert and easier on your teeth. While still being crisp and cruntchey. I say keep those bubbles dont smash them out.

      Sorry, all, I have the worst auto correct. Also, I am a little slow when it comes to spelling. I just never have been good at spelling. I try to do my best. The worst part is that most of the time, I do not know if I spelled something wrong. I try to use the speech to text option. But as you can see, that does not always help.

    I used your fudge recipe and put Kit Kats on the bottom of the pan, poured the fudge over and topped with crumbled Kit Kats. Yum!! My hubby isn’t a fudge fan…but loved it!

      My Grandparents and parents are gone, I wish I had my Mom to teach me but I would LOVE to have had the opportunity to take my 6 year old daughter into the kitchen and her, My Mom and Myself cook together.
      She didn't leave recipes, she created them and sadly I'll never have her secrets.

      It's so nice to hear stories about other people's Grandmothers , I never got to meet mine on my Mom's side she dead very young at 52 yrs old. Unfortunately, I wasn't even born yet but, My Mom had pics of her n had many recipes of hers in fact ,I make her Thanksgiving dressing every year n tell my own kids who are adults this was ur great grammas recipe n they just love her dressing ...My adult kids have made it for yrs now also n two of my boys taught their wives the recipe . I didn't get to know her but , her recipes n her name live on in loving memories ❤️ ❤️❤️🙏

    When I make peanut brittle, I always add vanilla to it before I lay it out like half a teaspoon that I learned to make it everything else about the same😊❤

    My mom always put those LaChoi fried noodles into her haystacks, added a bit of salt and crunch to the flavor. Also stretches the recipe so you can make more, which was needed with 4 kids haha!

    Back in the 70’s, I made a lot of peanut brittle using raw peanuts and a candy thermometer. It seemed to take forever but was delicious. Fast forward to 2015, my kids admitted they didn’t like peanut brittle. So I started making it in the microwave with roasted peanuts. A lot less work and tastes just as good.

    I think if you had added some coconut oil, veg oil, or butter you probably would've gotten the right consistency to make the red swirls in your bark.

    I have my granny's peanut brittle recipe as well. she only used a cup of ice water to test temp. BUT it worked for her. I use thermometer lol. My grandfather used to call it peanut BRUTAL

    You have the loveliest skin - smooth, clear and fair, flawless! I have to say, I've never seen peanut brittle with so many peanuts. What we always had was about 50% ratio (or less) of peanuts to candy. Mom always said to only stir one way because if you went both ways, you could 'unstir' the recipe. 😃 I love how we all learned to do things differently but that the end result was always delicious. Thank you for this video!

    I like to make 'instant' peanut brittle. Melt a package of Turbinado sugar in the raw in a frying pan, then add peanuts, or raw walnuts, stir and dump out on wax paper cool and break to pieces. You can do this in the microwave too, but it cools so quickly that its difficult to break it into smaller pieces. I gave out one of my Grandmothers recipes in xmas cards this year. It was fun, all the memories, she also taught me how to make real fudge. She always had a batch waiting for me when i visited. Oh, she taught me how to make flakey pie crust too. 😍

    Never seen haystack candy with coconut. Here, it's made with crunchy chow mien noodles and butterscotch chips. Guess I'll have to make both ways this year. Oh the horror!😂

      I was also surprised to see that using chocolate & shredded coconut is also called haystacks.
      I bet it would be great to combine both the coconut, the chow mien noodles & then your choice of chocolate chips or butterscotch chips

    If you cooked the first ingredients until when you stir it, lift the spoon dripping in the pot, it will stream a string about 18 inches long then add the raw peanuts and cook until golden brown. Add baking soda butter and vanilla. Stir and spread on a buttered cookie sheet.

    You forgot the Vanilla in the toffee ! My boys won't eat toffee without pecans and vanilla. I also put hazelnuts in my food processor and add hazelnut powder on my toffee as well.

    I’m just seeing your videos and plan to watch more. Your Grandma’s recipe box is exactly like mine! I asked my mother for it after my Grandmother passed and also have many of Mom’s handwritten ones. Keeping them is a great way to keep your memories in your heart.❤️

    HOW am I just now finding your channel? Im so excited. My Mom died a couple years ago, she was the magician in the kitchen, and these are the kinds of things she would make, and I had no one to show me how.     I just used this Peanut Brittle recipe today. I live in the UK and I've been craving this since last year. This was my first attempt at making peanut brittle and your recipe was/is AMAZING!!!! My 20yr old son who hates everything...loved this and asked for more. So you know it's good. Thankyou so much for this recipe. I put salted peanuts in as couldn't get any other ones, used 1 TSP of salt instead and put the peanuts in at 240F. Then I kept stirring until it was 290F. Perfect!!! The brittle doesn't stick to my teeth and is the perfect crack. Doesn't pull my fillings out of my teeth. Absolutely brilliant recipe, so thankyou xxx

    I make white chocolate cherry rum walnut fudge, similar but uses bock white chocolate, 20 or 24 ounces. Men love it. Even if you can microwave it, I cook on stovetop.

    I make an absolutely delicious, crunchy and light peanut brittle in 14 minutes in the microwave.¹ No candy thermometer needed. Looks and sounds (crunch factor) just like yours. It is so easy and fast that in about the same amount of time (assuming you have 2 8 cup Pyrex measuring cups and 2 silpats) 3 batches could be made and you could keep one complete batch for yourselves and not short the batch you were sending to your mother. LOL. It's also a very versatile recipe. You can vary the nuts and/or the extracts, use mixed nuts or even add additional ingredients (if reducing the amount of nut ingredients proportionally) by stirring in with or just after the baking soda and working quickly. Some nuts do cook or brown more quickly than others and may need to be added at different times. Because the microwave makes the brittles so much faster I haven't found this to really be a problem but there are so many nuts available it might depend on those you use. Softer nuts like walnuts, pecans, those round Hawaiian nuts and seeds like sunflower would definitely need less cook time in the syrup. Have fun with it. I even added ¼-⅜" wide coconut strips seconds before the baking soda. It was a great addition. While the syrup is still very hot, remember that when using the microwave method you are not adding external heat once your Pyrex is withdrawn from the oven.
    My recipe calls for the same ingredients minus the water. I suppose the water is to prevent the sugars from burning. With all of that stovetop boiling to reach temperature the water must provide the required extra moisture that allows the cooking process to reach the needed temperature.
    Microwave peanut brittle recipes can be found online. Since you use your microwave in several of your other candy recipes you might like to try it for your peanut brittle at least once.
    ¹(using a 1000-1200 watt oven. If 1200 watt decrease cooking time by 1 minute after adding nuts).
