Wow!!!! Great dish, I didn’t have any grits so I put the catfish in a bed of basmati rice….. so good, but will definitely back off the cayenne next time 🌶🥵🌶🥵

That was a seriously great video, Matthew. I'm not just blowing smoke. Great visuals, great instruction, a little humor... You were awesome. And the dish looked totally 💰💰💰! I've never eaten catfish or grits, and neither one has ever really had me very interested, but you absolutely made both look delicious. I appreciated you making your own blackening seasoning. That was cool and shows people how they can adjust to their liking. Thank you so much and congratulations on maybe your best video ever. Have a great weekend!
Dan the man! Thanks my friend for your support as always. I think catfish is similar (not exactly) like perch in some ways. It's great. You're so right about adjusting to each person. With a bought rub, you don't know the compound, when it's yours, you know! Appreciate you bud!
Awesome blackening seasoning! The catfish cooks faster than waiting in the line at McDonalds and tastes a million times better. Gonna try your flounder/squash spread from an older video next!
Blackened catfish is one of my favorite cooks on the Blackstone. I have been using a variety of seasonings but the next time I think I will use your blend.
I'll be catching catfish from my dock at Kerr lake this weekend. They're gonna go from the lake to the griddle to the cheese grits! Thanks for the recipe!
Hussey! This is has become the dish that is my all time best! Made it for the first time today. It was fun and fast! I’m a Cajun girl from the heart of Cajun country. I stumbled across some Bourbon a hickory smoked Gouda and…well…I HAD TO! I followed the Hungry Hussey’s recipe for the most part for the blackened catfish and grits. I increased the amount of grits since we really like them. I mainly tweaked the grits recipe a little. Here’s what I did. I don’t measure very much when I cook. The water and grits ratio are accurate. In a heavy bottom saucepan, I mixed 2 cups of water with Knorr chicken broth granules. I just mix it in and keep tasting until I feel like it’s flavorful enough. I also squeezed the equivalent of 2 garlic cloves of garlic paste into the pot. And stirred to combine. I put the pot on the Blackstone and brought it to a rolling boil. Once it was boiling, I added 1/2 cup yellow grits (I could only find Bob’s Red Mill yellow grits/polenta at Kroger). Stir for about 30 seconds to combine it well. (You could use regular white grits. It can’t be the quick cook. Has to be traditional) Lower heat and cover. You will cook for a total of 20 minutes. Stir often. At the 15 minute mark, I added about 3/4 cup heavy whipping cream to cream the grits and stirred it in well. You’ll notice they are quite thick. I like them a little looser. Cover for the next three minutes. At 18 minutes, turn off the heat and add about 1/2 cup shredded Smoked Gouda and 1/2 cup shredded White Cheddar cheese. Stir constantly. If it thickens past your liking add a little more cream. I found the Gouda at Albertson’s. It’s Bourbon Smoked. It’s soooo good. At first the smell is a little pungent. It’s a mix between the normal strong smell of smoked Gouda and the musk of Bourbon. But it put these grits over the top!
I can my own bone broth that way I know what’s in it and love the flavor and benefits of the collagen and other important nutrients!! It’s just so easy!!
Your cooks inspire me on things I wanna fix on my blackstone griddle, now I wanna go fishing for some fresh cat fish.Like you say,be some good groceries

@@thehungryhussey just tried your recipe for blackened catfish w/cheesy grits on the Blackstone. Absolute best catfish I have ever had in my life! Thanks for sharing it! Keep up the great work!
Consider this…if you put seafood boil seasoning on something (fish, steak, chicken) and then put it on an open fire grill, is it grilled? Or boiled? Blackening is a spice, yes but it is a cooking technique like roasting, saute, or braising. I can put any spice rub on a protein and blacken it but is a deep fried fish filet with “blackening” seasoning actually blackened?
The catfish might not have been “black” and I know the technique too, they dredge with butter then put the spice on and put in a hot CI pan. There’s not much difference in that and what’s done here. The seasoning is 85% of the technique. Is that fair today?
This is not “blackened” your griddled sauté looks nice but blackening is done in a dry pan/griddle and the butter(oil) is put on the fish(or other protein) before the seasoning.
