The Crispiest, Tastiest Crispy Chilli Beef EVER!

  • Crispy chili beef is my favourite dish from the Chinese takeaway, so it has a lot to live up to. I'm going to show you how to get that lovely craggy exterior and even better, we don't need to use the deep fryer! Perfect crispy strips of beef in a tangy spicy sauce, mmmm soo good!

    Ingredients:
    • ¾ lb (360g) thin cut sirloin steaks - (approx 3 steaks) cut into thin strips*
    • 1 small egg
    • 4 tbsp cornflour (cornstarch)
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 1/8 tsp white pepper
    • 4 ½ tbsp sunflower oil, divided
    • 1 medium onion, sliced into thin strips
    • 1 red chilli - finely sliced- discard the seeds if you don't like it too hot
    • 1 tsp minced ginger
    • 3 garlic cloves - peeled and minced
    • 2 tbsp rice vinegar
    • 3 tbsp dark soy sauce
    • 2 tbsp tomato puree
    • 6 tbsp caster (superfine) sugar
    • 2 tbsp tomato ketchup
    • 2 tbsp sweet chilli sauce
    Process:
    • Place the steak strips in a bowl and add the egg. Mix together to thoroughly coat the steak in the egg.
    • Add the 4tbsp cornflour, ¼ tsp each of salt and pepper and 1/8 tsp of white pepper.
    • Toss together to coat the steak. It will be a sticky mixture.
    • Heat 3 tbsp of the oil in a large frying pan (skillet) or wok over a high heat until very hot.
    • When the oil is hot, add the beef in a strip at a time and spread it out. You will probably need to work in 2 batches.
    • Fry the steak until dark brown and crispy. Try not to move the meat around too much as this reduces the amount of crispiness you get. It generally takes about 5 or 6 minutes to crisp up the beef, with about 3 or 4 stirs during that time.
    • Using a slotted spoon, remove the beef from the pan and place it in a bowl lined with kitchen roll to soak up excess fat.
    • Add a further tablespoon of oil and repeat - cooking the second batch of beef and then placing in the bowl with the first batch.
    • Once you’ve removed all the beef from the pan, Its time to make the crispy chilli beef sauce, add the remaining ½ tbsp of oil to the pan and turn the heat down to medium.
    • Add in the sliced onion and cook for 2 minutes until slightly softened.
    • Add in the finely chopped chilli, 1 tsp minced ginger and 3 minced cloves of garlic and cook whilst stirring for 30 seconds.
    • Add the 2 tbsp rice vinegar, 3tbsp soy sauce, 2 tbsp tomato puree, 6 tbsp sugar, 2 tbsp tomato ketchup and the 2 tbsp sweet chilli sauce to the pan. Turn up the heat and let it bubble for a couple of minutes until the sauce starts to reduce a little.
    • Add the beef back in, give it a stir and heat through for 1-2 minutes - until the beef is hot.
    • Serve with Egg fried rice, boiled rice or noodles.

    When I was a trainee chef in London back in 1964 we had a sandwich if we were on early shift. It was a MR fore rib of beef joint, the eye of the joint was cut into thin steaks and placed on a tray then covered with 50% butter & 50% Worcestershire sauce and put in the oven to warm. Doorsteps of bread were lightly toasted and the beef went in the middle of two slices, best sandwich I have ever had :-))

      That sounds bloody handsome! Have you attempted to recreate it since? Love a fore rib, but we only ever have it for Christmas and Easter, it’s so dear! I wonder if you might get anywhere close with a bit of cooked and sliced ribeye steak?

    I've been cooking 40+ years at home and professionally, and generally loathe most YT "chefs" (term is debatable). But YOU I like. You're not trying to be cutesy, shocking or funny - or engage people emotionally. You are brief, concise & recipes are exactly to my taste. I'm a big fan, & wish you every success. Edit: Thank you for not forcing me to another website to view a written recipe. Often on YT it is evident that viewers are being heavily manipulated and when I am enjoying myself at home, that turns me right off. Kitchen sanctuary is right.

    I made this the first time according to the directions. Second time, I doubled the amount of sauce, since I like a lot of sauce with my meat, and I used Louisiana Hot Sauce in place of the chili pepper. This dish is a keeper!!! YUM! Thank you!!!

    I think you are doing everything just right. The recipes give specific instructions, the videos are clear and are presented in a genuine and warm manner. Receiving the recipes in a random way encourages me to try new things. If I had to suggest
    just one thing it would be meals for the freezer.

    Thanks Nicky, tried this last night and it was an absolute winner! Took some of the others advice and I only used 2 tablespoons of the sugar and it was epic. Even re-heated in the microwave next day it was as good as anything we have had delivered! Looking forward to trying more of your recipes! All the best, your new fan in Portsmouth!

    Wow, that was superb. I wanted to give my Wife a break, so I decided to cook your recipe for tonight's evening meal. My Wife helped prep the sauce, chop the onion, chilli, garlic cloves etc, it looked and tasted just like you get in a Chinese restaurant. Thank you for a cracking recipe and video. Managed to find most of the ingredients in the larder, bought the rest. Struggled to find rice vinegar, though. I'll try again. Definately going to make this again. Cheated by buying microwave egg fried rice!! BW from South Somerest

    Made this for my family last night...... It was FANTASTIC! Reduced the sugar to 3, added a teaspoon of baking soda to the beef, a half cup of beer, and some thinly sliced carrot sticks.....this was my late mum's favourite Chinese restaurant dish, and I have been wanting to make it for ages!     I subscribed to your account a couple of weeks ago. I first made your Beef Bourguignon and it was popular with my kids, then one day I saw your Lancashire hotpot pop up as a suggestion so gave it a go. I added Rosemary as well and browned the lamb in flour and added a spoon later too. I then promptly shared your recipe after we had immense success with my kids. I'm from Wigan and my kids had never had a traditional dish from my neck of the woods. So now it' a firm fave. Planning on the Biryani this week.     This was fantastic! Here in Florida we don’t have many Chinese food places that make this. Panda Express has something similar, and there are a few places here and there that do, but once you get it home, the crunchy coating has become mushy, the beef is rubbery, etc. That sauce is so good! Put everything over some house made fried rice and man oh man, that is a dish that’s going on my regular rounds. Thank you! 😊

    Finally got round to cooking your crispy chilli beef 😛😋❤️ the sauce is sooo delicious and the beef tasty and crispy. We didn’t want it to end and we can whole heartedly confirm that it’s better than take out. You can’t beat fresh ingredients made by yourself.     I can't wait to try this dish. I just made the Tuscan chicken in a cream sauce and It was so tasteful, with the chicken so tender. This chili beef is surely going to be a favorite. I also made the chicken biryani and it was just as tasty. I love how easily the recipes can be followed.

    Looks great. In Australia I’ve found it called different names in different restaurants. “Crispy shredded steak”, “Rainbow steak”, “Shanghai Beef” … and I don’t get around much, so there could be a lot more. Definitely worth asking for if you don’t see it on the menu.

      It's called Kim Wah Beef here in Benalla, Vic 😁 I remember the best beef used to be in the all you can eat Chinese restaurant in the Pancake Palour Plaza in Bourke St mall. The beef was bright red, so crispy and layered on fried rice noodles. So good!

    This recipe is unreal. I've made this for two days on the run. I swapped out the sirloin for rump and used Apple Cidre Vinigar because the alternatives weren't available. It went down a treat for the whole family. I was asked to make it again tonight so I did and this time I used Gammon steaks and trust me... the gammon is on another fucking level. Boss recipe.       @@loobylooroden6176 When I made this, I used 6tsps rather than 6tbsps of sugar and it was plenty sweet enough (and delicious!) - couldn't imagine eating it with the amount suggested in the recipe, but I suppose we all have different palates haha

    My wife and I had great fun cooking this last night, together with your egg fried rice. Kitchen looked like a bomb had hit afterwards but it was worth it. Couldn't believe it was better than my local takeaways and knowing what beef had gone into it made all the difference. Will have another go soon but will also try and be a bit more organised. Do you think the amount of sugar could be reduced, say by half?

    That's looks so good. We used to get this from a takeaway in Norwich and we loved it. We now live NZ and you don't see it on the menus here. Will cook this tonight and report back tomorrow.

    Made this last night and it was lush, we absolutely loved it! My problem was that I tried making it at the same time as the egg fried rice, which didn't go well at all (burnt I'm afraid!). But this was fabulous, thanks for the recipe.

      @@Seedyrom247 Heat will not destroy the toxins produced by certain bacteria. I haven't yet seen anyone horrified by a brown banana but I totally agree with you on the rimming thing. Licking someones arsehole is not the best idea ever.

    The Crispy Chilli Beef is the best dish….EVER!!!
    My take is to put all of the sauce ingredients together in a bowl in the fridge in advance.
    This makes the ‘production’ a doddle, especially if the meat and onions, ginger and garlic are also prepped and in the fridge as well.
    Splatter guard is essential if the wok is really hot to get the beef to crisp up.
    Brilliant recipe, and would work just as well with chicken strips.

    Made this last night, delicious! The only tricky bit is placing each sticky beef strip in one by one (hands splattered by hot oil) but well worth the discomfort.

    glad to know you can shallow fry this. I really dislike deep frying food just because I'm not a fan of overly oily food. I'll definitely try this.

    Looks fantastic. one tip I like to do is, instead of throwing the fat away, put it in the pan for a few minutes to allow it to render out its flavor, then toss it and cook the rest of the beef.

    I’ve cooked this dish for the family & it has become a favourite. Absolutely delicious! But at our age (60s)... it has to been occasional treat with that amount of sugar.

    I've made several of your recepes and do like them a lot, however this one will need some modifications in the future. I usually don't have rice wine/vinegar so just skip that. In this case the level of sugar is just crazy. The dish turned out tasting like dessert. I'd really like to see some sugar free/low sugar level asian style cooking.

    Missed a couple of tricks here:
    1. Cut the steak across the grain NOT with the grain, this makes it easier to chew.
    2. Cut the beef strips in half lengthwise to increase the surface area and make more quantity.
    3. Give the beef strips a whack with your Chinese chefs knife to tenderise the meat. This will actually melt the meat but make the coating crispier.
    4. Mix the sauce ingredients separately in a saucepan and gently bring them to a simmer while the veg is cooking. This allows the ingredients to fuse together and create a more cohesive sauce than just bunging everything together at the same time.

    Just made your Crispy Chilli Beef. Oh my goodness, that was wonderful. Made larger quantities of beef so quite time consuming. But oh sooooo yummy. Added an one extra chilli for our tastes but so sweet and perfect heat. Two nights in a row we have cooked using your recipes and two nights totally satisfied. Oh and your Chicken Pasanda is to die for!

    Pro tip, before cutting the sirloin, most sirloin cuts have a bit of silver skin in the middle (connective tissue) this is a very tough chewy bit. Cut it out and remove before freezing and slicing the beef thin. This leaves you with no bits that are extra tough.

    Nice recipe! I'd say reduce the amount of soy sauce as a suggestion. It was a bit too much at least for me.

      If you eat the crispy beef with rice, then you would want to sauce to be stronger to make up for the lack of flavour in the rice.

    Made this a few hours ago, it was absolutely amazing. I added 2 tbsp of sugar instead of 6 though and used lemon juice instead of rice vinegar since I couldn't find any at the store. When I heated the rest up about half a hour later though the flavours intensified and it became a little sickly sweet & too spicy.

    Haven't tried it yet, but it looks delicious. FYI though, the heat of peppers is not in the seeds. It's in the placental membrane holding the seeds. The act of removing the seeds removes most of that membrane though which is where the confusion arises.
