But I drink at least 1 cup of matcha plain in the morning, which is how I prefer it. I also drink 1-2 cups of green or white tea a day. As well as 2-3 cups of rooibas and herbal teas.

a s a brewer I am pleased that most foods mentioned are fermented. this is reason why we must consume more fermented foods. I make sour bread, natto and hot sauce.
@ soak soybeans day before cook. Boil beans until soft. Boil with dry mushrooms. Separate beans into yogurt fermenter. Use glass. Pitch natto from live package. Ferment 24 hours. Ready to eat or wait in fridge until hungry. There are other methods but this is consistent.
Sir, if I may add one healthy Japanese food and one drink from so many out there to your list, it is nukazuke. I personally have a (Swiss-style, that is with oat bran instead of rice bran, which is hard to find here) nukadoko that I am cultivating since 7 years in my kitchen, and I love my almost daily pickled veggies made in it... いただきます ! Also, now, in summertime, I love to "shinobicha" my "koridashi" (to ice-extract my iced green tea). Finally, thanks for your fine videos, they are a treat!

I am curious for those who are unable to consume soy products, what superfood alternatives there are we could include in our diets? For my chronic health issues, I'm gluten free/wheat free, soy free, caffeine free, and dairy free. It's not by choice either. For example in place of coffee, I drink fresh squeezed juice from a lemon in plain tap water. That gives me energy and keeps me regular without the caffeine. I'd love to learn more about alternatives to incorporate into my diet.

I wish our medical schools taught more about nutrition and health benefits gained from eating these superfoods but they don't and so it is on us to learn for ourselves.
Umeboshi and other traditional foods are great. Thank you for sharing and educating too. Caution: Sadly many of the traditional products have been altered with chemicals and fake “natural” flavours and more. People need to read the labels. Umeboshi these days is especially challenging with many products having “aminosan”. We need to watch out for MSG as some people may get headaches , hives, mental focus issues and more without realising the source was their health food. Miso is so delicious and energising while also being soothing. Keeps doctor away with healthiness. It is versatile as we can have it with a variety of ingredients or simply as is. However, miso too may have issues with small packages containing added chemicals and preservatives. Natto is the best if you can eat it, like a smelly sticky cheese. In Japan it is usually is not GMO or heavily from crops that were heavily sprayed but sources from overseas seem more questionable. Natto is an excellent product but make sure it is not from chemically laden sources or the health food is not so healthy. Best way, make own, but few have the time. The alternative is to find organic without chemicals. Amazake can be delicious even for people who do not like sake and do not like sweets. Shikuwaza seems so healthful! 😊 Request Would love to know of a nearby place to find an affordable umeboshi that is organic, not with added chemicals. Alternatively a way to mail order affordable umeboshi that doesn’t have aminosan or such chemicals. Thanks

Kimchi is overrated. Simply a product of PR 🤭 personally i'm not fond of korean food because almost everything is covered by color of chilies. unlike colorful japanese food.

Amazake and umeboshi I found years ago… and are favorites. Although not necessarily readily available often. All good… and… also do the majority of the long life Japanese consume daily fresh fruits and vegetables. Those are equally superfoods to me. Thank you.

I'm making Natto myself since it's not that common here and making it yourself is also cheaper, you can also use other legumes besides soybeans to make it. I'm using a natto starter (natto kin), but actually you can make natto by using wild plants which contains bacillus subtilis, which is the bacteria in natto, but the bacillus subtilis used in natto got optimized for making natto, so it will produce more sticky strings. Miso, soy sauce and amazake can be made with koji or koji rice, which is made with aspargillus ozariase and there's a bunch more foods you can ferment with koji. I also like to make apple cider vinegar and kombucha and kefir. I think sitting down and preparing tea and appreciating the teaware and enjoying the tea with all of your senses also contributes to health, when it's calming it should lower cortisol levels, right?😊 And I like umeboshi, I'm thinking about getting some.
1. I love miso soup. 2. I tried and tried but natto is like eating stringy poop. 3. Shikuwasa is similar to the Caribbean naranja agria (sour orange), which I like as it is part of my culture. 4. Matcha is like swallowing liquid grass, not my favorite but maybe Aki's matcha will change my mind. 5. Umeboshi, love it. 6. Amazake, I had it before and liked it so i'll try again to find it. 7. It is quite hard to find japanase ingredient here . But I do find some miso paste here and now I can make miso soup with it . I also really want to try natto . I have to ordered it online !
My grandmother drank rhum coke every night, smoked tobacco (no filter), didn't need glasses (she played mahjong daily), and still had her orig teeth, all until she died at 99yo cos she fell and broke her hip. 😢 she would have lived till 100+ God rest her soul. She lived in northern Philippines where we eat pinakbet (local veggies) with fermented fish. 🇵🇭
Love these suggestions - I hope to get to a shop in Oregon that carries natto - I've tried making it after watching some of the Ikigai Diet videos, using mint stalks for the natto-kin .... (And just crotched a little Nebaaru-kun amigurumi 😊) .... I make my own yogurt using coconut milk and appreciate fermented foods.
I am a Japanese born in America and loved all but one that I have not tried and natto. Sorry, I love ikanoshokara but can't stand natto - even though it has great health benefits that I was not aware of. I look forward to Samurai Matcha. Thank you for educating me!

I’ve been living in happy and I love omeboshi, is definitely one of my favorite superfood in Japan. Amakaze and natto are not my favorite one but I can eat them for my health
I have been visited Japan many times (8 times) in many different cities. I do really love Japanese food so much whenever when I go out or have a chance always take Japanese Restaurant which we have quite a lot in Thailand.From the list I assume I love almost all except Umeboshi. I like Japanese‘s life style. I also have a Japanese garden at home.

If you don’t like the taste of matcha. Put it in 00 Gelatin capsule Using a small capsule machine.

I'm making Natto myself since it's not that common here and making it yourself is also cheaper, you can also use other legumes besides soybeans to make it. I'm using a natto starter (natto kin), but actually you can make natto by using wild plants which contains bacillus subtilis, which is the bacteria in natto, but the bacillus subtilis used in natto got optimized for making natto, so it will produce more sticky strings.
Miso, soy sauce and amazake can be made with koji or koji rice, which is made with aspargillus ozariase and there's a bunch more foods you can ferment with koji.
I also like to make apple cider vinegar and kombucha and kefir.
I think sitting down and preparing tea and appreciating the teaware and enjoying the tea with all of your senses also contributes to health, when it's calming it should lower cortisol levels, right?😊
And I like umeboshi, I'm thinking about getting some.
1. I love miso soup. 2. I tried and tried but natto is like eating stringy poop. 3. Shikuwasa is similar to the Caribbean naranja agria (sour orange), which I like as it is part of my culture. 4. Matcha is like swallowing liquid grass, not my favorite but maybe Aki's matcha will change my mind. 5. Umeboshi, love it. 6. Amazake, I had it before and liked it so i'll try again to find it. 7. Amazake is yummy. Used to be common in health food stores. I like to make tea with umeboshi in a cup of hot water. It's tart and refreshing.

In my language natto is called as chembic, kinama, or akhoni the fermented soya bean. I like it's slippery texture and dominating flavour.

It is quite hard to find japanase ingredient here . But I do find some miso paste here and now I can make miso soup with it . I also really want to try natto . I have to ordered it online !
My grandmother drank rhum coke every night, smoked tobacco (no filter), didn't need glasses (she played mahjong daily), and still had her orig teeth, all until she died at 99yo cos she fell and broke her hip. 😢 she would have lived till 100+ God rest her soul. She lived in northern Philippines where we eat pinakbet (local veggies) with fermented fish. 🇵🇭

Oregato! It was very interesting. I'd really like to try Natto and Umeboshi. I also heard that Japanese sweet potato (the name starts with M, purple skin but white inside) is also considered a super food.. 🤔
I’ve been living in happy and I love omeboshi, is definitely one of my favorite superfood in Japan. Amakaze and natto are not my favorite one but I can eat them for my health
I have been visited Japan many times (8 times) in many different cities. I do really love Japanese food so much whenever when I go out or have a chance always take Japanese Restaurant which we have quite a lot in Thailand.From the list I assume I love almost all except Umeboshi. I like Japanese‘s life style. I also have a Japanese garden at home.
I would enjoy learning how to make any of these at home. My local grocery store doesn't sell any of them. I can get Matcha, mail order.
