I just made this last night for a group and was looking everywhere for a croquette dish that didn’t include ground beef or cheese, this was super good. I had to use regular flour, egg, and panko this time, but this was a huge hit. Thanks for this one, subscribed.
Amazing, thanks. I did it without the corn, I added brocoli instead and added my home blend of spices to the potatoes. I used these as patties for veggie burgers garnished with colslaw made with japanese mayo and tonkatsu sauce. It was amazing, thanks again for your great recipe.
Thanks for the question. I had a chance to try making the recipe without using the egg by substituting in 1/4 cup flour. And it was successful! After boiling and draining the potatoes, I added in a 1/4 cup flour (no egg) and mashed the potatoes. And continue with the recipe as written and you should have no problem. Good luck!
I do know many vegetarians that eat eggs and dairy, but definitely no meat, fish or poultry. Vegans also follow the no meat rule but also exclude animal products or by-products such as eggs and dairy. Thanks.
If you’re looking for a VEGAN croquette and not a VEGETARIAN croquette. Use a cornstarch + water slurry. Including some baking powder or more cornstarch into the potato mash may help it be airy.

You could find egg replacer tho. Yes, some vegetarian eat eggs and milk.
Vegetarian dishes can include eggs. Vegan however, is completely without. If you want to act rude at least do your research first.
