I'm not too versed in race bikes. Is the clutch and front brake swapped? When he's shifting I don't see him pulling on the left handlebar lever at all, so that has me thinking that the levers are swapped. Or is he not using the clutch?
They have what is called a quick shifter fitted to the gear lever which cuts the engine for a split second which enables them to change gear without using the clutch.
some of them are also running left handlebar thumb operated rear brakes to enable them to maintain their feet position but operate the rear brake to aid in stability and curb excess front wheel lift.
Mr Burrows & Mr Phillips nailed it, I will add the engine management also has a autoblipper for down change with adjustable engine brake & a adjustable slipper clutch
