I feel as though people mistake lack of camera presence for pretentiousness. Though I get why people may glean that from the videos, they’re chefs, not internet personalities. Some of them may be nervous or just don’t feel the need to act bubbly and personable for the camera.
I really like how this series breaks down the differences between the bakers without criticizing the elementary level. Nice emphasis on why more complicated bakes are great without acting like there’s no place in the world for a simple, fast recipe

@@nedpowell9590 I study in Europe and so I do a 6MD program rather than 4, and yes I do have free time, I do not spend it in parties but I rather go to the gym, I do charity and I spend some time in the kitchen too, I don't like restaurants or precooked food in general. It is all about time management and efficiency.

Daulton Venglar I agree. I feel like we learn a lot but they don’t. It would be really beneficial for them to actually see each other’s work and taste it and get advice from the person/people above them. Not in the way of a critique, just through tasting their food and asking questions.
I believe the main reason is because it's meant to be about you to try the recipes yourself and for you to try yourself. They show you how other people make their own type of recipes but it's purely based off of your tastes, not theirs. that's why some people like the level 2 baker than the level 3, that's just what they fine more appealing to them. The show, I believe, is not to show which one is better, but to point out to improve your baking and to try some other recipes that may suit you. sorry for rambling, this is what i think and i do try to look on the bright side and i recommend you to do the same, just to see a different perspective of the series. so thanks for reading (sorry for horrible grammar lol)
Frictional If it’s meant to be for us to try the recipes ourselves, then they would actually list the ingredients/recipes. It is definitely an analysis, which would benefit from showing each chef trying the end results of the other two. They could even be in the same room as the food scientist. Everyone tries the brownies, food scientist says, “Okay, let’s break down what you did,” and starts explaining with commentary and questions from the three chefs. Way more interesting than just hearing, “Susan used store-bought cocoa powder while Pierre used chocolate made from scratch using cocoa beans that he harvested himself from the Columbian rainforest.”
@@taiken64 I know I'm pretty late, but all in all it's for peoples enjoyment and how they want to do it. It's different, I learn something and it's always fun to watch people bake. I value others enjoyment over mine though Im still a strong believer on what i said earlier as to show how different people are different and how doing things longer (putting more effort to it) changes the result. I would say it's more of an experiment though many like it like that. your the judge on it. The "Level 4" chef puts the science to it to see on, mathematically, why it would taste better. Think of it like music, you listen to a bunch of songs by composers of 3 levels, they all would sound different and it's completely up to your taste. and then Music theory show you the math behind why it should sound good and such. But to the original question, it's not about the bakers, it's about you. I see where your coming from, and again it's all personal preference, everything we do is about our tastes, and it could be other reasons too, Epicurious could have tried it but it costed a lot of money, a design choice, maybe it wasn't interesting enough, anything really. I respect your opinion and i do understand. though who knows, this was a nice little debate. Again, just a different perspective. Cheers!

ugh I hate how almost every comment on this video or any videos like these hate on the level 3 chefs. Theyre professional, they know what they're doing. they know how different flavors mix together and work well together. They know damn well how to cook, everybody hates them because they think that they add "extra" stuff onto whatever but its called having complex flavors in a brownie. Ugh dont yall know that the saltiness in the salted caramel she used can bring out the sweetness in the brownie?
Yeah, and they're more intense and focused, which people equate to being unfriendly and snobby. I think having the chefs that are less serious and more gregarious balances it out, but you're bang on the level 3s aren't jerks they're just professionals.

I like the concept, but it's not perfect. I would make them taste each other's brownies and exchange about them. It would be nice to see an interaction between the participants. The food scientist portion is interesting, but too long. Actually, I would put the food scientist portion in the middle and definitely shorten it. If you put the segment in the middle, it would be at a great moment, where you would want to know what the brownie is about and wait for the final result and, given that they would taste each others' brownies, you would actually link what the food scientist told about the brownies being discussed by the participants afterwards. I feel like this way of putting it would make the content even greater and more punched. Plus, I feel like "level 4" implies that the food scientist is beyond them and has the ultimate understanding of this food while I feel like the chef is the best level when talking about food because it's the one that actually does it. Just some suggestions.

Like someone saying, ooh this is a nice simple brownie with a soft easy to swallow quality, and the next has a nice balance of almond and chocolate flavors and holds together well letting you keep the flavor in the mouth longer, and how level three is a nice complex blend of textures and flavors with the whipped cream and almost fudge brownie.

Generally speaking, you'll get better results if you mix your brownies by hand anyway. You don't want to over mix them. (Like she did...) If you over mix them they get that unappealing almost rubbery texture that a lot of homemade baked goods get. Once you add flour to something, unless it's bread or bread-like, you generally want to mix it as little as possible. In the case of brownies, you really don't need to mix them very much at all. I use my stand mixer for absolutely everything, but never for brownies.

No amounts are explicitly given in the video, but based on the fact that Elisa uses 4 eggs and from looking at the ratios as best I can in the footage, I have included some guesstimate amounts. your mileage will probably vary because I am in no way a chef. *please* read the asterisk notes before starting. I was looking for a good brownie recipe and found this. I made a recipe and will try it out tomorrow. Here it is if someone wants to try it too. Ingredients 1 cup granulated sugar and brown sugar 3/4 cup unsweetened cocoa powder sifted 1/2 cup all-purpose flour 1/4 tsp. salt 1/4 tsp. baking powder 1/2 cup butter melted then cooled [1 stick of butter room temp] 3 eggs room temperature 1 oz. vanilla Instructions In bowl ½ cup of white sugar and ½ cup of brown sugar and mix Add butter to the sugar and mix Crack eggs into a separate blow then add them into the mixture [+vanilla] and mix Into a separate blow add ½ cup of flour Add ¼ tsp. baking powder Add ¾ Cocoa powder [+salt] and mix Pour the cocoa bowl into the sugar bowl and mix Use a glass 8x8 pan, line it with parchment paper and butter it Pour in half of the batter first and even it out Add three hand full of chocoholic chips Add the other half on top and even it out Bake at 350 degrees for 20-22 min
ayah They were the best I made so far in my search to make good brownies. They had a good consistence of cakey and fudge. If you store them in an airtight container at room temperature their texture dose not change much.

Daulton Venglar I agree. I feel like we learn a lot but they don’t. It would be really beneficial for them to actually see each other’s work and taste it and get advice from the person/people above them. Not in the way of a critique, just through tasting their food and asking questions.
I believe the main reason is because it's meant to be about you to try the recipes yourself and for you to try yourself. They show you how other people make their own type of recipes but it's purely based off of your tastes, not theirs. that's why some people like the level 2 baker than the level 3, that's just what they fine more appealing to them. The show, I believe, is not to show which one is better, but to point out to improve your baking and to try some other recipes that may suit you.
sorry for rambling, this is what i think and i do try to look on the bright side and i recommend you to do the same, just to see a different perspective of the series. so thanks for reading (sorry for horrible grammar lol)
Frictional If it’s meant to be for us to try the recipes ourselves, then they would actually list the ingredients/recipes. It is definitely an analysis, which would benefit from showing each chef trying the end results of the other two.
They could even be in the same room as the food scientist. Everyone tries the brownies, food scientist says, “Okay, let’s break down what you did,” and starts explaining with commentary and questions from the three chefs. Way more interesting than just hearing, “Susan used store-bought cocoa powder while Pierre used chocolate made from scratch using cocoa beans that he harvested himself from the Columbian rainforest.”
@@taiken64 I know I'm pretty late, but all in all it's for peoples enjoyment and how they want to do it. It's different, I learn something and it's always fun to watch people bake. I value others enjoyment over mine though Im still a strong believer on what i said earlier as to show how different people are different and how doing things longer (putting more effort to it) changes the result. I would say it's more of an experiment though many like it like that. your the judge on it. The "Level 4" chef puts the science to it to see on, mathematically, why it would taste better. Think of it like music, you listen to a bunch of songs by composers of 3 levels, they all would sound different and it's completely up to your taste. and then Music theory show you the math behind why it should sound good and such. But to the original question, it's not about the bakers, it's about you.
I see where your coming from, and again it's all personal preference, everything we do is about our tastes, and it could be other reasons too, Epicurious could have tried it but it costed a lot of money, a design choice, maybe it wasn't interesting enough, anything really. I respect your opinion and i do understand. though who knows, this was a nice little debate. Again, just a different perspective. Cheers!

Theyre professional, they know what they're doing. they know how different flavors mix together and work well together. I like the concept, but it's not perfect.
I would make them taste each other's brownies and exchange about them. It would be nice to see an interaction between the participants.
The food scientist portion is interesting, but too long.
Actually, I would put the food scientist portion in the middle and definitely shorten it. If you put the segment in the middle, it would be at a great moment, where you would want to know what the brownie is about and wait for the final result and, given that they would taste each others' brownies, you would actually link what the food scientist told about the brownies being discussed by the participants afterwards.
I feel like this way of putting it would make the content even greater and more punched.
Plus, I feel like "level 4" implies that the food scientist is beyond them and has the ultimate understanding of this food while I feel like the chef is the best level when talking about food because it's the one that actually does it.
Just some suggestions.

Like someone saying, ooh this is a nice simple brownie with a soft easy to swallow quality, and the next has a nice balance of almond and chocolate flavors and holds together well letting you keep the flavor in the mouth longer, and how level three is a nice complex blend of textures and flavors with the whipped cream and almost fudge brownie.

I'm sure they asked if she did, it could be because she doesn't have the tools (hence not how she makes them).
Generally speaking, you'll get better results if you mix your brownies by hand anyway. You don't want to over mix them. (Like she did...) If you over mix them they get that unappealing almost rubbery texture that a lot of homemade baked goods get. Once you add flour to something, unless it's bread or bread-like, you generally want to mix it as little as possible. In the case of brownies, you really don't need to mix them very much at all. I use my stand mixer for absolutely everything, but never for brownies.
Texturally, her brownies came out way better than the home cook's. Brownies shouldn't be cake-like or that light in color.

(I was taking notes for myself and thought I'd post what I've come up with for everyone else to try. No amounts are explicitly given in the video, but based on the fact that Elisa uses 4 eggs and from looking at the ratios as best I can in the footage, I have included some guesstimate amounts. your mileage will probably vary because I am in no way a chef. *please* read the asterisk notes before starting. I was looking for a good brownie recipe and found this. I made a recipe and will try it out tomorrow. Here it is if someone wants to try it too.
Ingredients
1 cup granulated sugar and brown sugar
3/4 cup unsweetened cocoa powder sifted
1/2 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. baking powder
1/2 cup butter melted then cooled [1 stick of butter room temp]
3 eggs room temperature
1 oz. vanilla
Instructions
In bowl ½ cup of white sugar and ½ cup of brown sugar and mix
Add butter to the sugar and mix
Crack eggs into a separate blow then add them into the mixture [+vanilla]
and mix
Into a separate blow add ½ cup of flour
Add ¼ tsp. baking powder
Add ¾ Cocoa powder [+salt] and mix
Pour the cocoa bowl into the sugar bowl and mix
Use a glass 8x8 pan, line it with parchment paper and butter it
Pour in half of the batter first and even it out
Add three hand full of chocoholic chips
Add the other half on top and even it out
Bake at 350 degrees for 20-22 min

ayah They were the best I made so far in my search to make good brownies. They had a good consistence of cakey and fudge. If you store them in an airtight container at room temperature their texture dose not change much.
