This man has never cooked in a professional kitchen. He's a smart guy but a lot of his anecdotes are egotistical nonsense. Take for example his video on deep frying or seasoning the cutting board. He tries to appear as an authority on knowledge but hes faaaaaaar from that.

Being born and raised in the early 1950s in a large industrial city in the north of England, shepherd's pie was always a 'Monday' dish, made only when there was leftover lamb from the Sunday roast. Similarly, cottage pie with the remains of a beef roast. Helping mum remove all the meat from the bone and then putting it through the hand mincer (always a feature of the domestic kitchen before the advent of the food processor) is an abiding memory and, probably, the source of my love of food and cooking. No 'fancy' ingredients, just onions, carrots, meat, stock and peas (fresh or canned, but not frozen, as we did not have a fridge or freezer until the late 50s) and into the oven. And, we might have plain cabbage or greens as an accompaniment with lots of pepper to season. Very much a dish of the working class, making as much use as possible of what were sometimes scarce resources. Now, of course, shepherd's pie has been elevated and has become a favourite of even top class chefs. Yours looks delicious and I might well give it a go. As a footnote, I would love to see what you make of 'scouse', a staple of my home city Liverpool. Another of mum's leftover dishes with lamb, potatoes, carrots and onions, cooked down until it all melted together and eaten with pickled red cabbage and crusty bread.

This was 100% the best thing I’ve ever made. And potentially the best thing I’ve ever eaten. Grating onions is the most painful thing I’ve ever done but it was worth it. I just live with my wife so I was eating this for a week and it was great. Didn’t get tired of it at all. Highly recommended

@@hanswangnstvold435 I’d say the times he deviated away from traditional British was he put a metric f tonne of Worcestershire in there. That was about 10 times the amount I’ve ever seen. Then putting the peas through it was strange, that would be on the side. White wine was odd, we would always use red. And chives is definitely not normal as this is a winter dish. Saying all that, it looked insanely epic.

For those cooking for one! A great way to do this dish is to make everything the same way but assemble small pies in ramekins. You can bake one and freeze the others. Then you just bake until golden brown whenever you want for the easiest, Sunday dinner quality, week night meal ever.

Exept butter is healthy. Rich in omega 3 fatty acids and LSA, Along with vitamin A and some D. The "fat is evil" is propoganda . Butter is very healthy, but of course in moderation. Saturated fat isn't bad as mainstream tells you.

I made this! It was a disaster of my own making. Even my potatoes were green and I didn't know until it was time to peel. Turns out powered mashed potatoes work in this pretty well in a pinch. Obviously not as good as what could have been. Thanks for making videos that get me out of my comfort zone. Even with all my mistakes and whatnot it still tasted great.

My mother's style of shepherd's pie: Much softer mashed potatoes (made with a ton of eggs, milk and butter), mixed with a whole lot more tomato sauce, red wine instead of white, and the whole thing is served with mozzarella and fried eggs on top. I've never seen anyone else put fried eggs on top of shepherd's pie, but it's awesome.
In Chile (and other parts of South America) there's a very similar dish called "Pastel de Papas" ("Potato Pie" basically). In most ways it's the same except for one really weird (to me, a USA person) detail: the potatoes are topped with an almost disturbing amount of sugar before going into the oven. Yes, sugar; like, for a pan like the one used in this video, probably 4 tablespoons of sugar. They also make a garlic-paprika oil seasoning that goes on top too. Sugar on potatoes took a leap of faith for me, but it's become a family standard because it's insanely delicious.

Just in case, to police Americans calling cottage pie shepherd's pie, even though we don't care because we use what we have usually, which is beef. I've even used ground turkey. Still called it shepherd's pie.
My dad used to make this for us when we were kids. I went veggie when I was 13 and watching this video is one of the only times I've really missed eating meat. I swear I could smell this through the screen, looks amazing!

I'm a brit and it looks great. I do the topping with potato and 25% swede or turnip. A creamy and mixed mash with flavour. after being in the oven for 20 minutes. Grate over then melt over the top then add bad to the oven until golden top. End result is adding a bit of sweet. Love your version though :)
My close friend and I made this recipe in full a few weeks ago, and even though we had to use an aluminum casserole pan, it still came put great. The Worcestershire sauce definitely would be based on personal taste we found. I am now working on a half recipe, since lamb is more expensive by me, but everything still tastes awesome so far.
I tend to brown as much of the lamb as quickly as possible. Add the onions and carrot, vegetable oxo cube, Worcestershire sauce, mustard and rosemary - add water and let it cook for a little. Then you can thicken it by using flour and (cold) oil mixture. A kind of raw roux, similar to using cornflower and water which is also an option. Definitely wouldn't use that much butter in the mash for very good reason. You want the mash to be clumpy and quite thick to support the copious amount of gravy you're going to be using. Just a touch of butter and milk. Then you can brush butter, or put small squares of butter on the top of the mash half way through cooking to make a golden and delicious crust. I wouldn't add peas either because in the north at least you'd serve this with minty mushy peas, the aforementioned gravy and a slice of buttered bread for mopping up what's left on the plate at the end. But your recipe is a good effort, no doubt it's delicious.

Also the frozen pea thing is the best trick ever! I was worried that my filling was a bit loose… but when I poured in the frozen peas, it cooled off and thickened up. Plus they added a nice fresh ‘pop’ to the whole thing. I am just so happy with how it turned out.

To be fair I think for our nostalgia a Shepard's or cottage pie is best with a few OXO cubes in it. It's one of those dishes that it best when it's not over done. It's argue that the garlic powder and wine are not necessary but dear God if you don't put worcestershire sauce in you're an animal.

We're lazy, so we just make the mashed potatoes as we normally would, put them in a bowl, and top with the filling mixture to serve this like an hour sooner with less work. Still tastes great! The worcestershire flavor was really strong though. I'd cut it by half or 2/3 next time.
In my family this was always a Monday meal. Sunday we had roast shoulder of lamb, & Monday the remaining meat was minced & used for shepherds pie, & the bones went in the stockpot.

I was looking for this comment. I just made it and the flavor of the meat was way too strong. Also read another comment about how you're not supposed to cook wine and tomatoes in a cast iron. After looking it up, it seems to be ok in a well seasoned cast iron skillet briefly. But he used half a bottle and cooked for 30min in the pan early on and another 30 in the oven.
@@Abby-zd3yo If he was just plain reducing white wine in the pan it'd be an issue but it becomes incorporated in the meat quickly enough that i don't think its a big deal, unless you taste iron you're fine
This looks amazing, definitely want to try it. One thing I'll add is when I got this mealkit from HelloFresh they had me sprinkle some shredded parmesan on top right at the end and put it under the broiler for 30 seconds (??) until it was gooey and oh my God, it was amazing.

Adam can you please make videos discussing in detail about cooking appliances specifically why someone would use a particular cooking appliance over another cooking appliance to cook a certain food and the science behind why some foods taste better when they are cooked using that cooking appliance over another cooking appliance. Pressure Cooker versus Slow Cooker for instance.
I actually did decide to make this, following this exact recipe! By far the most complicated and involved cooking recipe I've ever done. I'm proud to say it turned out quite well, I think! My palate is admittingly a little shot from eating a lot of not-so-good food, but I got some second opinions and we all agree it was really good!
I really like the narration - to me, this feels like a condensed version of actually standing in the kitchen while someone explained the "why", and not just the "what" and the "how".

Being born and raised in the early 1950s in a large industrial city in the north of England, shepherd's pie was always a 'Monday' dish, made only when there was leftover lamb from the Sunday roast. Similarly, cottage pie with the remains of a beef roast. Helping mum remove all the meat from the bone and then putting it through the hand mincer (always a feature of the domestic kitchen before the advent of the food processor) is an abiding memory and, probably, the source of my love of food and cooking. No 'fancy' ingredients, just onions, carrots, meat, stock and peas (fresh or canned, but not frozen, as we did not have a fridge or freezer until the late 50s) and into the oven. And, we might have plain cabbage or greens as an accompaniment with lots of pepper to season. Very much a dish of the working class, making as much use as possible of what were sometimes scarce resources. Now, of course, shepherd's pie has been elevated and has become a favourite of even top class chefs. Yours looks delicious and I might well give it a go.
As a footnote, I would love to see what you make of 'scouse', a staple of my home city Liverpool. Another of mum's leftover dishes with lamb, potatoes, carrots and onions, cooked down until it all melted together and eaten with pickled red cabbage and crusty bread.

Grating onions is the most painful thing I’ve ever done but it was worth it.
I just live with my wife so I was eating this for a week and it was great. Didn’t get tired of it at all. Highly recommended
Grate the carrots and onion in the food processor with the grating attachment. Pain free.

My mother's style of shepherd's pie: Much softer mashed potatoes (made with a ton of eggs, milk and butter), mixed with a whole lot more tomato sauce, red wine instead of white, and the whole thing is served with mozzarella and fried eggs on top. I've never seen anyone else put fried eggs on top of shepherd's pie, but it's awesome.

In Chile (and other parts of South America) there's a very similar dish called "Pastel de Papas" ("Potato Pie" basically). In most ways it's the same except for one really weird (to me, a USA person) detail: the potatoes are topped with an almost disturbing amount of sugar before going into the oven. Yes, sugar; like, for a pan like the one used in this video, probably 4 tablespoons of sugar. They also make a garlic-paprika oil seasoning that goes on top too. Sugar on potatoes took a leap of faith for me, but it's become a family standard because it's insanely delicious.

I'm a brit and it looks great. I do the topping with potato and 25% swede or turnip. A creamy and mixed mash with flavour. after being in the oven for 20 minutes. Grate over then melt over the top then add bad to the oven until golden top. End result is adding a bit of sweet. Love your version though :)

My close friend and I made this recipe in full a few weeks ago, and even though we had to use an aluminum casserole pan, it still came put great. The Worcestershire sauce definitely would be based on personal taste we found.
I am now working on a half recipe, since lamb is more expensive by me, but everything still tastes awesome so far.
Make it with beef - usually cheaper. Cottage pie!
I tend to brown as much of the lamb as quickly as possible. Add the onions and carrot, vegetable oxo cube, Worcestershire sauce, mustard and rosemary - add water and let it cook for a little. Then you can thicken it by using flour and (cold) oil mixture. A kind of raw roux, similar to using cornflower and water which is also an option.
Definitely wouldn't use that much butter in the mash for very good reason. You want the mash to be clumpy and quite thick to support the copious amount of gravy you're going to be using. Just a touch of butter and milk. Then you can brush butter, or put small squares of butter on the top of the mash half way through cooking to make a golden and delicious crust.
I wouldn't add peas either because in the north at least you'd serve this with minty mushy peas, the aforementioned gravy and a slice of buttered bread for mopping up what's left on the plate at the end.
But your recipe is a good effort, no doubt it's delicious.

Also the frozen pea thing is the best trick ever! I was worried that my filling was a bit loose… but when I poured in the frozen peas, it cooled off and thickened up. Plus they added a nice fresh ‘pop’ to the whole thing. I am just so happy with how it turned out.

To be fair I think for our nostalgia a Shepard's or cottage pie is best with a few OXO cubes in it. It's one of those dishes that it best when it's not over done. It's argue that the garlic powder and wine are not necessary but dear God if you don't put worcestershire sauce in you're an animal.

We're lazy, so we just make the mashed potatoes as we normally would, put them in a bowl, and top with the filling mixture to serve this like an hour sooner with less work. Still tastes great! The worcestershire flavor was really strong though. I'd cut it by half or 2/3 next time.

I was looking for this comment. I just made it and the flavor of the meat was way too strong. Also read another comment about how you're not supposed to cook wine and tomatoes in a cast iron. After looking it up, it seems to be ok in a well seasoned cast iron skillet briefly. But he used half a bottle and cooked for 30min in the pan early on and another 30 in the oven.

I actually did decide to make this, following this exact recipe! By far the most complicated and involved cooking recipe I've ever done. I'm proud to say it turned out quite well, I think!
