    안녕하세요 궁금한게 있어서 여쭈어봐요
    꼭 답변해주셨으면 좋겠습니다!
    카스테라나 롤케이크 파운드케이크를 만들때
    현장에서 힘들게 손으로 가루를 섞는 이유가 따로있을까요? 가루를 기계를 이용해서 풀어주면 더 효율적인거같은데 힘들게 손으로 비중을 맞춰야하는 이유가 너무 궁금합니다!

      저도 궁금해서 저번에 가루를 체 쳐 넣고 핸드믹서로 섞어 봤는데 달걀 거품이 많이 죽어 반죽 자체가 퐁신하게 섞이지 않고 주르륵 무겁게 흐르는 농도가 되더라구요~
      그래서 이 방법은 안되겠다 싶더라구요~ㅎㅎㅎㅎ
      골고루 섞기가 어려워도 가루를 체 쳐 넣고는 스패츌라로 섞어야 하는 것 같아요~

      향이 강하지 않는 꿀을 사용하는게 좋은 것 같아요~

    The problem comes when you have all of the ingredients but not the "thermometer"

      Use a clean hand to measure how warm your liquid ingredients are. Since the human body temperature is about 37 degrees Celsius, and the dough should be about 40 degrees, then you should feel that dough is slightly warm to the touch.
      ❗️❗️❗️But please be careful and check the dough from the beginning at very short intervals, because there is a risk of scalding if the heat is too high

      If this can help you, you don't necessarily need a thermometer: you can whip the eggs without warm them, just with an electric mixer (it just tooks 4/5min more)

      You can sperate the egg yolk and white and just whip the white till they're fluffy and on the side stir the other ingredients with the egg yolks then combine the two

      Instead of using a thermometer, you can just keep going until there are no sugar crystals felt when you rub the mixture between two fingers :)

    안녕하세요! 오늘 2배합으로 만들었는데요. 12개 중 3개 정도는 수축되고 쭈글쭈글하고, 1개는 타고, 맛은 못 먹을 정도는 아닌데 뭔가 오묘한 맛이네요..ㅠㅠ 쿠킹트리님 영상처럼 촉촉하고 폭신하고..? 그런 식감도 아니고요ㅠ 거품을 잘못 낸 걸까요? 어떤 게 원인이 될 수 있을까요..?

      거품을 내서 만드는 카스테라는 달걀의 거품을 곱고 풍성하게 내는게 중요한 것 같아요~
      거품 상태에 따라 맛과 식감, 모양의 차이가 있을 수 있답니다~

      오일을 사용해서 만들 수 있지만 올리브 오일은 향이 강해서 베이킹에는 잘 사용하지 않는 것 같아요~
      향이 강하지 않은 카놀라유, 해바라기씨유, 포도씨유 등을 사용해도 만들 수 있는데 저는 버터를 넣었을 때 더 고소하고 맛있는 것 같아 버터를 사용했어요~

      오븐 사양마다 굽는 시간과 온도가 차이가 날 수 있는데 굽는 온도는 똑같이 해주시고 시간만 조금 늘려 구워주시면 될 것 같아요~ 케이크의 상태를 보시며 조절해 주세요~

      일반 박력분으로는 대체가 가능하지만 아몬드가루로만 만들 경우 식감과 느낌이 많이 다르게 구워질 것 같아요~
