    What a dish! Cooking rice on the griddle? What the..? Awesome! That sizzle tho...slapping down them filets! My mouth will be watering the entire rest of the evening! All that lime, pineapple, jalapeño and cilantro! How can you NOT have all this goodness on some fresh saltwater fish! Great job Nate and Todd!

    Okay, I've watched this video before and liked it. I have returned to ask if you have ever cooked Barramundi on the Blackstone? This is an amazing fish. My first experience was at an absolutely excellent restaurant in, believe it or not, Chino Valley, AZ, named Essence Kitchen and Bar.
    I discovered Barramundi in the frozen section of Costco and grabbed it. I need your expertise.

    Can you use avocado oil instead of olive oil?

      Absolutely you can. Avocado oil will actually stand up to the heat of the flat top as well (since they had it on high). Neither are a good or bad choice generally - what's more important is whether or not they are neutral oils and the production process used in each. Both olive oil and avocado oil can come anywhere between unrefined (non-neutral in flavor) types to more highly refined types which will generally be neutral oils intended for cooking.
      Still, avocado oil has a MUCH higher smoking point than ANY type of olive oil regardless of how highly refined it is. It's better to use a high smoke point oil if you plan to really crank the heat (like searing a steak), but you really shouldn't be cooking any fish at that high of a temp, so as long as you watch your heat and don't let it get too much higher than 350°F then a neutral refined cooking olive oil will work just fine.
      Personally, I have recently transitioned my cooking to now being done with a neutral avocado oil (Chosen Foods) as my general purpose cooking oil. However, I do still use both unrefined and refined olive oils, as well as refined peanut oil, beef tallow, clarified butter, and sometimes vegetable oil in my cooking. It just depends on what purpose I'm using it for.
      I use vegetable oil exclusively for baking (such as in cakes).
      I have avocado oil for searing and sautéing, especially when I need high temps.
      I use EVOO (and unrefined olive oil) ONLY in dressings, sauces, etc.
      I'll use refined olive oil (like what they're using in the video) for things like roasting veggies, so the oil is only getting indirect heat, for short amounts of time, and at typical baking temps which are typically fine.
      And I still prefer to use peanut oil for shallow OR deep frying foods - peanut oil is just hard to beat when it comes to fried foods, and counter to what a lot of people think, most NEUTRAL peanut oils are refined to where they do not contain the chemical(s) which triggers reactions in people with peanut allergies (this same thing is true about lost neutral soybean oils as well).

    Shamefully I thought Mahi Mahi was dolphin which is why I never tried it. Now that I know I won’t be eating flipper I’ll be sure to……………give it to try! (Nod to Todd)

    I love ❤️ the dish but please wash cilantro because when you let its sit in the water, you'll see a lot of dirt come out. I would say rinse it in the water at least 3 times

      The “Fresh” vs “Salt” rinse is mostly based on storage. If you’re gonna freeze or store the fish for future use, use saltwater. Fresh water is fine just before cooking. The main thing to remember is to have a dry fillet and a hot griddle
