    Wil is so right, this is a dish that you can make differently every time. It is rare that I think my own cooking is better than the Chinese takeaway down the street, but for vegetable fried rice, I can say that is true "with confidence"!

    I made this tonight with a couple changes - used store bought chili oil, and a frozen peas corn and carrot mix for the veg - and it was SO GOOD! I've never had spicy fried rice before but it was absolutely glorious, can't wait to have the leftovers for tomorrow night's dinner! ☺️

    I've been vegetarian for almost 5 years now. Since I started, I've been experimenting non-stop to try and figure out how to make veggie fried rice. I can never quite get the taste just right. It always seemed to be missing just one little thing. Each and every time I felt it was something different. I can't explain how appreciative I am of this video! Every other "vegetarian" recipe includes eggs and/or fish/oyster sauce, but I don't eat those either. Now, I can finally cook the perfect fried rice every single time! Thank You!!

      Vegetarians eat eggs and milk, so that's okay to include. If you don't eat animal products at all you're a vegan, not vegetarian.

    Rather than chickpeas, I used pressed, torn tofu. Also, I marinate dried shitakes and have them in the fridge. So, chopped them up and added them in place of the fresh. (Didn't want to go to the store). Love your chili oil. Always on my counter next to the stove. Thank you for the inspiration!

    Absolutely amazingly delicious!!!! And so quick n easy!!! Since we didnt have a few of the chilli oil ingredients, we improvised by frying star anise and bay leaves from chilli oil recipe, for about 30seconds in coconut oil.... then add garlic, onion, spring onion and chickpeas for a couple mins.... Then our veges for a couple mins... Then baby corn, overnight rice, soy sauce and added sesame seeds (chilli oil recipe) at this point as we forgot to at start, for another couple mins...Then BAM, done! Whole recipe took about 30min to cook! SO GOOD!

    I tried your recipe not once but TWICE!! Because it was too good! I just replaced the chilli oil with oilve oil because I don’t have the chilli oil. And I put Baby spinach and pea sprouts today! It was sooo good! Love it! ♥️

    Made this yesterday. Oh my word it’s so very delicious. I used Wil’s Chili oil….it’s like I can’t live without it now! I used 3-4 tbsp of oil & 3-4 tbsp of olive oil. Hubby doesn’t like as much heat as I. Also I used close to 4 cups cooked basmati rice. Used edamame beans, celery,carrot, enoki mushrooms, shallots, broccolini, green onion. We each had two bowls. So fantastically delicious!

    Just finished making this. The crushed chickpeas adds body to the dish while the chili oil makes this explode with flavor. Its a filling and very delicious. Totally changes the way I look at fried rice now.

    I was going to make fried rice with some left over rice and this video popped up.
    Also, I made the chili oil a couple of weeks ago for the Mapo tofu and since then you’ve had a few recipes that include the chili oil. By the way, the Mapo tofu turned out great!

    Wil, thx for this great primer on fried rice. We generally make our version (we’ll upgrade to yours now!) the night after we have black beans and rice. We use the day old rice of course. The chick pea addition is a fabulous idea for added protein! 🤗

    What a magnificent idea to replace eggs with chick peas and mushrooms for plant based protein! Cholesterol filled eggs are the main reason why I stopped ordering fried rice.

    I made this last week along with your (also delicious but way too spicy for me) Mapo Tofu and WOW. I had actually never made fried rice before but your recipes are so easy to follow and my boyfriend and I both loved it. I’m making this again tonight along with some teriyaki tofu and your peanut butter noodles (a feast) I’m sure it will be amazing. I went to an Asian supermarket yesterday and bought all the ingredients you normally use (Szechuan peppers, dried tofu sticks, tamarind paste etc) and am so excited to make more of your recipes with confidence. Sorry for the long comment but I am SO happy to have found a channel where I recreate the recipes and they’re actually good. Anyone reading this: don’t hesitate to try the recipes. This guy is LEGIT👌🏽👍🏽

    Definitely going to make this...never thought about making fried rice with chickpeas. I guess we can use regular mushrooms too?

    Made this the other night and was awesome! Definitely will make again, easy, fresh ingredients and so good! My daughter made it at her house and turned out great also. I used sesame oil instead of the chili oil, wasn’t sure if it would be too spicy but would like to make that oil.

    Chef I am an eggterian and I like that you add chickpeas in your traditional recipes as a twist as it adds plant protein to the food. Also it is delicious.

    I came across your channel today and was absolutely blown away with your recipe...made it today and it was wonderfully tasty and simple to prepare! Thank you so very much for the very best fried rice recipe that only takes around 15 to 20 mins..I thoroughly enjoyed it and will be making it a lot. I'll be having it tomorrow also. I wish I could eat chilies but I have a very sensitive mouth - I used coconut amegas and balsamic coconut vinegar as my flavouring. I don't use oil, I saute with small amounts of water. Just another comment about what you did with the chickpeas...GENIUS IDEA. Love and gentleness from a Scottish girl living in England. x

    Should you refrigerate the rice over night? What is the best type of white rice to use i.e long grain, basamati, jasmine ? Can you use brown rice instead? Thank you.

      Yes, use day old jasmine rice. ☺

      Jasmine rice is usually used in Chinese fried rice and sushi rice is usually used in Japanese fried rice. But honestly any type of cooked and refrigerated rice is good!

    What is "overnight rice", or did I mishear?

      you cook the rice the day before, then you leave it in the fridge overnight.
      By leaving the rice overnight there is less moisture in it, this makes the rice crispier.

    I really like that you use the chili oil so often. I've seen videos on how to make chili oil on so many other channels, but no one is actually giving good recipes to use it.

    Thanks for the technique, great video. I've been making veggie fried rice quite often lately with left over rice. Just experimenting/guessing with technique. Now I can cook veggie fried rice with confidence!
