I have never tried it with the egg yoke. My moms family comes from Madeira so it would be a sin according to avó if I did that. I will give it a try.

Another way to make this and avoid the egg taste is to omit egg. After boiling the rice down add some cardamom, few cloves, and a bit of cinnamon. When boiled down and rice soft add evaporated milk. When boiled down again add condensed milk. It will make the rice pudding more richer!

It should be white to be traditional. But you could try brown, I don't know what the texture difference would be. Brown rice cooks differently and takes much longer to become tender, so the recipe would have to be changed.
