    INGREDIENTS:
    1 box brownie mix
    Use your favorite brand of brownie mix and follow package instructions. This particular brand called for:
    2 eggs
    3 tbsp water
    1/2 cup canola oil
    Mochi:
    1 cup mochiko flour
    1/3 cup sugar
    Dash of salt
    1 cup hot water
    DIRECTIONS:
    1.) Preheat oven to 350 degrees F.
    2.) In a mixing bowl, combine mochiko flour, sugar, and salt. Use a whisk to mix well. Pour in hot water and use a spatula to mix. Cover with plastic wrap and use a knife to puncture holes through the wrapper. Then microwave for 1 minute. Carefully remove the plastic wrap and give it a mix. Cover the bowl with the same plastic wrap and microwave again for another minute, then give it one more mix. Mochi is now ready. Set aside.
    3.) Prepare brownie batter following package instructions. Set aside.
    4.) Prep a 8x8 baking dish with non-stick spray then line with parchment paper. Pour 1/4 of the brownie batter into the baking dish and spread it evenly.
    5.) Add scoops of mochi over the brown batter making sure to dip the scooper in water each time to avoid sticking. Then pour the remaining brownie batter and spread it evenly over the mochi.
    6.) Bake at 350 degrees F for 1 hour or until throughly cooked. (Puncture a toothpick in the center. If it comes out clean, then it's ready.)
    7.) Let it cool for at least 30 minutes before cutting into desired size.
