You must be next to Hoàn Kiếm Lake. Hanoi has great cuisine. But so does Saigon (Ho Chi Min City), Hội An and Huế. Cambodia too has a great coffee culture. I hope you get a chance to visit there in Phnom Penh and Siem Reap to enjoy their cuisine a combination of French and indigenous cuisine.
I've only heard about a Hanoian barista who came up with using egg yolk because of the shortage of milk during the embargo era, so we now have egg coffee.

Thnaks for the vid. Nice to see a slightly different style. If, like me, you don't like the condensed milk coffee - which I don't try iced coffee. We had it in rural areas and old Hanoi where there were no (or very few) cappucino machines. The ice tempered the strength and bitterness of the very strong black coffee. It is done in those traditional alumiunium drip coffee makers you showed. Lovely. As the ice comes from factories and is delivered we had no hesitation with it - although as always we drank bottled water :-). As for Banh mi, French bread and patisseries - all hangovers from the Colonial French Indo China empire. Shame that hangover was also a major part of the cause of the Vietnam war. In Australia we took in a lot of south Vietnamese war refugees. Given some had little formal qualifications or could prove them they opened bakeries. To this day, their shops are called Vietnamese bread shops and they're mostly great. I've never heard them called that in any other country. They've displaced most other types in our eastern states.

Try Trail Coffee Roasters in Stockton, California. They grow their own coffee on their own farm in Cerro de Jesus, Nicaragua and then roast it in-store. Fantastic coffee, at least to my taste. I'm only in Stockton about once a month, but I always stop there to get my coffee.

If you remember that fridges weren't everywhere 30 years ago, and it's a hot climate, fresh milk just wouldn't last a day. I worked on a sheep station and some sheep farms when I was young, and we only had choice either powdered milk or condensed milk due to the lack of refrigeration either on the station or in the shearing sheds. You either drank black tea or coffee, or drank those with sweet, condensed milk. Same with the old army ration packs - they had a tube of condensed milk in them. Used to love sucking it straight out of the tube. It became part of the culture, and they've stuck with it long after every house and shop got a fridge.

It's made mixed rice-flour and wheat-flour. Maybe that's why the taste is different. Vietnam doesn't produce any wheat nor does countries like Taiwan.

When the French were in Vietnam they ran out of milk for their coffee so they used butter instead. I learned this from my wife who is a barista.

You’re right about the coffee in America - basically brown tinted water in most cases. Except at my house where I only serve Tanzania Peaberry ground to fine #2 (between Turkish and espresso grind) .

Coffee - Cafe Sua Da! Try a Pho and a Bun bo Nuong. The French left a TON of their ingredients in the food profiles in Vietnam - after all, it was known as French Indochina for what.. a century? I SO wish I was there with you.

Try Trail Coffee Roasters in Stockton, California. They grow their own coffee on their own farm in Cerro de Jesus, Nicaragua and then roast it in-store. Fantastic coffee, at least to my taste. I'm only in Stockton about once a month, but I always stop there to get my coffee.

If you remember that fridges weren't everywhere 30 years ago, and it's a hot climate, fresh milk just wouldn't last a day. I worked on a sheep station and some sheep farms when I was young, and we only had choice either powdered milk or condensed milk due to the lack of refrigeration either on the station or in the shearing sheds. You either drank black tea or coffee, or drank those with sweet, condensed milk. Same with the old army ration packs - they had a tube of condensed milk in them. Used to love sucking it straight out of the tube. It became part of the culture, and they've stuck with it long after every house and shop got a fridge.
