    My love letter to all my African food loving vegans and vegetarians out there! This palava sauce recipe is nutritious, packed with iron and dietary fiber and a perfect recipe ready to be paired with green or ripened plantain, brown or white rice, sweet potatoes, yams, gari, cassava, quinoa, etc. Enjoy!!
    Ingredients:
    15 leaves of kontomire/taro leaves
    2 medium red onions
    1 fresno pepper sliced
    2 carrots
    salt to season
    3 table spoons of virgin coconut oil
    1 teaspoon ginger
    1 clove of garlic
    1 cup total of melon seeds (white and green)
    4 roma tomatoes
    about 2 cups of water
    340 oz of tofu (soy bean curd)
    2 table spoons of light soy sauce
    a pinch of freshly crushed black peper
    oil of preference for deep frying tofu (I used canola)

    medaase! this is amazing! Kontomire was my favorite dish in Ghana. As a vegetarian I really appreciate what you've done here. I have to try this! The faux egg is genius as well. Now I wonder where I could get taro root leaves in Denver. :) Might try to grow some. I always miss Ghana. The most wonderful humans.

    Oh wow we use this leave in Indian cooking! My mum uses it. I had no idea that it was the same leaf used in palava sauce!

    Nana Aba, you are the greatest! I thoroughly enjoy your videos and have learned a lot. You are replicating many of the dishes I've eaten in Ghana and given me more insight on how to prepare them traditionally, thank you so much. Red palm oil enhances brain function and is high in Vit A, among other benefits. Coconut oil and palm oils were getting a bad rap until recently. I enjoy embracing ancient traditions and the wisdom of our ancestors. Being a vegetarian, I liked the added tofu also. "Wya die."

    I think this was a good start, but where are the seasonings: cayenne, curry/turmeric, thyme etc.? Will be looking forward to more videos :)

      Genevieve, I bought mine from an oriental store. They usually carry a lot of different fresh produce.

      You may substitute with spinach. Even I do that sometimes as the kontonmire is seasonal.

      I picked mine up from a vietamese/ Asian store called "Lee Lee's" in Chandler AZ. Most Asian super markets stock them. They are called "taro leaves" at these stores.
