  • A rice-sealed castella! Make sure to make it!! (Flour can be replaced)
    Strong rice flour 55g
    Powerful rice flour 65g
    Egg 180g
    Yolk 94g
    Milk 50g
    Unsalted butter 37g
    Vanilla Extrack 10g
    Sugar 160g
    1. 1. Sift the powder ingredients twice and prepare them. (You can replace flour)
    2. 2. Put milk, butter, and vanilla extract in a bowl and heat it to a temperature of 50 to 55 degrees (I gave it back in the microwave for 30 seconds twice)
    3. Put sugar in a bowl with egg and yolk and whip lightly
    4. 4. Put it on a medium-hot bowl and raise the temperature between 45 and 50 degrees
    5. 5. Raise the foam at high speed (about 3 minutes) in the hand mixer
    6. 6. When the bubbles come up a little bit, go to medium and low speed (about 4 minutes)
    7. 7. If it rises to the point where bubbles build up, clean up the bubbles at a low speed (2 minutes) with a hand mixer
    8. 8. Add the powder ingredients and mix lightly so that the bubbles do not burst
    9. 9. In a bowl of heated butter, milk, and vanilla extract, mix some of the dough
    10. 10. Add to main dough again and mix
    11. 11. Fill the mold to 85% and finally clean up the dough bubbles
    12. 12. In order to prevent the top from bursting and bake more moist, I put a sealing frame in a 1/2 bread pan and baked it with a castella wood frame
    13. 13. This is a tip to prevent the top of the sealed castella from bursting~
    14. 14. I baked it in a conversion oven at 165 degrees for 20 minutes
    15. 15. Turn it upside down on Teflon sheet paper for 2 minutes, flatten it, and cool it on a cooling net

      안녕하세요^^ 저는 컨백션오븐을 사용하고 있어서 데크오븐으로 테스트는 안해봐서 정확한 완성상태는 잘 모르겠는데 컨백션 보다는 데크오븐이 카스테라 굽기에는 더 잘나올거에요~^^윗불190 밑불170정도로 구우면 비슷할것 같아요 시간은 구움색을 보면서 조절하셔야 할것 같고요^^

      아 네^^ 박력분으로만 하셔도 되는데 식감은 좀더 포슬포슬하다고 보시면 되어요 저는 밀도감이 적은거 같아서 강력분을 섞어 주었어요~ 맛있게 만들어 드세요^^

      안녕하세요^^ 두꺼운 종이상자 택배상자 같은거 잘라서 나무틀처럼 가장자리에 둘러지게 해서 구울수 있을거 같은데요 나무틀보다는 아니지만 컨백션오븐 바람을 조금 잡아줄수 있는데 아무래도 종이라서 굽다가 밀봉틀에 닿을수도 있으니 잘 고정이 된다면 비슷한 기능을 할것 같아요^^영상시청해 주셔서 감사드려요~🙏😃

    5단3분 3단4분 1단2분
    하면 비슷할까요?
    제가 쓰는 5단이 성능좋은 것들보다 고속이 약할까 하여 질문드려요.

      @@jiyufactory 우와. 다른 영상에는 다들 시간은 안 가르쳐주셔서 맨날 실패했는데, 이번에는 덕분에 성공했어요!
      다른 데서 시간 물어봐도 환경이나 상태 따라 다르니 봐가면서 해야한다고 안가르쳐주시고ㅜㅜ
      이렇게 어느 정도 기준점을 알려주셔야 그걸 토대로 상황에 따라 늘리든 줄이든 할텐데~정말 답답했어요..
