    Swiss is the best. Stable, smooth surface, and you don't have to make much in a stand mixer. It is difficult to whip a small amout of eggwhite in a large bowl.

    Thank you for sharing your video & recipe for these finicky little cookies that I have tried several times & failed so think I will try the Swiss method instead of the French ❤

    What temperature you pre heat ? For how long ?
    I have gas oven with fan bake or just bake, gas heat comes from down, can oven dry will be good ? My least temp is 100°C and below is just keep warm temp
    Also whst baking sheet you are using ?

    잘 보았읍니다. 질문있는데요, 오븐 건조시 온도가 90도 이었는데 10분후 오븐 문을 닫고에열없이 150도로 올려주고 그냥 굽나요? 감사합니다.

      그러면 연속으로 몇판을 만들려면 오븐은 이미 온도가 올라가 있쟎아요 그땐 어떻게 90도로 건조 하나요?

      오븐 문을 열어두면 온도가 빨리 내려가서 그대로 문 열고 90도로 건조시키면 됩니다. 그래서 시간없고 빨리빨리 해야할때 유용해요.^^ 오븐이 뒷팬있는 컨벤션오븐 스메그라는거 참고해주세요. LG광파오븐에서도 됩니다~

    안녕하세요! 영상 덕분에 마카롱 처음 만들어봤는데 삐에도 잘 나오고 속도 비지 않게 잘 나왔습니다! 감사해용🫶 그런데 윗면이 조금 쭈글쭈글하고 만지면 빵 같이 말랑폭신한 느낌이 드는데 혹시 이건 공정 중 어떤 과정에서 문제가 생긴 건지 여쭤봐도 될까요? 저는 지에라 오븐 사용중이고 2배합해서 두 판으로 나눠 구웠어요!(아래쪽 판은 밑면이 좀 더 단단함)

      안녕하세요^^ 제 생각에는 지금 햇아몬드가루로 인한 기름기때문일 가능성이 제일 높은데 이를 대처하기위해서는 머랭의 설탕량을 5g정도 높여서 단단하고 조밀한 머랭을 올리면 해결이 될거 같아요. 마카롱의 성공여부는 멀랭이 70%차지한다고 보고있어서요. 계절에 따라 달걀의 수분량도 다르고 우리 작업실의 온습도도 달라서 예민하게 반응하는게 마카롱이랍니다. 머랭만 잘 올리면 오븐의 브랜드도 차이 없다고 생각해요^^

    my oven start at 100° and my fan doesnt work alone either with top or bottom or both
    how can i dry them and bake them plz?

      hi. I have an old oven that only has a top fire. As a result of testing with it, it bakes well even if you bake it right away without the drying step.

      @@meexua9568 The convention oven only runs the fan in the back. So, it is possible to open the door and dry at 90 degrees.

      Yes dry is most important part of macroons

      Hi. Even if you bake it after preheating without a drying step, macarons with well-made meringues bake well.
