Him getting pissed, grabbing the rifle, running across the trucks, and then unloading a magazine point blank into the T1000's face will always be one of my favorite movies scenes/stunts of all time. Simple yet enjoyable, down to earth action.
I also like it when he punches out windows of the tanker truck and grabs the wheel, pulling the whole thing over on it's side. That must have been an insane stunt to set up.
It's really remarkable how many iconic scenes are not only from this movie, but also just how perfectly paced the climax of the movie is. The escape from Cyberdyne, the helicopter chase, the semi chase, the liquid nitrogen freezing scene, the fight in the foundry. It all blends together seamlessly, and manages to stay gripping the whole way, never falling victim to the "numbness" that modern action movies so often do. Where the spectacle is too far removed from reality, with silly physics or characters surviving the unsurvivable. The stakes were still straightforward, the logic of the time traveling hadn't yet become so convoluted that the narrative was bogged down by it, like in later sequels. It was just so many good ideas packed into one creative powerhouse movie.
