I actually do have a trick, for the less patient people who don't like fumbling with the fat layer first! Storing the bone broth jars upside down while cooling off makes the fat solidify near the bottom of the jar. So after cooling you can go right in for the bone broth without having to scrape off the layer of fat first! 😄
HOLD UP. I did NOT know the lid notch trick! We don't have an oven or stove, so I literally cook every single one of our meals in this thing and I've just been awkwardly placing the hot lid on the very limited counter space we have LIKE A DUMMY for literal years. Thanks for the tip, Martina! 😭💕 As for bone broth tips- I personally buy an organic chicken, cook it in the instant pot with enough water to just cover it (30 minutes on soup setting, then 30 mins natural release), and remove the chicken. Then I add only the bones and skin back in with a splash of apple cider vinegar and seasonings and cook it on high pressure for 2 more hours, let it naturally release, strain, and tada! I mostly use my broth for making rice or pasta because I'm weird and dislike soup, so I tend to flavour it the same way each time. Bit of fresh basil (preferably Thai!), pinch of turmeric, a few chunks of ginger, salt, black pepper, and bay leaves 😋

Love bone broth and it is so healthy and good for the tummy. I do it differently though, I put the bones in the oven first for 20 min to brown them, and only 2 hours on the instant pot and it comes out nice 👌 I love to use the tallow on top to cook, healthier and cheaper than oil 💕
MARTINA! Currently doing the recipe and just realized I can press the minus sign starting from 0 and it’ll instantly put me to 4 hours! I spent a couple of seconds holding the plus sign for it to get there just like you haha yay for discovering new tricks ! Had to share lol

I make the BEST mashed potatoes using the instant pot, and chili. You can use it as a slow cooker as well (some things slow cooked are better) plus you don't have to really watch it. Plus it has a sear function. I used it in my college dorm for EVERYTHING. Also easy clean up. It's just one pot!

I'm pretty sure you could describe cell mitosis and I'd find myself remembering it rather than blanking completely on my biology exams - you're an excellent instructor! So I've been watching you for years and years, and it's recently been brought to my attention that I may have eds. I have been trying to support my joints as much as I can through my cooking. I always collect the bones from rotisserie chickens to do a broth when I have enough & I love it when the broth turns to jelly in the fridge. I really like this idea with the instant pot, I will have to try this with some beef or pork bones.
For sure! I use bone broth when I make pasta sauce, and my next attempt is to make soup dumplings which use the cold jelly broth and it heats up when steamed

Due to every one in the family having their own special food intolerance I always cook a lot of the basics. Cooking a chicken in the oven, and then get broth from the bones (and cat dessert from the insides). Basics in cooking are the saviour for wallet and time!

Well a happy accident! 😉 bone broth is super great for my hEDS as my digestive system is so messed up. A nice simple warm mug of bone broth with a little bit of salt, pepper, and sprinkle of rosemary is a nice start to the day. Plus, you can always ADD things to it later but you can’t take away from it for those of us that have food red flags.
Fun fact: I worked in a butcher shop and when they used cut bone marrow with the bone saw, it smells like buttered popcorn! It literally the weirdest thing but I loved it 💕

Good luck on the appointment, and I still have days where I go, "maybe I don't really have EDS..." despite THREE EDS specialist in Canada, Korea, and Japan telling me "YES YOU 100% PASS THE FUCKING TEST GOOD LORD CHILD" 🤣 I gotta tell you, with my EDS digestive problems, having bone broth weekly just as a cup warmed up with a bit of salt and sprinkle of rosemary in the morning has really helped my digestion. If you find your digestion is messed up, this is a nice way to help it along. You can even buy some if you don't want to make it.

I've started a rehab program with a bunch of specialist trying to sort us with chronic pain. So I have stuff and procedures almost every day until the holidays. Thank you for the cool and informative video. I shoukd give this a try even though I do not have a pressure cooker. I guess I have to double the time then. (Thinks of electricity bill) I am German and my family always used pressure cookers for stews and soups and I was always very afraid when they let out the pressure and took off. Bone marrow is something we use to make small balls out of that go in clear brothy soups. We mix it with an old bun that we soaked in water, spices, egg and some parsley. Absolutely delicious!! When I saw you skim off the fat like that I was reminded of my grandma who would use fat from meat on her bread instead of butter. She wasted nothing.
You can absolutely eat it cold! It reminds me of a Russian dish my grandma makes called holodets. I haven’t had it in years bc it takes so long, but maybe I’ll try it using this method
Hey Martina! This looks amazing. I believe the parboil is to get out impurities like extra blood that could make the final product spoil faster and make it cloudy.

I love using my instapot to make chicken broth. I make pho ga, chicken soup, Mexican chicken soup & just freeze extra soup for other recipes.
I love my instant pot but never thought of making broth with it, going to have to give this a try!

If you don't mind me saying - and I don't want you to worry as this is not a criticism or anything - I noticed your audio level while in kitchen was a little lower than usual. It would be grand to place an overhead mic to ensure the quality of your videos continues. Again, I really enjoy your content since the 'Eat Your Kimchi' days and hope you are well in Japan. By the way, have you read the book 'Pachinko' yet? It is a really amazing book which fuses both Korean and Japanese culture.

We've been making it for years now.. we're all on the ketogenic way of eating.. couldn't be without it.. and talk about stretching out your food budget ..this is the way to go.. there is a ton of recipes to fashion it to your liking... not to mention the health benefits.. My country does too! But it's got pigs feet in it (think stapler in jello prank) and is eaten for new years!

Thank you for the cool and informative video. I shoukd give this a try even though I do not have a pressure cooker. I guess I have to double the time then. (Thinks of electricity bill)
I am German and my family always used pressure cookers for stews and soups and I was always very afraid when they let out the pressure and took off.
Bone marrow is something we use to make small balls out of that go in clear brothy soups. We mix it with an old bun that we soaked in water, spices, egg and some parsley. Absolutely delicious!!
When I saw you skim off the fat like that I was reminded of my grandma who would use fat from meat on her bread instead of butter. She wasted nothing.
You can absolutely eat it cold! It reminds me of a Russian dish my grandma makes called holodets. I haven’t had it in years bc it takes so long, but maybe I’ll try it using this method
Hey Martina! This looks amazing. I believe the parboil is to get out impurities like extra blood that could make the final product spoil faster and make it cloudy.

In spain we have a similar broth called puchero and we also add white rice, chickpeas and shredded meat, its my favourite i recommend it very much

Just recently got diagnosed with hEDS, and am slowly changing my diet, I will def invest in an instant pot now after this video to make some killer chicken soups and bone broth :D
