My Chicken Carbonara Recipe | I'll show you how to ensure the egg doesn't scramble too!

  • If you've tried and failed or never tried to make Chicken Carbonara in the past. I'm going to show you how to get it perfect. Tender chicken, crispy pancetta and spaghetti all tossed together in a rich, silky sauce.
    No cream is needed to get that thick creamy sauce. I'll show you how to ensure the egg doesn't scramble too.

    Ingredients for the carbonara:
    1 tbsp olive oil
    1 large chicken breast - approx 6oz/175g
    ¼ tsp salt
    ½ tsp black pepper
    14 oz (400g) dried spaghetti
    3 large eggs
    1/2 cup (50g) Pecorino Romano cheese (or swap for Parmesan or Grana Padano) - finely grated
    1/2 cup (50g) Parmesan cheese - finely grated
    2 tbsp unsalted butter
    3.5 oz (100g) pancetta, chopped into small pieces
    2 cloves garlic - minced

    I made this but without the bacon and just chicken carbonara pasta, since we’re fasting I’m serving it for when they will break the fast, hopefully they like it!     I just made this but it didn’t have pecorino on hand so I used an extra egg yolk and about 4 tablespoons of heavy cream. I also used applewood smoked bacon as I didn’t have pancetta. The flavor was amazing. Thanks for sharing.

    Oh, so that's how you prevent the egg from scrambling; constantly tossing the pasta as you pour. Good technique. I should try that one of these days. I would like to try the recipe with turkey bacon though.

    Hello! Love your recipies especially your tuna pasta 😋 want to try this one but concerned that you said to add the egg mixture with the heat off? How can you ensure the egg is cooked?

      It cooks with the heat of the pasta. It's supposed to be recently removed from heat so it should still be hot enough.

      I usually make carbonara with guanciale. It’s really rich. This recipe is a good idea for a lighter version- with the chicken, use a fraction of guanciale (for flavor).

    I don’t know what type of grills you all use but I have never been able to cook chicken in 10-12 mins. It either doesn’t cook through enough or burns the outside because it’s too hot. Always takes 20 mins.

    I have always been put off by the requirement for Cream, I never have any. I can do this but I will need to scale it down a bit even for my appetite. Just need a date now...... There was enough left in the Pan for breakfast for two as well I see. Just what Date Night recipes should be.

      The egg isn't raw tho
      The cheese in the sauce melts and the egg cooks the second it touches the hot pasta...
      Just like how a whole egg takes a couple minutes to cook, scrambled eggs only take 30 seconds... Because the egg is spread further apart and can receive more heat in a shorter amount of time... In this case it's an extremely thin layer of egg covering everything so it cooks in a matter of seconds from the residual heat alone

    Remove the butter, the chicken (the Chinese eat chicken in pasta not the italians.. !!!) and replace the pancetta with the "guanciale" and the parmesan with the "pecorino romano" and you will eat the carbonara as we Italians traditionally eat. Try it our traditional way, you will love it! Ciaooo

      @@Naveication Nope, a real carbonara doesn't use Parmesan cheese, it has Pecorino Romano. It doesn't have pancetta in it either, it has Guanciale in it. The only ingredients required for a carbonara are:
      Guanciale (Pig cheek)
      Pecorino Romano
      a dry pasta such as spaghetti or a spaghetoni which is slightly thicker
      Salt - to lightly salt the pasta. (Only lightly salted pasta water as Pecorino Romano is quite salty)
      Pepper
      Eggs
