If you cook the lightly oil rubbed salmon with the skin in a preheat oven at 425 degrees Fahrenheit…for15 to 20 minutes on one side only.. the salmon will be juicy tender and the skin will be crispy like chips! Delicious!

@@nancybrooklyn i agree. Salmon skin is bacon of the sea.
I's fine if somebody doesn't like it.
Put the salmon skin down into your hot pan. Cook it to ~80% on skin side and turn it. You also can cook it just in skin side and baste it with the oil and some herbs (with a spoon). In the end you don't need to eat it. it just helps with cooking

The skin is actually a valuable part of the fish, as a matter of fact; salmon with skin on is more expensive than "sushi grade" salmon that's been pre skinned. This is because skin has it's own texture and flavor, helps the fish retain moisture, and can be used as a separate dish in itself. To throw away the skin is to throw away perfectly good food.

We buy by the lb (We usually went through anywhere between 200 to 400 pounds of salmon a week) and generally skin off "sushi grade" is a couple dollars cheaper.

If you're going to pan fry the salmon, you can just fry it with the skin down. When it's done the skin will come off easily, crispy and nutritious. No need to add salt or pepper before frying. Do that after it's on the plate. As for the salt just sprinkle a pinch of Red Himalayan rock salt on the salmon. It's crunchy and will remove heavy metals from the fish.
