Great vid! Philippine foods are very diverse, as our country is multicultural. We have 170+ languages and ethnic groups, with different religious, climactic, and regional differences. We also have mixed groups from our colonial pasts and modern diaspora who had returned back home who account for the diversity.
Whereas Korea is homogeneous and so you'll have a specific taste profile for most Korean foods (one that we love here); the Philippines is so ethnically, geographically, and culturally varied that we can't speak the exact same language if we travel to another region, and so our food doesn't have a general template either. There are popular foods like adobo, tapsilog, lechon, sisig, and pancit, but these aren't representative of the entire country but associated with specific regions.
Foods from the southern Muslim part of our country for example like Piaparan, Sinina, Tiyulah Itum, Satti, Pyanggang and Lininggil don't really resemble or taste anything like the foods you've eaten, despite them (the Maranao, Tausugs, Maguindanao etc people) also being Filipinos and being indigenous to that region of our country.
The same for food from the Ifugao, Bontok, Kalinga and Ibaloi etc people of the Cordilleran region (pine tree mountain highlands) of the interior of Northern Luzon with their smoked Etag, Binungor, and Chilokchok. It's just so diverse.
Food from Bicolano people of the South East of Luzon like Binagoongan, Laing and Bicol Express are very spicy with coconut milk, chillies and shrimp paste flavours.
While the foods from Ilocano ethnic group in the far north of the country feature hearty vegetable stews and hotpots cooked in big woks and clay pots like Pinakbet and Dinengdeng.
The kinds of foods you had are from the Kapampangan, Tagalog and Visayan ethnic groups (who live around Central Luzon, near Metro Manila and Angeles, and the central part of the country around Cebu and Iloilo called the Visayas), and are more salty, umami based, soy based with sourness (soy sauce and vinegar or citrus), or sweetness with noticeable Chinese influence in things like Pares (beef stew in a star anise and soy thick sauce) or Humba.
There is a native barbequing tradition too (called Inihaw or inasal, but most just use "barbeque" as a borrowed term from English), and that's with either sweet and soy based glazing, or lemongrass and garlic based stuffings in the case of lechon (our roast meat tradition. Mostly pig, but chicken, goat and rarely beef too). In the south they call it satti (satay).
Adobo is a mainstay of native Philippine foods but dependant of region and local culture it can be very different. Spiced, bland, cooked in coconut milk, turmeric added to it, even miso added too.
You should visit the Philippines for a foodie experience in the future, you'd love it. Every town, region etc has its own specialities and taste profiles. It's hard to capture that same diversity in a single restaurant :)

That very long essay failed to define character of Filipino cuisine, because there is None or at least 97% of Filipino are not aware of it. As for your proud claim that the Philippines is multicultural, Singapore and Malaysia can just LAUGH at the very naive statement. Malaysia and Singapore are the poster child of Diversity in the region and that reality is reflected on their plate. Because Malaysia and Indonesia will not serve people fried eggs for lunch and dinner as a main dish. Sadly, going to the Filipino restaurant means eating TAPSILOG and its 700 variants. Tapsilog is not cultural. It was invented to oppress the people. Feeding them fried eggs is Convenient than giving them culture. As for the Adobo, why bring this to Korea? Filipinos who live in Korea should improve themselves. They do not eat adobo in the Philippines. Why seek Adobo in Korea? In Korea they use Adobo as a Political symbol. Adobo is just political. Why not use Kare Kare or Humba or Pochero??? Because Adobo is Mediocre. The idea of Adobo as the popular Filipino food is a LIE. But since Filipinos do not know their own culture, they just happily present Adobo to Koreans who will pretend to like a dish that no one in Philippines will ever serve in a special occassion.

I agree but with adobo, especially if you use pork, it is best if it is cooked a day before and let it sit overnight. Pork adobo tastes better a day old.
As a former chef in Manila, we pre-cook them so the taste will truly "sink-in" in the meat.

Wow, as a Filipino it is making me hungry. SiLog is a combination of Sinangag (Garlic Rice) and itLog (egg) most often it has a main dish added to it like adobo, tapa, longanisa, etc. making it adobo silog, tapsilog, longsilog. Very common Filipino breakfast dish. The eggplant pancake is actually an eggplant omelet, been grilled or boiled then fried with egg. And yes, you're not supposed to eat the stalk. haha

Welcome, In Busan also has a Filipino restaurant-specialized in Boodle fight. A boodle fight is a meal that dispenses with cutlery and dishes. Diners instead practice kamayan. The food is placed on top of a long banana leaf-lined trestle table and in true military practice, diners do not sit in chairs but instead stand shoulder to shoulder in a line on both sides of the table. A kamayan is a communal-style Filipino feast, composed of colorful arrays of food that are usually served on banana leaves and eaten without utensils.

The Adobo is a farce. It is just a Big Lie agreed upon by those desperate to have an Identity. Adobo is just Identity Politics on a plate. As for the Tapsilog another COMMERCIAL acumen which was promoted as Cultural. In reality, Tapsilog is just a symbol of corruption and poverty. For the Philippines to fight hunger and prevent famine, people need to embrace truths rather than subscribes to lies. Filipinos should stop being so insecure about their culture and they can start by recognizing what Real Filipino is all about. The Adobo is not something to brag about and no one rich eats it.

SILOG is a combination of garlic/fried rice called SInangag and fried egg which is itLOG in Filipino...and when you combine it with different kinds of meat or fish, you put the shortened name of that in the beginning like in TAPSILOG. TAP IS tapa which is cured meat. then there's HOTSILOG (hotdog), LONGSILOG (longganisa, a Filipino sausage) CHICKSILOG (chicken), and more...

I enjoy your videos. After becoming interested in BTS, I'm now have a desire to learn more about South Korea. Your voice is prefer for media. You have open a new part of the world to me. I like that you do an excellent job of explaining things. You and your wife are a beautiful couple. I chuckle that she won't eat some Korean food that you like. Thank you for sharing South Korea with people from all around the world with your videos. Most of us will probably never travel to South Korea, so we get to see and learn through your eyes.

As a proud Filipina, I’m glad that you guys enjoyed eating Authentic Filipino food. That’s the beauty of Filipino cuisine, it’s a mixing pot of different influences and flavors from many years of colonizing and trading. It has Spanish, Chinese, Indian and American influences. The Filipino dishes you are eating are considered staple/comfort food for us. Silog comes from combining a protein with fried garlic rice and an egg. The pancake thing is actually an eggplant omelet called “Tortang Talong”. You two should try Sisig and Sinigang next. Hope to see more Filipino foodie videos. 🥰😎👍🏻
