The long stick like "knife sharpener" is not a knife sharpener. It's called a honing steel and it's meant to realign your blade and clear any slight burrs on the blade. Also, you missed a lot of meat on your filet jobs. Make sure to actually sharpen your knife and then you should have longer more confident strokes with the knife. That will give you a cleaner filet and you won't lose as much meat. Follow the spine all the way back to the tail. You stopped a little before the tail and that's where you lost some meat. Also you can make a better breading that gets more crispy. I fish a lot so I'm mot just a keyboard bully, this is constructive criticism. I love your work Viva Frei, you are fighting the good fight

So much FUN 🤗 .. may I recommend a T. towel under the fish while filleting ! Helps with the sliding issue and precision knife skills. Easy to wash and launder after use. Now take that carcass and use it to make fish broth for further delicacies. Freeze broth if not needed immediately .. from my kitchen to yours Viva Family 😘
This reminds me of the VCR tapes of me, my brother, family & friends when I was young in the 90's. My parents buying a 20 pound recording device they had to rest on their shoulders. It took so much more work those days.
Viva, go work at one of the filet tables. At some places when you get off the boat you can have them fillet the fish for you. If you work there for one week, you'd be an expert.
if you want to try and get all the meat off of the bones and skin, try using a spoon and scrap the meat off. it's great for meatballs or patties if you got enough scraps.
I commend you two wearing long sleeves in the sun. Better than chemical sun screen. Oh, no, you NEVER cut the gut cage. AN ELECTRIC KNIFE MAKES FILLETING SO MUCH EASIER. Cut straight down the gills to the spine. Turn the knife 90 degrees to run the knife parallel to the spine. Run down the fish to the tail, flip the fillet over, and then run down the skin, under the meat, back towards the end of the fillet at the gill. We could fillet ten pound hybrid bass- both sides- in thirty to sixty seconds with this method.
Practice makes perfect. Practice often! Get a filet board to clamp the head. ALWAYS cut on a plastic or wood cutting boards. Never on porcelain, diner dish, or steel. Have you gotten those BIGGER minnows yet for bait??

Viva! You need to catch TEN or FIFTEEN to make a meal. Your filleting skills can and will improved exponentially with practice. But not until you learn how to properly sharpen a fillet knife. I’m cringing while waiting to see you slice off a finger with that dull ass knife. BTW- I know you’re the ultimate health guy, but deep frying fish is to die for. Easy peasy…not every day, but, try it. You’ll thank me later
One is just enough for everyone to have a taste! Next time at least one Tilapia person. Also, I wouldn't gut my fish in in the kitchen. Watch out for any bones and do not feed any of it to your dog or cat!
There is a problem with spending a lot of time in your viewfinder, it effects your memory and ability to recall details of what happened. As a photographer or videographer, this is a very big problem. They have done quite a few studies on this and found that photography causes you to become disconnected from what you are shooting and because of the disconnection lose the emotions connected with the photo, it's like we were not there when we took it, it's very strange feeling. My point is that these moments are special, to special to lose to something like this, please be careful and put the camera down once in a while, don't take it with you all tue time, live those moments, experience them, drill them down so you never lose them
