Perfectly explained..too good.. I make hyderabadi paratha which is quite similar .. learnt long back on doordarshan in 80's if I correctly remember.. please share receipe of hyderabadi paratha too..
Making this parotta is an art. Those restaurants who know how to make it make it absolutely yummy others really serve lumpy doughy parottas. I am punjabi but love these if they r well made and flaky.

I am descended from a Keralan muslim immigrant that went to Indonesia, here we call it roti canai, roti just means bread in general, yours look exactly like my mother's, though I reckon she use less oil and or margarine, in general, butter is less used here, ghee is only used sparingly due to its price.
